本发明涉及一种菠萝蜜香蕉果冻。其特征在于选用菠萝蜜、香蕉、鱼胶粉、木糖醇、纯牛奶,经特殊工艺调配而成。属于软饮料技术领域。主要适合青少年夏日消暑止渴的食用。本发明具有以下优点:1)不含任何人工香精和色素,纯天然取材,营养丰富,是一款绿色健康的休闲食品;2)具有润肺止咳、止渴除烦、防止便秘;3)木糖醇取代蔗糖,适合的人群更广,携带方便,绿色环保;4)适合大众青年人群食用。
Description
技术领域 本发明涉及一种菠萝蜜香蕉果冻。其特征在于选用菠萝蜜、香蕉、鱼胶粉、木糖醇、纯牛奶,经特殊工艺调配而成。属于软饮料技术领域。主要适合青少年夏日消暑止渴的食用。
背景技术 当今社会随着人们对于生活品质的追求不断提高,健康、绿色的食品越来越受到人们的青睐。果冻是一种西方甜食,呈半固体状,由食用明胶加水、糖、果汁制成。亦称啫喱,外观晶莹,色泽鲜艳,口感软滑。果冻是用增稠剂(海藻酸钠、琼脂、食用明胶、卡拉胶等)加入各种人工合成香精、着色剂、甜味剂、酸味剂配制而成。虽然来自海藻和陆生植物,可是在提取过程中经过酸、碱、漂白等工艺处理,使其原有的维生素、无机盐等 营养成分均丧失殆尽。海藻酸钠、琼脂等属于膳食纤维类,但摄入过多会影响人体对脂肪、蛋白质的吸收,尤其是铁、锌等无机盐由于结合成不可溶性混合物,降低了人体对铁、锌等微量元素的吸收。有些果冻虽然是是“果味”果冻,但生产原料中没有果汁果肉,而是果味香精和食品色素。果冻的香味很多是人工合成香精的作用,并不是纯果香。人工合成香精,一般多由酯类和醛类化学物溶解于酒精中配制而成。例如,菠萝果冻的香味,主要是加入了以丁酸乙酯为主的人工合成香精;苹果果冻含有异戊酯;香蕉果冻含有丁酸戊酯等。果冻的鲜艳色泽,是加入人工着色剂的结果。这些人工着色剂,是以煤焦油为原料经化学合成,这些物质对人体没有什么营养价值,吃多无益,甚至还有一定的毒性。为了寻找一种健康的饮食果冻,采用真正纯天然的果肉制成的产品才是消费者最想要的。现代医学研究证实,菠萝蜜中含有丰富的糖类、蛋白质、B族维生素(B1、B2、B6)、维生素C、矿物质、脂肪油等。其主要治疗的物质是从菠萝蜜汁液和果皮中能够提取一种叫做菠萝蜜蛋白质的物质。服用菠萝蜜后能加强体内纤维蛋白的水解作用,可将阻塞于组织与血管内的纤维蛋白及血凝块溶解,从而改善局部血液、体液循环,使炎症和水肿吸收、消退,对脑血栓及其它血栓所引起的疾病有一定的辅助治疗作用。菠萝蜜中提取的菠萝蛋白质与抗菌素及其他药物并用,能促进药物对病变组织的渗透和扩散,适用于治疗各种原因引起的炎症、水肿等症,如支气管炎、支气管哮喘、急性肺炎、咽喉炎、视网膜炎、乳腺炎、产后乳房充血、产后血栓性静脉炎、关节炎、关节周围炎、蜂窝组织炎、小腿溃疡等疾病均有功效。另外,香蕉的营养也是非常丰富的,每百克果肉中含蛋白质1.2克,脂肪0.5克,碳水化合物19.5克,粗纤维0.9克,钙9毫克,磷31毫克,铁0.6毫克,还含有胡萝卜素、硫胺素、烟酸、维生素C、维生素E及丰富的微量元素钾等。香蕉在人体内能帮助大脑制造一种化学成分——血清素,这种物质能刺激神经系统,给人带来欢乐、平静及瞌睡的信号,甚至还有镇痛的效应。美国医学专家研究发现,常吃香蕉可防止高血压,因为香蕉可提供较多的能降低血压的钾离子,有抵制钠离子升压及损坏血管的作用。因香蕉中含有多种营养物质,而含钠量低,且不含胆固醇,食后既能供给人体各种营养素,又不会使人发胖。因此,常食香蕉不仅有益于大脑,预防神经疲劳,还有润肺止咳、防止便秘的作用。本发明的一种菠萝蜜香蕉果冻,不但取材天然,具有多种水果的药理特性,且不含添加剂,可有降脂降压、润肺止咳等保健功效,是一种名符其实的绿色健康食品。
发明内容本发明的要点在于选用菠萝蜜、香蕉、鱼胶粉、木糖醇、纯牛奶,经特殊工艺调配而成一种绿豆香蕉果冻。本发明的果冻配方如下(重量百分比):菠萝蜜汁20.0-25.0、香蕉汁 15.0-25.0、鱼胶粉6.0-7.0、木糖醇5.0-9.0、纯牛奶至100。
菠萝蜜:菠萝蜜的营养价值很高,含有碳水化合物、糖分、蛋白质、淀粉、维生素、氨基酸、钙、铁、钾, 并含有一定量的植物脂肪以及对人体有用的各种矿物质,是一种美容益气的果品。其果肉含有糖分、脂肪、蛋白质;在果汁中,还含有一种跟胃液相类似的酵素,可以分解蛋白质,具有帮助消化的作用。因此,饭后食用很有益处。除此以外广东医学院研究表明,菠萝蜜中含有特别高的钙、镁元素,还有锌、铁、钠等有益元素,相对其它水果中的铅、镉、砷等有害元素含量很低,且有止渴除烦,补中益气的功效,对人体多有好处。在医药中常用于治疗慢性肠炎,外用可治外伤出血,溃疡。

