背景技术
随着生活节奏的加快及生活水平的提高,人们已经不满足于单一含糖无保健功能的饮品,把药食两用的天然产物通过合理的工艺制成物美价廉、又具有保健功能的饮料是人们所期望的,饮用天然植物饮料既符合中国人的习惯,又能够对某些疾病有效防范。
发明内容
本发明的目的是提供一种新的植物饮料及其制备方法。
为解决上述技术问题,本发明采用的技术方案如下:
一种植物饮料,所述饮料由下列重量份的原料制备而成:怀菊花0.1~40份,罗汉果0.1~50份,甜叶菊0.01~20份,山楂0.1~80份,甜味剂0~10份,纯净水100~5000份。
怀菊花是焦作特有的药食两用中药材,含有挥发油、菊甙、胆碱、水苏碱、维生素、氨基酸和微量元素等,具有疏风、清热、明目、解毒的功效。甜叶菊是八十年代初引进种植的新型甜味植物,叶中含有丰富的甜叶菊苷,其甜度是蔗糖甜度的200-300倍,且具有热量低(含热量只有蔗糖的1/300)、无副作用的特点,经常食用可预防高血压、糖尿病、肥胖症、心脏病、龋齿等病症,是一种可替代蔗糖的甜味剂。罗汉果所含罗汉果苷的甜度是蔗糖甜度的300倍,具有降血糖的作用;还含有维生素、氨基酸、黄酮等;中医药学认为,罗汉果味甘,性凉;归肺、脾经,具有清肺利咽,化痰止咳,润肠通便的功效。山楂又叫“山里红”、“胭脂果”,果实中含多种维生素、有机酸、果胶、黄酮类和微量元素等,具有很高的营养和药用价值;有消食健胃,行气散瘀、平喘化痰、软化血管、降脂减肥、降压强心、抗氧化、防衰老、抗癌的作用。目前公开的以怀菊花或罗汉果或甜叶菊为主要原材料制作植物饮料的技术方案,有的是单一配方,有的是和其他原材料配伍,而同时以怀菊花、罗汉果、甜叶菊和山楂进行配伍制作植物饮料的技术方案还未见报道。用这四种原材料进行配伍,具有清热明目、润肺止咳、润肠通便、健脾消积、降血脂、降血糖等功效,可起到辅助治疗糖尿病、咽炎、冠心病、高血压、高脂血症、继发性肥胖症,调节机能平衡和内分秘失调。
本发明还提供了一种所述植物饮料的制备方法,将罗汉果和山楂用水浸泡并过滤,滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊,压榨提取液精制处理后得到饮料原液;将饮料原液进行灭菌后灌装或者灌装后灭菌获得成品,或者将饮料原液用水稀释、加入甜味剂后再进行灭菌后灌装或者灌装后灭菌获得成品。
优选的,将罗汉果和山楂用水浸泡并过滤是指先将罗汉果壳瓤分离,罗汉果壳粉碎至5-50目后再与罗汉果瓤、山楂一起用40-90℃纯净水浸泡0.2-2.0小时并过滤。
优选的,重复罗汉果和山楂用纯净水浸泡并过滤,滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊的操作2-5遍。

本发明所述植物饮料的制备方法,具体步骤如下:
步骤一:选择怀菊花、罗汉果、甜叶菊和山楂,进行除杂、清洗、称量;
步骤二:将罗汉果破碎,壳瓤分开;将罗汉果壳粉碎,粒径在5-50目之间;可将罗汉果进行机械或人工破碎,壳瓤分开;
步骤三:将粉碎的罗汉果壳与罗汉果瓤、山楂一起用40-90℃纯净水浸泡0.2-2.0小时,过滤;
步骤四:将步骤三所得滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊;
步骤五:将步骤三和步骤四重复操作2-5遍;
步骤六:将步骤五所得压榨提取液精制处理后得到饮料原液;压榨提取液精制处理是指将压榨提取液合并过滤、沉降、离心分离。
接下来可进行步骤七也可直接进行步骤八。
步骤七:对饮料原液进行过滤、灭菌后灌装或灌装后灭菌,获得成品。
步骤八:将饮料原液用水稀释、加入甜味剂后过滤,再进行灭菌后灌装或灌装后灭菌获得成品。甜味剂为木糖醇或白砂糖。

