Abstract
本发明涉及一种美容养颜菊芋芦荟皮复合咀嚼片及其制备方法,属于食品加工技术领域。它是以菊芋粉、芦荟皮粉、玫瑰花瓣粉为主要原料,添加木糖醇、甘露糖醇、柠檬酸等辅料,以硬脂酸镁作为润滑剂,按一定的质量比,经干燥、粉碎、混合、添加湿润剂制软材、造粒、干燥、整粒、压片、灭菌、包装等工艺制备而成。本发明制备的咀嚼片富含芦荟大黄素、芦荟苷、黄酮类化合物、活性多糖、膳食纤维、玫瑰花青素、菊芋果聚糖等多种生物活性物质,色泽均匀、酸甜适口、携带方便,既具有玫瑰的芳香,又有芦荟和菊芋的清香,经常食用能够促进消化、消炎杀菌、预防龋齿、防止肥胖、安神活血、降三高、抗氧化、抗衰老、提高免疫力,具有明显的美容养颜保健功效。

本发明属于食品加工技术领域,涉及一种咀嚼片的制备方法,具体涉及一种具有美容养颜功效的菊芋芦荟皮复合咀嚼片及其制备方法。
背景技术
菊芋又名洋姜,为菊科向日葵属多年生宿根草本植物,全国各地均有栽培,具有很强的抗寒抗旱抗病能力,特别适合在盐碱地、贫瘠山地等不适合粮食种植的地区种植,已被广泛用于防沙治沙、水土保持等生态环境治理。菊芋富含菊糖、低聚果糖、膳食纤维、蛋白质、矿质元素等人体必需的多种营养成分,有低热量、非胰岛素依赖性等特点,具有预防臼齿、防治糖尿病,调节血压、减肥、预防心血管疾病、提高免疫力等保健功能,其中菊糖是目前发现的最好的水溶性膳食纤维之一,菊粉及其水解产物低聚果糖还具有双歧因子增强功效,具有促进肠道双歧杆菌等有益微生物的生长,降低肠道PH值,预防肥胖症、调节血糖水平、降血脂、调节肠道菌群、防止便秘、腹泻、预防龋齿和促进维生素的合成等保健功能,被列为国际组织认定的新型果糖替代物和欧盟新作物发展计划的首选作物,市场潜力巨大。但是目前菊芋作为食品资源的开发利用程度极低,加工产品仍然停留在腌菜、干燥粉碎等方面,深加工技术落后,加工附加值低。因此,开发具有特定保健功能的菊芋高附加值产品具有重要的现实意义。
芦荟是多年生百合科常绿多肉质草本植物,含有芦荟多糖、有机酸、黄酮、蒽酮类化合物、芦荟大黄素、大黄酸、芦荟苷等多种生物活性物质,具有杀菌、消炎、排毒养颜、抗氧化、抗癌、促进伤口愈合、保护心血管、降血糖、增强机体免疫力、延缓衰老等多种药理保健功能。素有“天然美容师”、“家庭医生”等美誉,被联合国粮农组织列为“21世纪人类的最佳保健品之一”,是国内外公认的药食同源性植物。然而在芦荟产品的加工过程中,95%以上的芦荟皮被丢弃而未得到充分利用,不仅造成了资源的极度浪费,还容易引起严重的环境污染。而芦荟最具保健功能的蒽酮类物质恰恰主要存在于皮中,此外芦荟皮还富含有黄酮、酚类、膳食纤维等生物活性物质,因此,芦荟皮的加工利用是芦荟产业发展中需要深入的研究的重要课题。
玫瑰花为蔷薇科蔷薇属多年生灌木玫瑰的干燥花蕾,是我国传统的美容佳品,富含300多种化学成分,包括挥发油、多糖、鞣质、酯类、生物碱、维生素C、氨基酸、膳食纤维和微量元素、三萜类化合物以及原花青素、花色苷等黄酮类化合物,具有美容养颜、抗氧化、抗肿瘤、抗菌、抗病毒、抗辐射、增强免疫力、以及延缓衰老和促进健康长寿的药理保健作用,具有重要的开发研究价值。
