Abstract
本发明属于食品加工技术领域。具体公开了一种明日叶咀嚼片及其制备方法。明日叶咀嚼片是以明日叶粉、L-阿拉伯糖为主要原料经混合,制粒,烘干,压片,包装而成;其原料重量比是明日叶粉70-85%,L-阿拉伯糖15-30%。本发明的一种明日叶咀嚼片,最大限度地保持了明日叶原有的营养成分和保健功效,片剂咀嚼香甜可口,为明日叶的食用增添了新的产品。本发明产品制备工艺简单,生产成本低,利于工业化生产。

本发明属于食品加工技术领域,具体涉及一种明日叶咀嚼片及其制备方法。
背景技术
明日叶(Angelica keiskei koidz),又名明日草、长寿草、还阳草、天赐草、海峰人参等,是一种繖形科(Umbelliferae)、当归属(Angelica)多年生草本植物。是食药兼用的珍贵植物,其嫩叶可作蔬菜用,全草可供药用,原产地为日本八丈岛,故又名八丈草。现韩国、我国台湾、贵州、广东、山东青岛、威海等地区均已形成规模性种植,为国内新兴的一种时尚健康蔬菜和医疗保健用品的有益原料。近年来国内外科学家对明日叶的研究方兴未艾,经过分析发现,明日叶含有维持人体健康、防止老化所必需的各种氨基酸、维生素、矿物质、微量元素等,营养极为丰富,研究还表明,明日叶根茎中含有丰富的天然黄酮(flavonoid)和香豆素(coumarin),其茎、叶中含有多种维生素、胡萝卜素、16种氨基酸、蛋白质以及明日叶中特有的查尔酮、香豆素类等成份,无疑人们将这一珍贵的天然绿色蔬菜冠以“神奇植物”之美称。具研究资料显示,明日叶作为健康食品用,嫩茎叶可供蔬菜,一般以炒食、川烫、煮食,制取茶汁、制作茶包等方法食用。其药用全草,有清热,利尿,强壮,催乳之效,对高血压、动脉硬化症、糖尿病、肝病、感冒、气喘、胃肠道疾病、风湿病、失眠,肺癌、胃癌等均有作用。据日本大阪药科大学马场贵美江教授等研究发现,明日草具有抗衰老、抗溃疡、抗血栓、抗癌、降血压、调节血脂(降低低密度脂蛋白胆固醇、升高高密度脂蛋白胆固醇)、降血糖、提高人体免疫力等作用。如今,在日本、韩国、台湾等地,明日草已经成为“健康、活力、长寿”的全能食物。明日叶由于受地域、气候以及种植条件的限制,这一优质的健康蔬菜还未在国内得到普及,使得明日叶的食用价值和有益功效难以普及、使得明日叶的食用价值和有益功效难以惠及更多民众,为了能让人们得益于食用明日叶的有益功效,制得一种食用的咀嚼片产品是一种较为理想的方便产品。
中国专利(CN103005431A)公开了一种无籽刺梨-明日叶复合咀嚼片及其制备方法,该发明是由无籽刺梨、明日叶、微晶纤维素、低聚异麦芽糖、乳糖、甜菊糖、赤藓糖醇、甘露糖醇、木糖醇、柠檬酸、硬脂酸之类 、薄膜包衣材料等成分,经原料制备、湿法造粒、流化床干燥、整粒、压片、包衣、杀菌等工艺制备而成,可以看出该材料技术方案工艺复杂、制作成本高,不适宜更多的消费者食用。提供一种制作工艺简单,突出明日叶特色,且经济、食用方便的一种明日叶咀嚼片是本发明的所在。
发明内容
本发明的目的是提供一种明日叶咀嚼片。
本发明的目的还在于提供一种明日叶咀嚼片的制备方法。
本发明的目的是通过以下技术方案实现的:
一种明日叶咀嚼片,其特征是以明日叶粉、L-阿拉伯糖为主要原料,经混合,制粒,烘干,压片,包装而成;
所述原料按以下重量百分比进行配比:
明日叶粉70-85%,L-阿拉伯糖15-30%。
其中所述明日叶粉可采用超微粉碎设备粉碎成800-1200目的超微粉;也可以采用普通粉碎设备粉碎成90-110目的细粉。
为了强化和改善明日叶咀嚼片的营养功能和口感,还可以加入明日叶粉、L-阿拉伯糖总重量0.25-2.0%的添加剂。
其中所述的添加剂主要有营养强化剂(如活性钙、牛磺酸、β-胡萝卜素、泛酸钙、叶酸、烟酰胺、维生素E、硒蛋白、柠檬酸锌等)、酸度调节剂(如柠檬酸、酒石酸等)、抗氧化剂(如抗坏血酸、茶多酚等)、调味剂(如香精等)。