本发明的目的在于遵循传统中医养生理论并结合现代科学技术,提供一种植物饮料及其制备方法。本发明利用怀菊花、罗汉果、甜叶菊和山楂进行配伍,采用浸提罗汉果、山楂和压榨提取怀菊花、甜叶菊相结合的取汁工艺,该工艺与以往使用的植物尤其是花类热浸提工艺相比,具有提取效果好,所用时间短,节能降耗等优点,同时配合低温沉降和高速离心分离相结合的方法,获得的饮料清澈呈棕红色、无沉淀、口感清爽,酸甜适口,具有罗汉果、怀菊花、甜叶菊和山楂固有的气味和滋味,同时,富含氨基酸、维生素、挥发油等多种生物活性物质和人体必需的微量元素;用这四种原材料进行配伍,具有清热明目、润肺止咳、润肠通便、健脾消积、降血脂、降血糖等功效,可起到辅助治疗糖尿病、咽炎、冠心病、高血压、高脂血症、继发性肥胖症,调节机能平衡和内分秘失调,是一种天然养生保健饮料。
本发明与现有技术相比,具有如下优点:
本发明饮料配伍合理,具有保健养生功效。制备工艺针对配方进行优化,获得的植物饮料有效成分含量高,饮料清澈、无沉淀、口感清爽,酸甜适口。
具体实施方式
以下以具体实施例来说明本发明的技术方案,但本发明的保护范围不限于此:
实施例1
一种植物饮料,原料配比如下:
怀菊花10份,罗汉果15份,甜叶菊4份,山楂25份,木糖醇4份,纯净水740份。
制备方法步骤如下:
1)选择怀菊花、罗汉果、甜叶菊和山楂,进行除杂、清洗、称量;
2)将罗汉果破碎,壳瓤分开;
3)将罗汉果壳粉碎,粒径在5-50目之间,与罗汉果瓤、山楂一起用180份60℃纯净水浸泡0.5小时,过滤;
4)将步骤3)所得滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊;
5)将步骤3)和4)重复操作3遍;
6)将步骤5)所得溶液进行合并过滤、沉降、离心分离得饮料原液;其中过滤为用50-300目转筒筛网过滤机对提取液进行过滤;沉降为提取液在沉降罐中保持3-5℃存放3天;离心分离时采用高速离心机,分离因数在21000;
7)取4%的饮料原液加入到200份纯净水中,将甜味剂缓慢加入到经稀释后的饮料原液中,搅拌均匀,过滤,再进行灭菌后灌装或者灌装后杀菌,获得成品;
8)对成品进行质量检测。
成品饮料清澈呈棕红色、无沉淀、具有罗汉果、怀菊花、甜叶菊和山楂固有的气味和滋味,无异味;可溶性固形物为2.1%、PH值为4.1、食品添加剂、重金属含量符合国家标准;菌落总数为1CFU/ml、大肠菌群呈阴性、致病菌无检出。
实施例2
一种植物饮料,原料配比如下:
怀菊花1.2份,罗汉果1.6份,甜叶菊0.3份,山楂2.8份,甜味剂0份,纯净水400份。
制备方法步骤如下:
1)选择怀菊花、罗汉果、甜叶菊和山楂,进行除杂、清洗、称量;
2)将罗汉果破碎,壳瓤分开;
3)将罗汉果壳粉碎,粒径在5-50目之间,与罗汉果瓤、山楂一起用100份50℃纯净水浸泡1.5小时,过滤;
4)将步骤3)所得滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊;
5)将步骤3)和4)重复操作4遍;
6)将步骤5)所得溶液进行合并过滤、沉降、离心分离得饮料原液;其中过滤为用50-300目转筒筛网过滤机对提取液进行过滤;沉降为提取液在沉降罐中保持3-5℃存放2天;离心分离时采用高速离心机,分离因数在20000;
7)对饮料原液进行过滤;再进行灭菌后灌装或者灌装后杀菌,获得成品;
9)对成品进行质量检测。
成品饮料清澈呈棕红色、无沉淀、具有罗汉果、怀菊花、甜叶菊和山楂固有的气味和滋味,无异味;可溶性固形物为0.53%、PH值为4.3、重金属含量符合国家标准;菌落总数为0CFU/ml、大肠菌群呈阴性、致病菌无检出。
实施例3
一种植物饮料,原料配比如下:
