背景技术:
绿豆粉丝是中国常见的食品之一,主要原料为绿豆,最好的粉丝是以绿豆制成,也可由玉米淀粉或者地瓜淀粉制作,但品质不如绿豆粉丝,因绿豆中的直链淀粉最多,煮时不易烂,口感最为滑腻。类似细面条状,干燥后贩卖,食用前最好先泡水让它柔软,粉丝的直径一般在0.5毫米左右,这也是它有“丝”之名的由来。
随着生产技术不断提高,目前粉丝出现了许多新的加工方法,但都趋向于机械加工,机械加工虽然具有生产效率高、节约劳动力的优点,但与传统手工生产出的粉丝相比有很多不足之处。利用普通绿豆淀粉为原材料而机械加工生产出的粉丝不具备入口爽滑、细腻、劲道的口感,营养价值不高,并且有的下锅后一煮就碎,有的很硬不易煮烂。为了克服这些缺点,机械加工粉丝过程中加入多种化学试剂,以提高粉丝的食用品质,但这些化学试剂的使用不仅会降低粉丝本身的营养,而且会对人体产生一定的伤害。

一种富硒绿豆粉丝,由如下质量份数的原料制成:
富硒绿豆淀粉80-90份、高筋小麦粉8-10份、蛋清粉4-6份、花生粉3-5份、花椒叶粉2-3份、芝麻粉1-2份、氨基酸添加剂1-3份、食盐1-2份、复 合维生素1-1.5份、天然防腐剂0.5-1份、菜籽油3-5份。
所述富硒绿豆淀粉中的含硒量为0.15-0.2mg/kg。
所述氨基酸添加剂选自赖氨酸、蛋氨酸、精氨酸、色氨酸中的一种或几种。

一种富硒绿豆粉丝的生产方法,包括下列步骤:
(1)先将食盐溶解于60℃热水中,再取1/10富硒绿豆淀粉,用此盐水调成糊状,调制过程中加入高筋小麦粉、花生粉、花椒叶粉好和芝麻粉,使其混合均匀,然后冲入开水使糊变硬;
(2)向步骤(1)调好的糊中依次加入剩余的富硒绿豆淀粉、蛋清粉、菜籽油、氨基酸添加剂、复合维生素和天然防腐剂,边加边搋,手感粉面发软、有弹性且试瓢条形均匀即可;
(3)将步骤(2)中调好的粉面加入到瓢中,一手捧瓢,另一手拿木锤捶打粉面使粉丝从瓢底孔挤出;
(4)将步骤(3)挤出的粉丝直接漏到盛有沸水的锅中,当粉丝快要上浮到水面时用竹竿将粉丝挑到冷水里,冷却后的粉丝放到竹竿上摆平沥水;
(5)将沥水后的粉丝放入温度不低于8℃的冷库中冷冻至结冰,然后取出粉丝将其放入温水中融冰,用手搓拉使粉丝全部散开,再将融冰后的粉丝放到架上晾晒;
(6)将晾晒好的粉丝用铡刀切成30-40cm的长度,最后经称量、真空包装后即可出售。
本发明的有益效果是:
(1)以富硒绿豆淀粉为主要原料,辅以高筋小麦粉、蛋清粉、花生粉和芝麻粉以及人体所必需的氨基酸、维生素,营养丰富且人体易吸收;
(2)芝麻粉的加入使粉丝煮后具有醇香气味,提高消费者的食欲;
(3)花椒叶粉和天然防腐剂的加入,使粉丝具有防蛀和防腐功能;
(4)不添加任何化学物质和色素,食用安全性高;
(5)经过手工生产出的粉丝下锅不腻,入口滑爽、细腻、筋道。
具体实施方式:
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种富硒绿豆粉丝,由如下质量份数的原料制成:
富硒绿豆淀粉80kg、高筋小麦粉8kg、蛋清粉4kg、花生粉3kg、花椒叶粉2kg、芝麻粉1kg、氨基酸添加剂1kg、食盐1kg、复合维生素1kg、壳聚糖0.5kg、菜籽油3kg。
其中,氨基酸添加剂由赖氨酸、蛋氨酸、精氨酸和色氨酸组成,用量比为1:1:1:1;复合维生素由维生素A、维生素C、维生素D、维生素E和维生素B1组成,用量比为1:1:1:1。
根据上述原料配方进行富硒绿豆粉丝的生产,包括下列步骤:
(1)先将食盐溶解于60℃热水中,再取1/10富硒绿豆淀粉,用此盐水调成糊状,调制过程中加入高筋小麦粉、花生粉、花椒叶粉好和芝麻粉,使其混合均匀,然后冲入开水使糊变硬;
(2)向步骤(1)调好的糊中依次加入剩余的富硒绿豆淀粉、蛋清粉、菜籽油、氨基酸添加剂、复合维生素和天然防腐剂,边加边搋,手感粉面发软、有弹性且试瓢条形均匀即可;
(3)将步骤(2)中调好的粉面加入到瓢中,一手捧瓢,另一手拿木锤捶打粉面使粉丝从瓢底孔挤出;
(4)将步骤(3)挤出的粉丝直接漏到盛有沸水的锅中,当粉丝快要上浮到水面时用竹竿将粉丝挑到冷水里,冷却后的粉丝放到竹竿上摆平沥水;
(5)将沥水后的粉丝放入温度不低于8℃的冷库中冷冻至结冰,然后取出粉丝将其放入温水中融冰,用手搓拉使粉丝全部散开,再将融冰后的粉丝放到架上晾晒;
(6)将晾晒好的粉丝用铡刀切成30-40cm的长度,最后经称量、真空包装后即可出售。
实施例2
一种富硒绿豆粉丝,由如下质量份数的原料制成:
富硒绿豆淀粉85kg、高筋小麦粉9kg、蛋清粉5kg、花生粉4kg、花椒叶粉2kg、芝麻粉1kg、氨基酸添加剂2kg、食盐1kg、复合维生素1kg、壳聚糖0.5kg、菜籽油4kg。
其中,氨基酸添加剂由赖氨酸、蛋氨酸、精氨酸和色氨酸组成,用量比为1:1:1:1;复合维生素由维生素A、维生素C、维生素D、维生素E和维生素B1组成,用量比为1:1:1:1。

