Abstract
本发明涉及一种青稞黑果羹,该果羹是由下述重量份原料混合均匀,并按常规方法制粒后按20g/袋分装所得:青稞甜醅粉1~7份、青稞黑果枸杞粉0.8~3份、木糖醇0.3~0.8份。本发明较完整地保留了青稞甜醅、黑果枸杞的营养及生物活性成分,不但具有青稞甜醅特有清香,口感醇厚,而且在提高青稞、黑果枸杞经济附加值的同时也益于人体健康。

技术领域
本发明涉及保健食品领域,尤其涉及青稞黑果羹。
背景技术
青稞又称裸大麦、元麦、米大麦,生长于海拔4200~4500米的高寒地区,因其独特的生长环境,使其具有丰富的营养价值和突出的医药保健作用。在《本草拾遗》中,青稞具有下气宽中、壮精益力、除湿发汗、止泻的作用。据《晶珠本草》记载,其味甘,性凉、重,治培根、赤巴等病。青稞富含β-葡聚糖及稀有营养成分硫胺素(维生素B1)、核黄素(维生素B2)、尼克酸等,其中β-葡聚糖的含量与其它谷物相比含量是最高的。β-葡聚糖可预防结肠癌、心血管疾病,且具有提高机体免疫能力等作用。
青稞做甜醅,经过发酵,软软糯糯但又有着嚼劲,甜中带点酸淡淡的酒香。甜醅制作简单,营养丰富,又有开胃作用。
黑果枸杞味甘、性平,富含蛋白质、枸杞多糖、氨基酸、维生素、矿物质、微量元素等多种营养成分,还含有丰富的黑果色素——天然原花青素,原花青素是水溶性自由基清除剂。《四部医典》、《晶珠本草》等藏药经典著作记载黑枸杞用于:治疗心热病、心脏病、月经不调、停经等且药效显著。黑果枸杞可增强免疫力、延缓衰老,补肾益精,生津止渴、改善循环,补血安神、改善睡眠,润肺止咳、减缓衰老,明目的作用,还可防治糖尿病,并具有明显的抗疲劳,保肝,抗肿瘤,疏通血管,降压,保护心血管系统作用。
因此,开发青稞黑果羹不仅可以提高青稞、黑果枸杞的经济价值,对社会健康保健事业同样具有积极意义。
发明内容
本发明所要解决的技术问题是提供一种口感醇厚、营养丰富的青稞黑果羹。
为解决上述问题,本发明所述的青稞黑果羹,其特征在于:该果羹是由下述重量份原料混合均匀,并按常规方法制粒后按20g/袋分装所得:青稞甜醅粉1~7份、青稞黑果枸杞粉0.8~3份、木糖醇0.3~0.8份;

所述青稞甜醅粉是指首先将青稞清洗后,按其质量的5~8倍加水,在温度为85~95℃的条件下煮10~20分钟,然后在50~70℃煮2~6小时,捞出煮好的青稞,摊开晾凉,得到晾凉的青稞;其次,将甜醅曲粉碎后,按1g:0.05~0.1g的比例均匀拌在所述晾凉的青稞中,然后装入器皿内,在25~30℃保温24~72小时,得到发酵好的青稞;最后,将所述发酵好的青稞取出,在-30~-35℃条件下进行冷冻干燥,20~70h后即得;
所述青稞黑果枸杞粉是指将青稞洗净在200~250℃烘3~10分钟后,按1g:0.1~0.5g的比例加入洗净干燥的黑果枸杞,混合均匀,经粉碎、过100~200目筛后即得。
本发明与现有技术相比具有以下优点:
1、本发明以青稞为主要原料经过加工并加入黑果枸杞、木糖醇配制而成的青稞黑果羹,较完整地保留了青稞甜醅和黑果枸杞的营养及生物活性成分。
2、本发明全部采用纯天然原料,不使用任何添加剂,具有青稞甜醅特有清香,口感醇厚,在提高青稞、黑果枸杞经济附加值的同时也益于人体健康。
具体实施方式
实施例1 青稞黑果羹,该果羹是由下述重量份(kg)原料混合均匀,并按常规方法制粒后按20g/袋分装所得:青稞甜醅粉1份、青稞黑果枸杞粉0.8份、木糖醇0.3份。
其中:
青稞甜醅粉是指首先将青稞清洗后,按其质量的5倍加水,在温度为85℃的条件下煮10分钟,然后在50℃煮2小时,捞出煮好的青稞,摊开晾凉,得到晾凉的青稞;其次,将甜醅曲粉碎后,按1g:0.05g的比例均匀拌在晾凉的青稞中,然后装入器皿内,在25℃保温24小时,得到发酵好的青稞;最后,将发酵好的青稞取出,在-30℃条件下进行冷冻干燥,20h后即得。

青稞甜醅粉是指首先将青稞清洗后,按其质量的8倍加水,在温度为95℃的条件下煮20分钟,然后在70℃煮6小时,捞出煮好的青稞,摊开晾凉,得到晾凉的青稞;其次,将甜醅曲粉碎后,按1g: 0.1g的比例均匀拌在晾凉的青稞中,然后装入器皿内,在30℃保温72小时,得到发酵好的青稞;最后,将发酵好的青稞取出,在-35℃条件下进行冷冻干燥,70h后即得。
青稞黑果枸杞粉是指将青稞洗净在250℃烘10分钟后,按1g:0.4g的比例加入洗净干燥的黑果枸杞,混合均匀,经粉碎、过200目筛后即得。
实施例3 青稞黑果羹,该果羹是由下述重量份(kg)原料混合均匀,并按常规方法制粒后按20g/袋分装所得:青稞甜醅粉3份、青稞黑果枸杞粉2份、木糖醇0.5份。
其中:
青稞甜醅粉是指首先将青稞清洗后,按其质量的4倍加水,在温度为90℃的条件下煮15分钟,然后在60℃煮3小时,捞出煮好的青稞,摊开晾凉,得到晾凉的青稞;其次,将甜醅曲粉碎后,按1g:0.08g的比例均匀拌在晾凉的青稞中,然后装入器皿内,在28℃保温36小时,得到发酵好的青稞;最后,将发酵好的青稞取出,在-33℃条件下进行冷冻干燥,48h后即得。
青稞黑果枸杞粉是指将青稞洗净在230℃烘5分钟后,按1g:0.5g的比例加入洗净干燥的黑果枸杞,混合均匀,经粉碎、过160目筛后即得。
实施例4 青稞黑果羹,该果羹是由下述重量份(kg)原料混合均匀,并按常规方法制粒后按20g/袋分装所得:青稞甜醅粉7份、青稞黑果枸杞粉0.8份、木糖醇0.7份。
其中:
青稞甜醅粉是指首先将青稞清洗后,按其质量的5倍加水,在温度为95℃的条件下煮20分钟,然后在70℃煮2小时,捞出煮好的青稞,摊开晾凉,得到晾凉的青稞;其次,将甜醅曲粉碎后,按1g:0.09g的比例均匀拌在晾凉的青稞中,然后装入器皿内,在25℃保温60小时,得到发酵好的青稞;最后,将发酵好的青稞取出,在-30℃条件下进行冷冻干燥,60h后即得。
青稞黑果枸杞粉是指将青稞洗净在250℃烘8分钟后,按1g:0.25g的比例加入洗净干燥的黑果枸杞,混合均匀,经粉碎、过200目筛后即得。