纯牛奶:纯牛奶的营养价值很高,牛奶中的矿物质种类也非常丰富,除了我们所熟知的钙以外,磷、铁、锌、铜、锰、钼的含量都很多。最难得的是,牛奶是人体钙的最佳来源,而且钙磷比例非常适当,利于钙的吸收。脱脂奶适合老年人、血压偏高的人群,高钙奶适合中等及严重缺钙的人、少儿、老年人、易怒、失眠者以及工作压力大的女性。牛奶帮助有效睡眠,适合高压力人群。高考生、加班人群,可睡前一杯。胃不好的人群,也可作为用餐时的辅助,与粥类同煮,既健康又营养。5.抗菌药与牛不可同时服用。服用抗菌药前后2小时内,如果饮用牛奶会降低抗菌药物的吸收速率,影响药效发挥;果汁中含有果酸,会加速抗菌药溶解,不仅降低其药效,还可能产生有害的中间产物,产生毒副作用。虽然说牛奶具有很好的养胃功效,但专家提醒,患有腹泻、脾虚症、湿症等患者在日常生活中不适合过量的饮用牛奶。
本发明的生产流程:
菠萝蜜、香蕉分别制汁备用→牛奶加热→鱼胶粉、木糖醇溶解→加入菠萝蜜汁、香蕉果汁→搅拌→分装→冷却→低温储存。
本发明产品的生产工艺:
1) 菠萝蜜榨汁:菠萝蜜去皮、种子,将其切块,打浆,打浆时加4倍体积的矿泉水,采用果胶酶酶解法提取菠萝蜜汁;
2) 香蕉制汁:成熟香蕉剥皮切段后,置于微波炉中进行微波灭酶处理;经过灭酶的香蕉片打浆后加入果浆酶进行酶解,再经离心机分离,过滤得到香蕉果汁;
3)牛奶加热到70-75度;
4)称取鱼胶粉和木糖醇,缓慢加入到牛奶中,边加边搅拌,使二者充分溶解;
5)倒入绿豆汁和香蕉汁,搅拌均匀;
6) 分装,冷却,低温储藏。
本发明具有以下优点:

以产品总量为100kg为例,按一下数据配制工艺:
1. 配方(重量百分比):菠萝蜜汁20.0-25.0、香蕉汁 15.0-25.0、鱼胶粉6.0-7.0、木糖醇5.0-9.0、纯牛奶至100。
2.本发明的生产流程:菠萝蜜、香蕉分别制汁备用→牛奶加热→鱼胶粉、木糖醇溶解→加入菠萝蜜汁、香蕉果汁→搅拌→分装→冷却→低温储存。
3. 本发明产品的生产工艺:

1.本发明涉及一种菠萝蜜香蕉果冻,其特征在于具有如下的配方(重量百分比):菠萝蜜汁20.0-25.0、香蕉汁 15.0-25.0、鱼胶粉6.0-7.0、木糖醇5.0-9.0、纯牛奶至100。
2.根据权利要求1所述的一种菠萝蜜香蕉果冻,其特征在于具有如下的工艺:
1) 菠萝蜜榨汁:菠萝蜜去皮、种子,将其切块,打浆,打浆时加4倍体积的矿泉水,采用果胶酶酶解法提取菠萝蜜汁;
2) 香蕉制汁:成熟香蕉剥皮切段后,置于微波炉中进行微波灭酶处理;经过灭酶的香蕉片打浆后加入果浆酶进行酶解,再经离心机分离,过滤得到香蕉果汁;
3)牛奶加热到70-75度;
4)称取鱼胶粉和木糖醇,缓慢加入到牛奶中,边加边搅拌,使二者充分溶解;
5)倒入绿豆汁和香蕉汁,搅拌均匀;
6) 分装,冷却,低温储藏。
