本发明属于食品加工技术领域,涉及一种美容膳食紫甘薯粉条及其制备方法。
背景技术
粉条是一种制作简单,食用方便,营养丰富,即可主食又可快餐的健康保健食品。粉条用淀粉加水熟化之后,挤压制成条状(或窄或宽,或扁或因)或小片状食品。随着生活水平的提高,人们不再满足于粉条的简单食用功能(充饥、摄取能量物质),而希望粉条这一传统食品能够承载更多的营养保健功能。目前市场上粉丝、粉条品种繁多,如绿豆粉丝、豌豆粉丝、蚕豆粉丝、魔芋粉丝。更多的是淀粉制的粉丝如:红薯粉丝,甘薯粉丝、土豆粉丝等。粉丝有粗、细、圆、扁及片状等多种,其主要用料有豆类、薯类等。
如本申请人的专利,中国专利:专利申请号201210227701,公告号CN102697002U,公告日2012.10.03,该发明一种紫甘薯淮山粉条、粉丝及其制备方法,原料组成和重量份数:紫薯全粉43-48 份、淮山全粉2-7 份、水38-42 份。其制备经泪粉、匀浆、熟化、成形、冷却、干燥、切断、计量和包装工序,匀浆转速30-70 转/分,熟化夹套温度80-105 0C,成形螺杆速度10-30转/分,冷却采用冷却床风冷,干燥为循环热风温度30-60°C。
紫薯(Solanum tuberdsm),又称紫心甘薯、紫肉甘薯、黑薯,为番薯属植物。薯肉呈紫色至深紫色。它除了具有普通红薯的淀粉、蛋白质、粘多糖和胶原等营养成分外,还富含、晒元素和紫甘薯色素,紫甘薯色素又称花青素(anthocyanins) 。花青素对100 多种疾病有预防和治疗作用,被誉为继水、蛋白质、脂肪、碳水化合物、维生素、矿物质之后的第七大必需营养素。花青素是目前科学界发现的防治疾病、维护人类健康最直接、最有效、最安全的自由基清除剂,其清除自由基的能力是维生素C 的20 倍、维生素E 的50 倍。紫红薯将成为花青素的主要原料之一。紫薯在国际、国内市场上十分走俏,发展前景非常广阔。紫薯中含有丰富的蛋白质,18 种易被人体消化和吸收的氢基酸,维生素C 、B 、A 等8 种维生素和磷、铁等10 多种天然矿物质元素。其中铁和晒含量丰富。而晒和铁是人体抗疲劳、抗衰老、补血的必要元素,特别是晒被称为"抗癌大王",易被人体吸收,可留在血清中,修补心肌,增强机体免疫力,清除体内自由基,抑制癌细胞中DNA 的合成和癌细胞的分裂与生长,预防胃癌、肝癌等癌病的发生。
紫薯富含纤维素,可增加粪便体积,促进肠胃蠕动,清理肠腔内滞留的粘液、积气和腐败物,排出粪便中的有毒物质和致癌物质,保持大使畅通,改善消化道环境,防止胃肠道疾病的发生。
紫薯富含晒和花青素。晒是抗癌物质,而花青素是一种有机活性抗氧化物,能够抗癌,防老化。
紫薯富含粘多糖和胶原物质,粘液多糖能提高人体的免疫功能,增强抗病能力,并且保持动脉血管的弹性,防止肝、肾的结缔组织萎缩,预防心脏病、肾脏病、高血压、神经病、风湿病和关节炎等胶原病的发生。人体的精子和卵子等遗传因子的核酸正是粘液物质,可见甘薯的粘多糖和胶原等物质正是生命的基本物质。人体从口腔到胃肠的消化系统,和从鼻腔到气管,肺叶的呼吸系统,以及泌尿生殖系统,其表面皆由充满粘液的粘膜所覆盖,一旦粘液减少,就容易引起各器官的炎症和癌变。对于生命起这样重要作用的粘液多糖物质,是米、面、鸡、鸭、鱼、肉所无法供给的,而紫薯却十分丰富。
花青素类色素广泛存在于紫甘薯、葡萄、血橙、红球甘蓝、蓝营、茄子皮、樱桃、红橙、红营、草营、桑蓄、山植皮、紫苏、黑(红)米、牵牛花等植物的组织中。花青素为人体带来多种益处。从根本上讲,花青素是一种强有力的抗氧化剂,它能够保护人体免受一种叫做自由基的有害物质的损伤。花青素还能够增强血管弹性,改善循环系统和增进皮肤的光滑度,抑制炎症和过敏,改善关节的柔韧性。