虽然上述菊芋与芦荟皮均具有极佳的药理保健功能,但是由于菊芋的主要成分菊糖易吸水膨胀、粘度较高,加工为饮料等产品形式难度较大,芦荟皮由于其蒽酮类物质的苦涩味,导致消费者很难适应单独加工后的特殊气味,关于二者的深加工技术相对落后,复合开发技术更加匮乏。
通过检索,尚未发现与本发明申请相关的公开专利或期刊文献。
发明内容
针对上述现有技术的不足,本发明的目的在于提供一种美容养颜菊芋芦荟皮复合咀嚼片,将二者按比例复合,再添加其他辅料,开发为菊芋芦荟皮咀嚼片,对于降低菊芋加工技术难度、改善芦荟皮口感、提高菊芋产品保健功能等方面都具有良好的效果。
为达到上述目的,本发明提供一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于,包含如下原料:菊芋粉、芦荟皮粉、玫瑰花瓣粉、甘露糖醇、木糖醇、柠檬酸和硬脂酸镁,其质量比为:45~55: 8.5~12.5: 12: 8: 15: 1.2~1.5:0.8~1.2。
本发明还提供了一种美容养颜菊芋芦荟皮复合咀嚼片的制备方法,其技术步骤包括:
1)制备菊芋粉:挑选新鲜、无病变霉变的菊芋块茎,流水冲洗后置于蒸锅中95℃蒸煮20min,流水冷却、再切为0.5cm ~1cm厚的薄片,平铺于干燥盘,放入干燥箱干燥至含水量8%以下,干燥温度60℃,干燥时间为48h;干燥后的菊芋粉碎,过100目筛,置于阴凉干燥处备用;
2)制备芦荟皮粉:割取2年生新鲜库拉索芦荟,剔除有斑部分、分离芦荟皮和叶肉、将芦荟皮清洗干净,85℃烫漂5~8min,迅速冷却,沥干水分、切丝,单层平铺于冷冻盘,于冷冻干燥机中预冻至芦荟皮中心温度达-35℃后真空冷冻干燥,预冻时间为4h,干燥时冷肼温度-60℃,干燥时间为8h,真空度4Pa;冻干后粉碎,过100目筛,置于阴凉干燥处备用;
3)制备玫瑰花瓣粉:选取干燥平阴玫瑰花瓣,去除杂质,粉碎,置于阴凉干燥处备用;
4)混合、制软材:将步骤1)-3)制备的芦荟皮粉、菊芋粉、玫瑰花瓣粉与甘露糖醇、木糖醇、柠檬酸按所述重量比称重后混合均匀,缓慢加入湿润剂,充分搅拌制成软材;
5)造粒、干燥、整粒:将制好的软材放入摇摆式颗粒机进行造粒,湿颗粒放入55℃烘箱中,鼓风干燥2~2.5h,使其水分含量降至3%以下,干燥完毕后过16目筛整粒;
6)压片:称取整粒后的干颗粒中加入占总重0.8%~1.2%硬脂酸镁作为润滑剂,充分混匀;用单冲压片机将整粒后的颗粒进行压片;
7)灭菌:压好后的咀嚼片在紫外灯下照射20min,进行灭菌;
8)包装:将灭菌后的咀嚼片在无氧条件下单粒铝箔封膜包装。
所述湿润剂由70%食用乙醇与4.5%的甘油按3:1的体积比配成。
所述湿润剂的添加量为15~18ml/100g物料。
本发明所制备的复合咀嚼片集活性多糖、菊糖、膳食纤维、玫瑰挥发油、花色苷、黄酮、有机酸、三萜类化合物、芦荟苷、芦荟大黄素等有益功能因子于一体,营养丰富、气味芳香自然、色泽均匀、酸甜适口,不仅在产品形式上有所创新,而且所制产品具有预防肥胖、降低“三高”、消炎止痒、抗衰老等显著的美容养颜效果,在营养价值、美容效果、保健功能上,与单一的原料产品相比,均有显著的增强。既有利于我国大量的菊芋资源和废弃的芦荟皮资源得到合理应用,又能满足消费者特别是现代女性对美容养颜减肥食品的渴求,同时还能大幅度提高原料的加工附加值和资源的综合利用率。具有巨大的市场开发价值。
