本发明公开了一种孕妇专用速溶蛋黄粉及其制备方法,所述孕妇专用速溶蛋黄粉以蛋黄粉为主要原料,根据孕妇不同阶段营养需求特点,添加不同的天然辅料,制成孕妇型固体饮料。根据孕期不同,所述孕妇专用速溶蛋黄粉分为三个类型孕早期型、孕中期型、孕末期型,三个类型产品的配方差异使各产品营养补充的侧重点不同,以满足孕妇不同阶段的营养需求。

本发明涉及孕妇专用食品及其制备方法。
背景技术
目前市场上销售的孕妇型固体饮料主要分为怀孕阶段补充营养型与孕后有助于恢复身材型。怀孕阶段补充营养型的固体饮料营养素的组成比较笼统,一般含有维生素、钙、铁等,并没有按照怀孕不同阶段营养素的需求不同而设计相应的配方。
蛋黄含有丰富营养物质:蛋白质、胆碱、卵磷脂、DHA、钙、铁、锌、维生素A、B族维生素、维生素D、维生素E等,目前市场上并没有以蛋黄粉为主要原料的孕妇型固体饮料。孕妇各阶段营养特点:孕早期:补充丰富的叶酸、B族维生素,以促进胎儿神经系统发育、改善母体早孕反应。孕中期:补充铁、锌等营养,促进胎儿生长发育、预防母体缺铁性贫血。孕末期:补充钙、维生素D等营养,促进胎儿大脑进一步发育、补充母体钙含量。
发明内容
为满足市场需求,本发明的目的在于提供一种孕妇专用的速溶蛋黄粉及其制备方法。
根据《中国居民膳食营养素参考摄入量》关于孕早、中、后期各营养素推荐摄入量的差异性,本系类产品分为三个类型:孕早期型(怀孕前三个月)、孕中期型(孕13周到孕27周)、孕末期型(孕28周至分娩)。以蛋黄粉为主要原料,根据各阶段孕妇营养特点添加天然辅料以达到相应营养的补充的目的。
孕早期型:以蛋黄粉为主要原料,添加奶粉、白砂糖、豆粉、山楂、麦芽糊精、低聚异麦芽糖以达到补充丰富的叶酸、B族维生素的功能。
孕中期型:以蛋黄粉为主要原料,加入奶粉、白砂糖、豆粉、枣粉、麦芽糊精、低聚异麦芽糖以达到补充铁、锌等营养素的功能。
孕末期型:以蛋黄粉为主要原料,加入奶粉、白砂糖、豆粉、麦芽糊精、低聚异麦芽糖以达到补充钙、维生素D的功能。
这个系列的孕妇专用速溶蛋黄粉具体配方如下,配方中的百分比均为质量百分比。
孕早期型固体饮料:蛋黄粉(15%~25%)、奶粉(10%~20%)、白砂糖(10%~20%)、豆粉(5%~10%)、山楂粉(5%~10%)、麦芽糊精(10%~20%)、低聚异麦芽糖(5%~15%)。
孕中期型固体饮料:蛋黄粉(15%~25%),奶粉(15%~20%)、白砂糖(11%~20%)、豆粉(10%~15%)、枣粉(5%~15%)、麦芽糊精(10%~20%)、低聚异麦芽糖(4%~10%)。
孕末期型固体饮料:蛋黄粉(15%~25%)、奶粉(15%~20%)、白砂糖(10%~20%)、豆粉(5%~15%)、麦芽糊精(15%~20%)、低聚异麦芽糖(5%~15%)。
另外,本发明还提供一种孕妇专用的速溶蛋黄粉的制备方法,所述方法包括如下步骤:
1、先将所有的原辅料混合均匀;
2、加入适量的水、酒精、糖类等物质作为粘结剂,搅拌均匀,制成含水率为10~20%的混合蛋黄粉;
3、将上述得到的混合蛋黄粉制粒,制粒为常规方法进行制粒,如挤压制粒或摇摆制粒;
4、将制粒的混合蛋黄粉进行干燥,沸腾制粒过程中控制风机频率为20~50Hz,进口温度70~100℃,出口温度50~80℃;
5、干燥后的混合蛋黄粉过20~40目筛,得粗品,经灭菌、包装得终产品。