怀菊花25份,罗汉果30份,甜叶菊8份,山楂50份,白砂糖5份,纯净水1900份。
制备方法步骤如下:
1)选择怀菊花、罗汉果、甜叶菊和山楂,进行除杂、清洗、称量;
2)将罗汉果破碎,壳瓤分开;
3)将罗汉果壳粉碎,粒径在5-50目之间,与罗汉果瓤、山楂一起用340份80℃纯净水浸泡0.2小时,过滤;
4)将步骤3)所得滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊;
5)将步骤3)和4)重复操作5遍;
6)将步骤5)所得溶液进行合并、过滤、沉降、离心分离得饮料原液;其中过滤为用50-300目转筒筛网过滤机对提取液进行过滤;沉降为提取液在沉降罐中保持3-5℃存放4天;离心分离时采用高速离心机,分离因数在23000;
7)取2%的饮料原液加入到200份纯净水中,将甜味剂缓慢加入到经稀释后的饮料原液中,搅拌均匀,过滤,再进行灭菌后灌装或者灌装后杀菌,获得成品;
8)对成品进行质量检测。
成品饮料清澈呈棕红色、无沉淀、具有罗汉果、怀菊花、甜叶菊和山楂固有的气味和滋味,无异味;可溶性固形物为2.53%、PH值为4.2、食品添加剂和重金属含量符合国家标准;菌落总数为2CFU/ml、大肠菌群呈阴性、致病菌无检出。
对比试验:
为了更直观说明本发明工艺的优点,进行如下对比实验:
工艺1:原料:菊花1.5g,罗汉果1.5g,山楂2g,甜叶菊0.4g;将原料用80℃纯净水浸提1小时,过滤,定容至500ml。检测,其可溶性固形物含量为1.68g,pH值为4.5。
工艺2:原料同工艺1。将罗汉果和山楂用60℃纯净水浸提0.5小时,滤液用于压榨提取菊花和甜叶菊,过滤,定容至500ml。检测,其可溶性固形物含量为2.12g,pH值为4.16。
比较可知,虽然工艺2的水温较低,提取时间减少,但其可溶性固形物含量增加,说明工艺2与工艺1相比,提取效果好,所用时间短,节能降耗。
上述对比试验中,由于采用的原料量较少,故罗汉果只采用了果壳部分,没用瓤部分,但不影响分析结果。罗汉果在使用之前进行预先破碎。

Claims (8)
1. 植物饮料的制备方法,其特征在于,所述饮料由下列重量份的原料制备而成:怀菊花0.1~40份,罗汉果0.1~50份,甜叶菊0.01~20份,山楂0.1~80份,甜味剂0~10份,纯净水100~5000份;
将罗汉果和山楂用纯净水浸泡并过滤,滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊,压榨提取液精制处理后得到饮料原液;将饮料原液进行灭菌后灌装或者灌装后灭菌获得成品,或者将饮料原液用纯净水稀释、加入甜味剂后再进行灭菌后灌装或者灌装后灭菌获得成品。
2. 如权利要求1所述的植物饮料的制备方法,其特征在于,将罗汉果和山楂用纯净水浸泡并过滤是指先将罗汉果壳瓤分离,罗汉果壳粉碎至5-50目后再与罗汉果瓤、山楂一起用40-90℃纯净水浸泡0.2-2.0小时并过滤。
3.如权利要求1或2所述的植物饮料的制备方法,其特征在于,重复罗汉果和山楂用纯净水浸泡并过滤,滤液送入螺旋式压榨提取机中用于压榨提取怀菊花和甜叶菊的操作2-5遍。
4.如权利要求3所述的植物饮料的制备方法,其特征在于,压榨提取液精制处理是指将压榨提取液合并过滤、沉降、离心分离。
5.如权利要求4所述的植物饮料的制备方法,其特征在于,所述过滤是指将压榨提取液用50-300目转筒筛网过滤机过滤。
6.如权利要求4所述的植物饮料的制备方法,其特征在于,所述沉降是指过滤后的提取液在沉降罐中保持3-5℃存放1-4天。
7.如权利要求4所述的植物饮料的制备方法,其特征在于,所述离心分离采用高速离心机进行,分离因数在19000-23000之间。
8.权利要求1-7任一制备方法获得的植物饮料。