本发明的具体优点和积极效果还在于:
1. 本菊芋芦荟皮复合咀嚼片采用芦荟加工下脚料芦荟皮作为原料之一,提高了资源的综合利用率和加工附加值,降低了芦荟皮造成环境污染的几率,为芦荟皮的精深加工开辟了一条的新的途径。
2. 本菊芋芦荟皮复合咀嚼片中芦荟皮采用了真空冷冻干燥方式,最大程度的保留了芦荟大黄素、芦荟苷、芦荟多糖等活性物质的含量及其保健功能。
3. 菊芋预处理中的蒸煮过程有效促进了菊糖的水解,使得本复合咀嚼片中含有大量的可溶性膳食纤维、低聚果糖,具有减肥美容、润肠通便,促进肠道益生菌增值、防止结肠癌、调节血糖、预防糖尿病之功效;同时还有效避免了因菊糖粘度较大导致的易吸湿,不易加工等问题。
4. 本菊芋芦荟皮复合咀嚼片添加了适宜量的玫瑰花瓣粉,使得本产品增加了玫瑰原花青素、花色苷等活性物质,显著增强了其美容养颜功效,同时所含挥发油有效掩盖了芦荟皮的不良气味,赋予了产品清新自然的芳香。

实施例1
如图1所示的流程,菊芋(江苏大丰盐土大地农业科技有限公司)清洗后,95℃蒸煮20min,冷却后切为约0.5cm厚薄片,流水冷却,单层平铺于干燥盘,于60℃条件下鼓风干燥48h至含水量8%以下,然后将菊芋干片粉碎,过100目筛,置于阴凉干燥处备用;割取2年生库拉索芦荟(徐州华瑞芦荟制品有限公司),清洗干净后,不锈钢刀分离叶肉(芦荟胶冷冻备用),将芦荟皮洗净放入夹层锅85℃烫漂6min,取出后流水冷却,沥干水分后切丝,单层平铺于冷冻盘,预冻4h待温度待芦荟皮中心温度达到-35℃后冷冻干燥8h,干燥温度-60℃。将冻干后芦荟片粉碎后过100目筛,置于阴凉干燥处备用;优质平阴玫瑰花瓣(平阴县玫瑰研究所),去除杂质后粉碎,过100目筛,置于阴凉干燥处备用。
取菊芋粉45kg、芦荟皮粉12.5kg、玫瑰花瓣粉12 kg、甘露糖醇8kg、木糖醇15kg、柠檬酸1.2 kg等充分混匀加入,缓慢加入预先用70%食用乙醇与4.5%的甘油按1:3的体积比配成的湿润剂14.06L(15ml/100g干物料),充分搅拌制成软材料,放入摇摆式颗粒机造粒,制成的湿颗粒放入55℃烘箱中,鼓风烘干2h,使其水分含量达到3%以下。将烘干后的颗粒过15目筛,加入0.8kg硬脂酸镁,充分混匀后用单冲压片机将其进行压片,压好后的咀嚼片在紫外灯下照射20min,进行灭菌。灭菌后的咀嚼片在无氧条件下单粒铝箔封膜包装。
本实施例所制菊芋芦荟皮复合咀嚼片色泽淡红色,表面光滑、无麻点、无花斑、边缘整齐、硬度适中、清香浓郁、酸甜可口;平均片重1.80g,芦荟苷含量1.86mg/片,多糖含量0.69g/片,总黄酮含量27.70mg/片。
实施例2