一种富硒绿豆粉丝,由如下质量份数的原料制成:
富硒绿豆淀粉90kg、高筋小麦粉10kg、蛋清粉6kg、花生粉5kg、花椒叶粉3kg、芝麻粉2kg、氨基酸添加剂3kg、食盐2kg、复合维生素1.5kg、壳聚糖1kg、菜籽油5kg。
其中,氨基酸添加剂由赖氨酸、蛋氨酸、精氨酸和色氨酸组成,用量比为1:1:1:1;复合维生素由维生素A、维生素C、维生素D、维生素E和维生素B1组成,用量比为1:1:1:1。
本实施例富硒绿豆粉丝的生产方法同实施例1。

Claims (6)
1.一种富硒绿豆粉丝,其特征在于,由如下质量份数的原料制成:
富硒绿豆淀粉80-90份、高筋小麦粉8-10份、蛋清粉4-6份、花生粉3-5份、花椒叶粉2-3份、芝麻粉1-2份、氨基酸添加剂1-3份、食盐1-2份、复合维生素1-1.5份、天然防腐剂0.5-1份、菜籽油3-5份。
2.根据权利要求1所述的富硒绿豆粉丝,其特征在于:所述富硒绿豆淀粉中的含硒量为0.15-0.2mg/kg。
3.根据权利要求1所述的富硒绿豆粉丝,其特征在于:所述氨基酸添加剂选自赖氨酸、蛋氨酸、精氨酸、色氨酸中的一种或几种。
4.根据权利要求1所述的富硒绿豆粉丝,其特征在于:所述复合维生素选自维生素A、维生素C、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12中的一种或几种。
5.根据权利要求1所述的富硒绿豆粉丝,其特征在于:所述天然防腐剂选自茶多酚、壳聚糖、大蒜素、蜂胶中的一种。
6.一种如权利要求1所述富硒绿豆粉丝的生产方法,其特征在于,包括下列步骤:
(1)先将食盐溶解于60℃热水中,再取1/10富硒绿豆淀粉,用此盐水调成糊状,调制过程中加入高筋小麦粉、花生粉、花椒叶粉好和芝麻粉,使其混合均匀,然后冲入开水使糊变硬;
(2)向步骤(1)调好的糊中依次加入剩余的富硒绿豆淀粉、蛋清粉、菜籽油、氨基酸添加剂、复合维生素和天然防腐剂,边加边搋,手感粉面发软、有弹性且试瓢条形均匀即可;
