[0002] 黄酒是我国最古老的饮料酒,已有4000多年的酿造历史。因最初的黄酒酒液黄亮,色泽澄黄或呈琥珀色,清澈透明,故称为黄酒,经历代人民的辛勤劳动,不断完善酿造工艺,使我国的黄酒在世界上达到了较高水平。深受国内、外人士的喜爱。
[0003] 黄酒原料主要是以糯米和黍米等谷物为原料,经过特定的加工酿造过程,使原料受到酒药、酒曲、浆水中的多种酶、酵母菌等的共同作用而酿成的一类低度原汁酒(压榨酒)。含有糖分、糊精、有机酸、氨基酸、酯类、甘油、维生素等营养物质。它常有芳香,鲜美醇厚,品种多样,形成特有的色、香、味、体。营养价值黄酒香气浓郁,甘甜味美,风味醇厚,并含有氨基酸、糖、醋、有机酸和多种维生素等,是烹调中不可缺少的主要调味品之一。相关人群一般成年人均可食用。中国黄酒历经几千年的发展,从传统酿造的调味品演变成现在流行的保健黄酒,这既是黄酒产业科技进步的表现,也是中国的黄酒产业今后的发展热点和趋势。

[0004] 本发明所要解决的技术问题是,克服现有技术中存在的不足,得到口感丰富、稳定性好的黄酒,满足特型黄酒的需求,提高黄酒的质量及功能价值,提供一种黄精保健黄酒及其制备方法。
[0005] 本发明采用的技术方案如下:
一种黄精保健黄酒,由下述重量份的原料制成:
糯米80-100、小米50-70、黄精12-15、苹果花2-3、杜仲雄花2-3、榆钱3-4、黄花倒水莲1-2、麦曲15-20、乌枣10-12、马黛茶汁适量、米酒20-30。
[0006] 所述的黄精保健黄酒的制备方法,包括以下步骤:
(1)、将黄精洗净切片,放入米酒中密封静置7-12天,捞出黄精片,放入蒸笼大火蒸制10-15分钟,捞出后加5-8倍水煎煮40-60分钟,液渣分离,滤液冷却后与静置酒液混合均匀,得黄精酒液,黄精渣片烘干研磨成粉,得黄精渣粉;
(2)、将苹果花、杜仲雄花、榆钱、黄花倒水莲混合粉碎,加6-9倍水煎煮1-2小时,过滤去渣,得到煎煮液;
(3)、将乌枣去核切制成片,加入少量米醋及适量水隔水焖至软烂,打制成浆,冻干研磨成粉,得乌率粉;
(4)、将马黛茶茎叶加入水温为80-85°C水中浸提10-15分钟,固液比为1:40-50,过滤去渣,得马黛茶汁,将小米、糯米风别冲洗干净,放入21-28Ό水中浸泡10-12小时,分别热风烘干后,加入小米、糯米各自重量份的40-50%的马黛茶汁焖润至汁液收干,再各自放入蒸屉蒸制熟透,分别用湿纱布包覆滚揉冷却至28-32Ό,得小米饭,糯米饭; (5)、将小米饭加入缸中,同时加入乌枣粉、黄精渣粉、麦曲,混合均匀搭窝发酵68-80小时,当窝液糖度达到160-235g/L时,按原料1:1-2加水,静置20-30小时,再向缸中加入糯米饭,搅拌均匀,控制品温为26-29°C,静置18-20小时;将品温提高至33_36°C开头耙,按着每间隔4-5小时开耙2-3天,盖上缸盖,静置发酵5-8天,与黄精酒液、煎煮液一并灌入陶坛中,封口堆码在露天阴凉处进行发酵80-90天,经压榨、澄清,以85-88Ό煎酒后,罐坛、封口、贮存,即得。

具体实施方式
[0008] 一种黄精保健黄酒,由下述重量(斤)的原料制成:
糯米100、小米60、黄精15、苹果花3、杜仲雄花2、榆钱4、黄花倒水莲2、麦曲18、乌枣12、马黛茶汁适量、米酒30。
[0009] 所述的黄精保健黄酒的制备方法,包括以下步骤:
(1)、将黄精洗净切片,放入米酒中密封静置12天,捞出黄精片,放入蒸笼大火蒸制15分钟,捞出后加8倍水煎煮60分钟,液渣分离,滤液冷却后与静置酒液混合均匀,得黄精酒液,黄精渣片烘干研磨成粉,得黄精渣粉;
(2)、将苹果花、杜仲雄花、榆钱、黄花倒水莲混合粉碎,加9倍水煎煮2小时,过滤去渣,得到煎煮液;
(3)、将乌枣去核切制成片,加入少量米醋及适量水隔水焖至软烂,打制成浆,冻干研磨成粉,得乌率粉;
(4)、将马黛茶茎叶加入水温为85°C水中浸提15分钟,固液比为1:50,过滤去渣,得马黛茶汁,将小米、糯米风别冲洗干净,放入228°C水中浸泡10小时,分别热风烘干后,加入小米、糯米各自重量份的40%的马黛茶汁焖润至汁液收干,再各自放入蒸屉蒸制熟透,分别用湿纱布包覆滚揉冷却至32°C,得小米饭,糯米饭;
、将小米饭加入缸中,同时加入乌枣粉、黄精渣粉、麦曲,混合均匀搭窝发酵80小时,当窝液糖度达到160-235g/L时,按原料1:2加水,静置30小时,再向缸中加入糯米饭,搅拌均匀,控制品温为28°C,静置20小时;将品温提高至35°C开头耙,按着每间隔4小时开耙3天,盖上缸盖,静置发酵8天,与黄精酒液、煎煮液一并灌入陶坛中,封口堆码在露天阴凉处进行发酵90天,经压榨、澄清,以88°C煎酒后,罐坛、封口、贮存,即得。