如图1所示的流程,菊芋(江苏大丰盐土大地农业科技有限公司)清洗后,95℃蒸煮20min,冷却后切为约1cm厚薄片,流水冷却,单层平铺于干燥盘,于60℃条件下鼓风干燥48h至含水量8%以下,然后将菊芋干片粉碎,过100目筛,置于阴凉干燥处备用;割取2年生库拉索芦荟(徐州华瑞芦荟制品有限公司),清洗干净后,不锈钢刀分离叶肉(芦荟胶冷冻备用),将芦荟皮洗净放入夹层锅85℃烫漂5min,取出后流水冷却,沥干水分后切丝,单层平铺于冷冻盘,预冻4h待温度待芦荟皮中心温度达到-35℃后冷冻干燥8h,干燥温度-60℃。将冻干后芦荟片粉碎后过100目筛,置于阴凉干燥处备用;优质平阴玫瑰花瓣(平阴县玫瑰研究所),去除杂质后粉碎,过100目筛,置于阴凉干燥处备用。
取菊芋粉50kg、芦荟皮粉10kg、玫瑰花瓣粉12 kg、甘露糖醇8kg、木糖醇15kg、柠檬酸1.5 kg等充分混匀加入,缓慢加入预先用70%食用乙醇与4.5%的甘油按1:3的体积比配成的湿润剂14.48L(15ml/100g干物料),充分搅拌制成软材料,放入摇摆式颗粒机造粒,制成颗粒并在在55℃烘箱中,鼓风烘干2h,使其水分含量达到3%以下。将烘干后的颗粒过15目筛,加入1kg硬脂酸镁,充分混匀后用单冲压片机将其进行压片,压好后的咀嚼片在紫外灯下照射20min,进行灭菌。灭菌后的咀嚼片在无氧条件下单粒铝箔封膜包装。
本实施例所制菊芋芦荟皮复合咀嚼片色泽淡红色,表面光滑、无麻点、无花斑、边缘整齐、硬度适中、清香浓郁、酸甜可口;平均片重为1.80g,芦荟苷含量1.47mg/片,多糖含量0.71g/片,总黄酮含量27.2mg/片。
实施例3
如图1所示的流程,菊芋(江苏大丰盐土大地农业科技有限公司)清洗后,95℃蒸煮20min,冷却后切为约0.5cm厚薄片,流水冷却,单层平铺于干燥盘,于60℃条件下鼓风干燥24h至含水量8%以下,然后将菊芋干片粉碎,过100目筛,置于阴凉干燥处备用;割取2年生库拉索芦荟(徐州华瑞芦荟制品有限公司),清洗干净后,不锈钢刀分离叶肉(芦荟胶冷冻备用),将芦荟皮洗净放入夹层锅85℃烫漂8min,取出后流水冷却,沥干水分后切丝,单层平铺于冷冻盘,预冻4h待温度待芦荟皮中心温度达到-35℃后冷冻干燥8h,干燥温度-60℃。将冻干后芦荟片粉碎后过100目筛,置于阴凉干燥处备用;优质平阴玫瑰花瓣(平阴县玫瑰研究所),去除杂质后粉碎,过100目筛,置于阴凉干燥处备用。
取菊芋粉55kg、芦荟皮粉8.5kg、玫瑰花瓣粉12 kg、甘露糖醇8kg、木糖醇15kg、柠檬酸1.5 kg等充分混匀加入,缓慢加入预先用70%食用乙醇与4.5%的甘油按1:3的体积比配成的湿润剂18.00L(18ml/100g干物料),充分搅拌制成软材料,放入摇摆式颗粒机造粒,制成颗粒并在在55℃烘箱中,鼓风烘干2.5h,使其水分含量达到3%以下。将烘干后的颗粒过15目筛,加入1.2kg硬脂酸镁,充分混匀后用单冲压片机将其进行压片,压好后的咀嚼片在紫外灯下照射20min,进行灭菌。灭菌后的咀嚼片在无氧条件下单粒铝箔封膜包装。
本实施例所制菊芋芦荟皮复合咀嚼片色泽淡红色,表面光滑、无麻点、无花斑、边缘整齐、硬度适中、清香浓郁、酸甜可口;平均片重为1.80g,芦荟苷含量1.18mg/片,多糖含量0.74g/片,总黄酮含量26.95mg/片。

