Abstract

本发明公开了一种复合甜味剂,由如下重量份的物质组成:甜菊糖甙75-98份、甜蜜20-30份、甘蔗渣提取物5-12份、甜菜浆提取物5-12份、糖精钠20-25份、糊精5-10份和香精0.5-1份。本发明复合甜味剂各组分复合后有协同增效作用,使味道更接近于蔗糖;可以在应用中完全代替蔗糖或者掺杂少量蔗糖之后替代蔗糖,不仅能够降低企业使用蔗糖带来的成本压力,还能够使消费者获得与蔗糖相同或相近似的口感,并且解决了营养型甜味剂摄入过多会引起肥胖、高血压、糖尿病和龋齿等疾病问题。

一种复合甜味剂
技术领域:
本发明属于食品添加剂技术领域,特别涉及一种复合甜味剂。
背景技术:
复合甜味剂是在各种天然的和化学合成的甜味剂不断开发、应用的过程中产生的,是符合国际潮流发展方向的生产应用技术。由于复合甜味剂在食品、饮料中不仅使用方便、甜味纯正又可降低生产成本,深受食品、饮料行业的欢迎,也带动我国市场经济、食品工业及其相关产业的迅猛发展。理想的甜味剂要求是:安全无毒、甜味纯正(与蔗糖相似)、高甜度、低热量或无热值:稳定性高、不致龋齿和价格合理(至少等甜度条件下不能超过蔗糖价格)。完全能达到这些要求的甜味剂目前还不存在,但因为各种甜味剂之间可能存在协同增效作用且复合甜味剂具有使用方便、甜度高、甜味纯正、生产成本低的特点,所以成为甜味剂开发、应用的一个重要方向。
目前,国内外已使用的甜味剂可分为营养型和非营养型两大类。营养型甜味剂包括:蔗糖、葡萄糖、果糖、异构糖、麦芽糖、山梨糖、各种低聚糖等糖类和木糖醇、山梨糖醇、甘露醇、乳糖醇、赤藓醇等多元醇。非营养型属高甜度甜味剂包括甜菊糖甙、甘草甜素、罗汉果糖甙、黄酮类糖甙、沙马丁等天然物质和糖精、环己基氨基磺酸钠(甜蜜素)、甜味素(APM)、安赛蜜(AK糖)、三氯蔗糖等化学合成的物质。上述营养型甜味剂与非营养型甜味剂相比,营养型甜味剂摄入过多会引起肥胖、高血压、糖尿病和龋齿等疾病。非营养型甜味剂由于它们的甜度都比蔗糖低,不会产生热量或产生热量很低,又不被消化吸收,一般也不会引起人体血糖、血脂的升高,可复合成功能性甜味剂并可获得与等量蔗糖甜度比,适用于肥胖、糖尿病患者食用。
发明内容:
本发明的目的在于针对现有技术中的不足,提供一种复合甜味剂。
为解决上述技术问题,本发明采用的技术方案为:一种复合甜味剂,由如下重量份的物质组成:甜菊糖甙75-98份、甜蜜20-30份、甘蔗渣提取物5-12份、甜菜浆提取物5-12份、糖精钠20-25份、糊精5-10份和香精0.5-1份。
进一步的,一种复合甜味剂,由如下重量份的物质组成:甜菊糖甙78-88份、甜蜜22-26份、甘蔗渣提取物5-10份、甜菜浆提取物5-10份、糖精钠20-23份、糊精5-8份和香精0.5-0.8份。
进一步的,一种复合甜味剂,由如下重量份的物质组成:甜菊糖甙83份、甜蜜24份、甘蔗渣提取物7份、甜菜浆提取物7份、糖精钠21份、糊精6份和香精0.7份。
进一步的,所述甜菊糖甙中含有瑞鲍迪甙A、瑞鲍迪甙C、甜菊甙、杜克甙A和甜菊双糖甙,五者在甜菊糖甙中的总质量分数为72-93%。
进一步的,所述甜菊甙的质量分数为68-78%。
本发明的有益效果:本发明复合甜味剂各组分复合后有协同增效作用,使味道更接近于蔗糖;可以在应用中完全代替蔗糖或者掺杂少量蔗糖之后替代蔗糖,不仅能够降低企业使用蔗糖带来的成本压力,还能够使消费者获得与蔗糖相同或相近似的口感,并且解决了营养型甜味剂摄入过多会引起肥胖、高血压、糖尿病和龋齿等疾病问题。

实施例1
一种复合甜味剂,由如下重量份的物质组成:甜菊糖甙98份、甜蜜30份、甘蔗渣提取物12份、甜菜浆提取物12份、糖精钠25份、糊精10份和香精1份。
甜菊糖甙中含有瑞鲍迪甙A、瑞鲍迪甙C、甜菊甙、杜克甙A和甜菊双糖甙,五者在甜菊糖甙中的总质量分数为72%。
实施例2
一种复合甜味剂,由如下重量份的物质组成:甜菊糖甙78份、甜蜜22份、甘蔗渣提取物5份、甜菜浆提取物5份、糖精钠20份、糊精5份和香精0.5份。
甜菊糖甙中含有瑞鲍迪甙A、瑞鲍迪甙C、甜菊甙、杜克甙A和甜菊双糖甙,五者在甜菊糖甙中的总质量分数为86%。
实施例3
一种复合甜味剂,由如下重量份的物质组成:甜菊糖甙83份、甜蜜24份、甘蔗渣提取物7份、甜菜浆提取物7份、糖精钠21份、糊精6份和香精0.7份。
甜菊糖甙中含有瑞鲍迪甙A、瑞鲍迪甙C、甜菊甙、杜克甙A和甜菊双糖甙,五者在甜菊糖甙中的总质量分数为93%。

1.一种复合甜味剂,其特征在于:由如下重量份的物质组成:甜菊糖甙75-98份、甜蜜20-30份、甘蔗渣提取物5-12份、甜菜浆提取物5-12份、糖精钠20-25份、糊精5-10份和香精0.5-1份。
2.根据权利要求1所述的一种复合甜味剂,其特征在于:由如下重量份的物质组成:甜菊糖甙78-88份、甜蜜22-26份、甘蔗渣提取物5-10份、甜菜浆提取物5-10份、糖精钠20-23份、糊精5-8份和香精0.5-0.8份。
3.根据权利要求1所述的一种复合甜味剂,其特征在于:由如下重量份的物质组成:甜菊糖甙83份、甜蜜24份、甘蔗渣提取物7份、甜菜浆提取物7份、糖精钠21份、糊精6份和香精0.7份。
4.根据权利要求1-3中的任意一项所述的一种复合甜味剂,其特征在于:所述甜菊糖甙中含有瑞鲍迪甙A、瑞鲍迪甙C、甜菊甙、杜克甙A和甜菊双糖甙,五者在甜菊糖甙中的总质量分数为72-93%。
5.根据权利要求1-3中的任意一项所述的一种复合甜味剂,其特征在于:所述甜菊甙的质量分数为68-78%。
