一种芫根玉米抗缺氧饮料的生产方法,属于食品加工技术领域。为了缓解旅游者进入高原后有严重的高原反应,根据藏医及现代医学研究成果,以青藏高原特有抗缺氧植物芫根为原料配以玉米风味浓缩糖浆制得的适合高原反应、具有抗缺氧作用的芫根玉米饮料。

一种芫根玉米抗缺氧饮料的生产方法,属于食品加工技术领域,具体涉及一种适合高原反应、具有抗缺氧作用的玉米风味饮料制作方法。
背景技术
高原反应即急性高原病(acute high altitude disease, AHAD),是人到达一定海拔高度后,身体为适应因海拔高度而造成的气压差、含氧量少、空气干燥等的变化,而产生的自然生理反应,海拔高度一般达到2700米左右时,就会有高原反应。机体在适应一段时间后可以发生一系列的适应性变化,如通气量增加,以便使组织利用氧达到或接近正常水平;加快心脏速率、加大心脏泵血能力,以使每分钟心脏搏出血量增加,改善缺氧状况;增加红细胞和血红蛋白量以增加携氧能力来保证肌体的氧气供应等。但是,一部分人对空气中氧分压低比较敏感,适应能力较差,会出现一系列症状和机能代谢变化的高原适应不全症,也称为急性高原反应。
据藏医记截:芫根,其外形圆似萝卜,味甜,密实度高,具有清热解毒、滋补增氧、降血脂等诸多功能,对人体有着一定保健作用。芫根富含极高的蛋白质、粗纤维、钙、磷、铁及多种微生素多达20多种,均为人体所需的营养成分;从药理实验的结果看,它对抗缺氧、抗疲劳、降血脂,以及缓解水土不服等症状有极高调节补充作用。
芫根(Brassica rapa L.)系十字花科芸薹属芫根种两年生草本植物,根系发达,上部膨大形成扁圆形的肉质块根,外形似圆萝卜,能提高人体的缺氧耐受性。芫根含粗蛋白1.35%、总糖3.64%、总酸0.18%;有机酸组成主要为草酸和L-苹果酸,芫根干水提物含粗蛋白15.49%、总糖41.84%、还原性糖39.33%、总酸2.08%、黄酮0.180%、总酚0.952%、三萜10.49%、多糖12.23%。
目前芫根的前期研究以芫根花叶病毒为主,食品加工及功能研究领域鲜有报道。
发明内容
为了缓解旅游者进入高原后有严重的高原反应,根据藏医及现代医学研究成果,以青藏高原特有抗缺氧植物芫根为原料配以玉米风味浓缩糖浆制得的适合高原反应、具有抗缺氧作用的芫根玉米饮料 。

具体实施方式
(1)芫根汁制备:将芫根洗净削皮后,切成薄片用清水煮制脱臭,再将芫根片煮至软烂,打浆得到芫根浆液再经压榨得到芫根汁液;
(2)芫根玉米饮料的生产:将(1)步骤得到的芫根汁液进行调配,使芫根浆液占20%—50%,玉米风味浓缩糖浆10%—15%,加水稀释搅拌均匀,经高压均质、杀菌、冷却、灌装检验得到芫根玉米抗缺氧饮料。

1.一种芫根玉米抗缺氧饮料的生产方法,其特征在于以青藏高原特有的药食两用抗缺氧植物芫根为原料,经脱臭榨汁配以玉米风味浓缩糖浆生产的具有抗缺氧特性及适合高原反应症的饮料,其具体生产工艺如下:
a)芫根汁制备:将芫根洗净削皮后,切成薄片用清水煮制脱臭,再将芫根片煮至软烂,打浆得到芫根浆液再经打浆得到芫根汁液;
b)芫根玉米饮料的生产:将a)步骤得到的芫根汁液加水稀释,使芫根浆液占20%—50%,配以10%—15%玉米风味浓缩糖浆其余为饮用水,经高压均质、杀菌、冷却、灌装检验得到芫根玉米抗缺氧饮料。