有益效果
本发明针对不同孕期的孕妇提供不同的速溶蛋黄粉,为孕妇提供了营养均衡、食用方便的补充食品,从而为胎儿的发育提供了良好的促进作用。
具体实施方式
实施例1
孕早期型孕妇专用速溶蛋黄粉
蛋黄粉22%,奶粉18%,白砂糖19%,豆粉8%,山楂6%,麦芽糊精15%,低聚异麦芽糖12%。
孕早期营养特点:补充丰富的叶酸、B族维生素,以促进胎儿神经系统发育、减轻母体早孕反应。而在孕早期的营养配方中添加山楂粉不仅能够提供叶酸,而且还改善营养配方的口味,更贴近孕妇孕期嗜酸的口味喜好。
实施例2
孕中期型孕妇专用速溶蛋黄粉
蛋黄粉23%,奶粉18%,白砂糖20%,豆粉10%,枣粉10%,麦芽糊精10%,低聚异麦芽糖9%。
孕中期营养特点:补充铁、锌等营养,促进胎儿生长发育、预防母体缺铁性贫血。而枣类含铁丰富,添加枣粉可以有效地补充铁营养,改善贫血现象。
实施例3
孕末期型孕妇专用速溶蛋黄粉
蛋黄粉20%,奶粉18%,白砂糖18%,豆粉15%,麦芽糊精15%,低聚异麦芽糖14%。其中低聚异麦芽糖是益生元,可以改善孕妇肠胃功能,促进营养的消化吸收。
实施例4
孕妇专用速溶蛋黄粉的制备工艺
1、先将所有的原辅料混合均匀;
2、加入粘结剂,搅拌均匀,制成含水率为16%的混合蛋黄粉;
3、将上述得到的混合蛋黄粉进行摇摆制粒;
4、将制粒的混合蛋黄粉进行干燥,沸腾制粒过程中控制风机频率为35Hz,进口温度为90℃,出口温度为80℃;
5、干燥后的混合蛋黄粉过40目筛,得产品。

1.一种孕妇专用速溶蛋黄粉,其特征在于,针对不同的孕期所述孕妇专用速溶蛋黄粉含有按重量计的如下组分:
孕早期型固体饮料:蛋黄粉15%~25%、奶粉10%~20%、白砂糖10%~20%、豆粉5%~10%、山楂粉5%~10%、麦芽糊精10%~20%、低聚异麦芽糖5%~15%;
孕中期型固体饮料:蛋黄粉15%~25%,奶粉15%~20%、白砂糖11%~20%、豆粉10%~15%、枣粉5%~15%、麦芽糊精10%~20%、低聚异麦芽糖4%~10%;
孕末期型固体饮料:蛋黄粉15%~25%、奶粉15%~20%、白砂糖10%~20%、豆粉5%~15%、麦芽糊精15%~20%、低聚异麦芽糖5%~15%。
2.根据权利要求1所述的孕妇专用蛋黄粉,其特征在于,针对不同孕期的所述孕妇专用速溶蛋黄粉含有按重量计的如下组分:
孕早期型固体饮料:蛋黄粉22%,奶粉18%,白砂糖19%,豆粉8%,山楂6%,麦芽糊精15%,低聚异麦芽糖12%;
孕中期型固体饮料:蛋黄粉23%,奶粉18%,白砂糖20%,豆粉10%,枣粉10%,麦芽糊精10%,低聚异麦芽糖9%;
孕末期型固体饮料:蛋黄粉20%,奶粉18%,白砂糖18%,豆粉15%,麦芽糊精15%,低聚异麦芽糖14%。
3.一种如权利要求1所述的孕妇专用速溶蛋黄粉的制备方法,其特征在于:所述方法包括如下步骤:
(1)将所有用于生产所述孕妇专用速溶蛋黄粉的原辅料混合均匀;
(2)加入水、酒精、糖等作为粘结剂,搅拌均匀,制成含水率为10~20wt%的混合蛋黄粉;
(3)采用挤压制粒法或摇摆制粒法将上述得到的混合蛋黄粉制粒;
(4)将制粒得到的混合蛋黄粉进行干燥,沸腾制粒过程中控制风机频率为20~50Hz,进口温度70~100℃,出口温度50~80℃。