上所述的添加剂均可由市场采购符合国家相关食用标准的原料。
本发明明日叶咀嚼片的制备方法,其特征是将明日叶嫩叶经除杂、清洗、杀青、干燥、粉碎,然后与L-阿拉伯糖混合制粒、烘干,采用压片设备压制成片,包装即得。
其中所述的明日叶嫩叶为生长叶面直径不超过5厘米的嫩叶;明日叶嫩叶的杀青是采用在含有重量比0.5%食盐的沸水中漂烫杀青2-4分钟。
所述干燥为采用热风烘干机,于55-65℃低温热风干燥至含水量小于3%;其中粉碎可采用超微粉碎设备粉碎成800-1200目的超微粉,其中粉碎也可以采用普通粉碎设备粉碎成90-110目的细粉。
所述的烘干,为采用烘干机,于85-95℃烘干至颗粒含水量在4-5%。
为了使成品利于储存,明日叶咀嚼片的包装采用真空包装或充氮包装。
L-阿拉伯糖
L-阿拉伯糖是从玉米芯梗、果皮半纤维素中提取、分离而得到的五碳原子糖,又被称为阿戊糖,其甜度为蔗糖的一半,L-阿拉伯糖本身很难被消化道吸收,即使长期食用也不会对身体带来不利影响,对人体没有毒性,在体内得不到利用的部分可从尿中排出抑制蔗糖的代谢与吸收,因此有辅助的降糖作用,L-阿拉伯糖作为一种低热量的糖,能抑制因摄入蔗糖而导致的血糖升高,对预防并治疗与高血糖相关的疾病起到辅助降糖的作用;能通过有效的抑制高脂高糖饮食中的蔗糖的吸收而达到降低血糖的作用;能够降低及稳定血糖值,从而起到保护及修复胰腺,预防糖尿病的作用。L-阿拉伯糖有改变骨骼肌纤维成分的功效,通过支配糖酵解到糖氧化来影响腹部脂肪组织的增长,这种肌纤维比例的改变有改善Ⅱ型糖尿病和肥胖的作用。L-阿拉伯糖最显著的作用是抑制人体小肠内蔗糖酶活性,从而调节人体对蔗糖的过量吸收,同时它还能在肠道中激活、增殖有益菌,改善代谢功能,能够调节血糖、血脂和减少脂肪堆积,使得它在减肥、控制糖尿病等方面的应用前景看好,此外还有梳理骨骼肌,口腔杀菌等功效,L-阿拉伯糖解决了既保持甜味又绿色保健的健康的矛盾,L-阿拉伯糖,具有降糖保肾、润肠通便、排毒养颜、美容护肤,调节血糖、祛脂减肥等功效,被国外作为原料广泛用于“三高一超”的特定人群。2008年5月,L-阿拉伯糖被国家卫生部批准为“新资源食品”。
本发明的有益效果
1、本发明的一种明日叶咀嚼片,最大限度地保持了明日叶原有的营养成分和保健功效,片剂咀嚼香甜适口,是一种老少皆宜的营养性食品,为明日叶的食用增添了新的产品。
2、本发明中明日叶的杀青处理可有效地去除明日叶的生菜味,使得产品具有明日叶的清香,同时杀青处理可有效地杀酶,防止氧化变味,添加剂的加入可更有效地改善和增强明日叶咀嚼片的风味和稳定性,同时还强化了产品的的营养功能,使得产品更具其营养性,发挥更大的保健功效。
3、明日叶采用微粉碎技术,制得超微粉,其表面张力增大,表面分布及流动性增强,增强了与其他成分的亲合力易于结合,同时由于微粉的表面分布性能较好,更有利于胃肠道的分布和吸收,增强产品的应用效果。

5、本发明产品制备工艺简单,生产成本低,利于工业化生产,能够较好的产业化发展,推动明日叶这一有益于人们健康的植物的种植、加工,使得更多的民众得益于明日叶的有益功效。
具体实施方式
实施例1
选择新采摘的新鲜且为生长叶面直径不超过5厘米的嫩叶,除去烂叶、枯萎叶及老叶等杂质后用水清洗干净后,置入含有重量比为0.5%食盐的沸水中漂烫杀青2-4分钟,然后再捞入纯净水中漂洗3次,捞出,沥干水分,用热风烘干机在55-65℃的条件下低温热风干燥至含水量小于3%,用超微粉碎设备粉碎成800-1200目的超微粉,得明日叶粉。
实施例2
选择新采摘的新鲜且为生长叶面直径不超过5厘米的嫩叶,除去烂叶、枯萎叶及老叶等杂质后用水清洗干净后,置入含有重量比为0.5%食盐的沸水中漂烫杀青2-4分钟,然后再捞入纯净水中漂洗3次,捞出,沥干水分,用热风烘干机在55-65℃的条件下低温热风干燥至含水量小于3%,用普通粉碎设备粉碎成90-110目的细粉,得明日叶粉。