栗子(chestnut),别名:板栗、大栗、栗果、毛栗、棋子、栗楔,毛栗子,封栗(粤语称呼),性温,味甘平;入脾、胃、肾经。栗子中不仅含有大量淀粉,而且含有丰富的蛋白质、脂肪、B族维生素等多种营养成分,热量也很高,栗子的维生素B1.B2含量丰富,维生素B2的含量至少是大米的4倍,每100克还含有24毫克维生素C,这是粮食所不能比拟的。人们恐怕很难想到,鲜板栗所含的维生素C比公认含维生素C丰富的西红柿还要多,更是苹果的十多倍!栗子所含的矿物质也很全面,有钾、镁、铁、锌、锰等,虽然达不到榛子、瓜子那么高的含量,但仍然比苹果、梨等普通水果高得多,尤其是含钾突出,比号称富含钾的苹果还高4倍。
祖国医学认为,栗子味甘性温,无毒,有“益气补脾、厚肠胃、补肾强筋,活血止血”的作用。生食或熟食栗子都有治疗腰腿软弱无力、小便频数、反胃、便血、慢性淋巴结炎和颈淋巴结核以及因脾胃虚寒引起的慢性腹泻或因肾虚引起的久婚不育等疾病。有的中医还用栗子壳与夏枯草、丹参复配治疗急性颈淋巴结炎和甲状腺肿大。它对人体的滋补功能,可与人参、黄芪、当归等媲美。栗子性味甘温,入脾、胃、肾三经,有养胃、健脾、补肾、壮腰、强筋、活血、止血、消肿等功效。适用于肾虚所致的腰膝酸软、腰脚不遂、小便多和脾胃虚寒引起的慢性腹泻及外伤骨折、淤血肿痛、皮肤生疮、筋骨痛等症。
核桃(Juglans regia)别称胡桃、英国胡桃、波斯胡桃,核桃在国外,人称“大力士食品”、“营养丰富的坚果”、“益智果”;在国内享有“万岁子”、“长寿果”、“养人之宝”的美称。味甘,性温。入肺、肝、肾三经。能补肾助阳,补肺敛肺,润肠通便。核桃仁含蛋白质、脂肪、碳水化合物,还含有钙、磷、铁、锌、胡萝卜素核黄素及维生素A、维生素B、维生素C、维生素E等有很高的营养价值和药用价值。用于肾虚腰痛,两脚痿弱,小便频数,遗精阳痿;肺气虚弱或肺肾两虚,喘咳短气;肠燥便秘,大便干涩;石淋,小便不利等。 核桃仁还对其它病症具有较高的医疗效果,如它具有补气养血、润燥化痰、温肺润肠、散肿消毒等功能。近年来的科学研究还证明,核桃树枝对肿瘤有改善症状的作用,可用于预防子宫颈癌及各种癌症。
当归(Angelica sinensis)别名干归、马尾当归、秦哪、马尾归、云归、西当归、岷当归、金当归、当归身、涵归尾、土当归多年生草本植物,性味归经:性温,味甘、辛,归肝、心、脾经,当归根含挥发油和非挥发性成分.挥发油中的中性油成分有:亚丁基苯酞(Butylidene phthalide)、β-蒎烯(β-Pinene)、α-蒎烯、莰烯(Camphene)、对聚伞花素(p-Cymene)、β-水芹烯(β-Phellandrene)、月桂烯(Myrcene)、别罗勒烯(Allo-ocimene)、6-正丁基-环庚二烯-1,4(6-n-butyl-cycloheptadiene-1,4)、2-甲基-十二烷-5-酮(2-Methyl-dodecane-5-one)、苯乙酮(Acetophenone)、β-甜没药烯(β-Bisabolene)、异菖蒲烯(Isoacroraene)、菖蒲二烯(Acoradiene)、花侧柏烯(Chamigrene)、α-雪松烯(α-Cedrene)、藁本内酯(Ligustilide)、正丁基四氢化酜内酯(n-Butyl-tetrahydrophthalide)、正丁基酜内酯(n-Butyl-phthalide)、正丁烯酜内酯(n-Buty- lidene phthalide)、正十二烷醇(Dodecanol)、佛手柑内酯(Bergapten)等.还含有:豆甾醇(Stigmasterol)、谷甾醇(Sitosterol)、豆甾醇-D-葡萄糖甙(Stigma- sterol-D-glucoside)、十四醇-1(Tetradecanol-1)、钩吻萤光素(Scopletin)、蔗糖(Sucrose)、果糖(Fructose)、葡萄糖(Glucose);维生素A、维生素B12.维生素E;17 种氨基酸以及钠、钾、钙、镁等20余种无机元素。功能主治: 补血活血,调经止痛,润肠通便。用于血虚萎黄、眩晕心悸、月经不调、经闭痛经、虚寒腹痛、肠燥便秘、风湿痹痛、跌扑损伤、痈疽疮疡。