1.一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于:所述菊芋芦荟皮复合咀嚼片包含如下原料:菊芋粉、芦荟皮粉、玫瑰花瓣粉、甘露糖醇、木糖醇、柠檬酸和硬脂酸镁,质量比为:45~55: 8.5~12.5: 12: 8: 15: 1.2~1.5:0.8~1.2;其制备方法为:
1)菊芋粉制备:挑选新鲜、无病变霉变的菊芋块茎,流水冲洗、预处理后平铺于干燥盘,放入干燥箱干燥至含水量8%以下,干燥温度60℃,干燥时间为48h;干燥后的菊芋粉碎,过100目筛,置于阴凉干燥处备用;
2)芦荟皮粉制备:割取2年生新鲜库拉索芦荟,剔除有斑部分、分离芦荟皮和叶肉、将芦荟皮清洗干净,85℃烫漂5~8min,迅速冷却,沥干水分、切丝,单层平铺于冷冻盘,真空冷冻干燥,粉碎,过100目筛,置于阴凉干燥处备用;
3)玫瑰花瓣粉制备:选取干燥平阴玫瑰花瓣,去除杂质,粉碎,置于阴凉干燥处备用;
4)混合、制软材:将菊芋粉、芦荟皮粉、玫瑰花瓣粉、甘露糖醇、木糖醇、柠檬酸按比例称重后混合均匀,缓慢加入预先配好的湿润剂,充分搅拌制成软材;
5)造粒、干燥、整粒:将制好的软材放入摇摆式颗粒机进行造粒,湿颗粒放入55℃烘箱中,鼓风干燥2~2.5h,使其水分含量降至3%以下,干燥完毕后过16目筛整粒;
6)压片:称取整粒后的干颗粒,加入一定量的硬脂酸镁作为润滑剂,充分混匀;用单冲压片机将整粒后的颗粒进行压片;
7)灭菌:压好后的咀嚼片在紫外灯下照射20min,进行灭菌;
8)包装:将灭菌后的咀嚼片在无氧条件下单粒铝箔封膜包装。
2. 根据权利要求1所述的一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于:该咀嚼片平均片重1.80g;芦荟苷含量达1.18~1.86mg/片;多糖含量达0.69~0.74g/片;总黄酮含量达26.95~27.70mg/片。
3.根据权利要求1所述的一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于:所述的步骤1)中的预处理是指:将清洗干净的菊芋置于蒸锅中95℃蒸煮20min,流水冷却、再切为0.5cm ~1cm厚的薄片。
4.根据权利要求1所述的一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于:所述的步骤2)中芦荟皮粉真空冷冻干燥具体为:首先将芦荟皮预冻至物料中心温度达-35℃,预冻时间为4h,然后进行真空冷冻干燥,干燥时冷肼温度-60℃,干燥时间为8h,真空度4Pa。
5.根据权利要求1所述的一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于:所述步骤4)所述的湿润剂为甘油乙醇混合物。
6.根据权利要求5所述的一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于:所述步骤4)所述的湿润剂由70%食用乙醇与4.5%的甘油按3:1的体积比配成。
7.根据权利要求6所述的一种美容养颜菊芋芦荟皮复合咀嚼片,其特征在于:所述湿润剂的添加量为15~18ml/100g物料。