称取实施例1得到的明日叶粉7公斤与L-阿拉伯糖3公斤充分混合均匀,同时还加入柠檬酸混合均匀(其柠檬酸的用量按食品制作的常规用量计),再按片剂的常规方法制成颗粒,然后置入烘干机中,于85-95℃烘干至颗粒含水量在4-5%,采用压片设备压制成10000片,然后采用真空包装或充氮包装,即得明日叶咀嚼片成品。
实施例4
称取实施例1得到的明日叶粉8.5公斤与L-阿拉伯糖1.5公斤充分混合均匀,同时还加入活性钙、泛酸钙、烟酰胺、抗坏血酸、茶多酚、食用香精混合均匀(其活性钙、泛酸钙、烟酰胺、抗坏血酸、茶多酚、食用香精的用量按食品制作常规用量计),再按片剂的常规方法制成颗粒,然后置入烘干机中,于85-95℃烘干至颗粒含水量在4-5%,采用压片设备压制成5000片,然后采用真空包装或充氮包装,即得明日叶咀嚼片成品。
实施例5
称取实施例2得到的明日叶粉8公斤与L-阿拉伯糖2公斤充分混合均匀,同时还加入柠檬酸、牛磺酸、维生素E、茶多酚、食用香精混合均匀(其柠檬酸、牛磺酸、维生素E、茶多酚、食用香精的用量按食品制作常规用量计),再按片剂的常规方法制成颗粒,然后置入烘干机中,于85-95℃烘干至颗粒含水量在4-5%,采用压片设备压制成10000片,然后采用真空包装或充氮包装,即得明日叶咀嚼片成品。
实施例6
称取实施例1得到的明日叶粉7.5公斤与L-阿拉伯糖2.5公斤充分混合均匀,同时还加入维生素E、硒蛋白混合均匀(其维生素E、硒蛋白的用量按食品制作常规用量计),在制粒机上制成颗粒,然后置入烘干机中,于85-95℃烘干至颗粒含水量在4-5%,采用压片设备压制成10000片,然后采用真空包装或充氮包装,即得明日叶咀嚼片成品。
实施例7
称取实施例1得到的明日叶粉8.5公斤与L-阿拉伯糖1.5公斤充分混合均匀,同时还加入β-胡萝卜素、泛酸钙、叶酸、烟酰胺、维生素E、柠檬酸锌、维生素C混合均匀(其β-胡萝卜素、泛酸钙、叶酸、烟酰胺、维生素E、柠檬酸锌、维生素C的用量按食品制作常规用量计),在制粒机上制成颗粒,然后置入烘干机中,于85-95℃烘干至颗粒含水量在4-5%,采用压片设备压制成10000片,然后采用真空包装或充氮包装,即得明日叶咀嚼片成品。

1.一种明日叶咀嚼片,其特征是以明日叶粉、L-阿拉伯糖为主要原料,经混合,制粒,烘干,压片,包装而成;
所述原料按以下重量百分比进行配比:明日叶粉70-85%,L-阿拉伯糖15-30%。
2.如权利要求1所述的明日叶咀嚼片,其特征在于:所述的明日叶粉为800-1200目的超微粉。
3.如权利要求1所述的明日叶咀嚼片,其特征在于:所述的明日叶粉为90-110目的细粉。
4.如权利要求1所述的明日叶咀嚼片,其特征在于:原料中包括明日叶粉、L-阿拉伯糖总重量0.25-2.0%的添加剂。
5.如权利要求4所述的明日叶咀嚼片,其特征在于,添加剂为营养强化剂、酸度调节剂、抗氧化剂、香料调味剂。
6.根据权利要求5所述的明日叶咀嚼片,其特征在于,营养强化剂是活性钙、牛磺酸、β-胡萝卜素、泛酸钙、叶酸、烟酰胺、维生素E、硒蛋白、柠檬酸锌,酸度调节剂是柠檬酸、酒石酸,抗氧化剂是抗坏血酸、茶多酚,香料调味剂是香精中的一种或两种以及以上的多种组合。
7.一种如权利要求1所述的明日叶咀嚼片的制备方法,其特征是将明日叶嫩叶经除杂,清洗,杀青,干燥,粉碎,然后与L-阿拉伯糖混合制粒,烘干,采用压片设备压制成片,包装即得。
8.根据权利要求7所述的方法,其特征在于:所述的明日叶为生长叶面直径不超过5厘米的嫩叶。
9.根据权利要求7所述的方法,其特征在于:所述的杀青,是在含有重量比为0.5%食盐的沸水中漂烫杀青2-4分钟。
10.根据权利要求7所述的方法,其特征在于:所述干燥为采用热风烘干机,于55-65℃低温热风干燥至含水量小于3%。
11.根据权利要求7所述的方法,其特征在于:所述的烘干为采用烘干机于85-95℃烘干至颗粒含水量在4-5%。