莲子(emen Nelumbinis)又称白莲、莲实、莲米、莲肉,性味:鲜者甘、涩、平,无毒;干者甘、温涩、无毒,归经:入脾、肾、心经,莲子含多量的淀粉和棉子糖(Raffinose), 蛋白质16.6%,脂肪2.0%,碳水化物62%,钙0.089%,磷0.285%,铁0.0064%.亦含有β-谷甾醇(β-Sitosterol)、β-谷甾醇脂肪酸酯(β-Sitosterol fatty ester), 尚含丰富的维生素C、葡萄糖、叶绿素、棕榈酸及谷胱甘肽等.功效:清心醒脾,补脾止泻,养心安神明目、补中养神,健脾补胃,止泻固精,益肾涩精止带,滋补元气。主治:心烦失眠,脾虚久泻,大便溏泄,久痢,腰疼,男子遗精,妇人赤白带下。还可预防早产、流产、孕妇腰酸。
芝麻(Sesamum indicum)又称胡麻,白麻,芝麻味甘、性平,入肝、肾、肺、脾经,含有大量的脂肪和蛋白质,还有膳食纤维、油酸、亚油酸、棕榈酸、花生酸、叶酸、烟酸、维生素B1.B2.尼克酸、维生素E、卵磷脂、钙、铁、镁等营养成份,芝麻中的亚油酸有调节胆固醇的作用。在中国古代,芝麻历来被视为延年益寿食品,宋代大诗人苏东坡也认为,芝麻能强身体,抗衰老,以九蒸胡麻,同去皮茯苓,少入白蜜为面食,日久气力不衰,百病自去,此乃长生要诀。有补血明目、祛风润肠、生津通乳、益肝养发、强身体,抗衰老之功效。可用于治疗身体虚弱、头晕耳鸣、高血压、高血脂、咳嗽、身体虚弱、头发早白、贫血萎黄、津液不足、大便燥结、乳少、尿血等症。
白果(Ginkgo Seed)又称银杏、公孙树子,性平,味甘苦涩,有小毒,入肺、肾经,蛋白质,脂肪、碳水化合物、粗纤维、蔗糖、还原糖、钙、磷、铁、胡萝卜素、核黄素,以及白果醇、白果酚、白果酸等多种成分,功效主治:敛肺气,定喘嗽,止带浊,缩小便,消毒杀虫。主治哮喘,痰嗽,梦遗,白带,白浊,小儿腹泻,虫积,肠风脏毒,淋病,小便频数,以及疥癣、漆疮、白瘤风等病症。
珍珠(Pernulo)珍珠的无机成分主要是碳酸钙、碳酸镁,占91%以上,还含有氧化硅、磷酸钙、Al2O3及Fe2O3、门冬氨酸、苏氨酸、丝氨酸、谷氨酸、甘氨酸、丙氨酸、胱氨酸、缬氨酸、蛋氨酸、异亮氨酸、亮氨酸、酪氨酸、苯丙氨酸、组氨酸、精氨酸、脯氨酸等17种氨基酸。 另外,还含有30多种微量元素、牛磺酸、丰富的维生素、肽类。《中华人民共和国药典》及《中药大辞典》均指明:珍珠具有安神定惊、明目去翳、解毒生肌等功效,现代研究还表明珍珠在提高人体免疫力、延缓衰老、祛斑美白、补充钙质等方面都具有独特的作用。
发明内容
本发明要解决的技术问题是提供一种营养成分全面、有保健功能、风味口感独特、久煮不烂和保持原料原有功效的美容膳食紫甘薯粉条,并公开美容膳食紫甘薯粉条的规模化生产方法。
为了实现上述目的,本发明采用了以下技术方案:
一种美容膳食紫甘薯粉条,其中:包括原料组成和重量份数:紫薯全粉44-49份、栗子全粉1-5份、核桃粉1-5份、当归粉1-5份、莲子粉2-4份、芝麻粉1-4份、白果1-4粉、珍珠粉0.001-0.005份、枸杞粉0.5-2份和水45-55份。
以上所述的原料组成和重量份数:所述的原料组成和重量份数:紫薯全粉46份、栗子全粉3份、核桃粉3份、当归粉3份、莲子粉3份、芝麻粉3份、白果粉3份、珍珠粉0.003份、枸杞粉1份和水50份。
以上所述的美容膳食紫甘薯粉条的制备方法:包括以下步骤:
(1)混粉:按以上所述的配比配备原料,将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉投入混合机中,启动混合器,将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉混合均匀备用;
(2)匀浆:将水投入匀浆釜中,再将步骤(1)混合的紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉加入匀浆釜中,混合成均质的浆料;
(3)熟化:启动螺杆挤压机的夹套加热装置和螺杆挤压机,控制夹套温度80-105°C,将步骤(2)的浆料熟化;
(4)成形:通过成形装置将熟化浆料挤出成形粉条;
(5)冷却:粉条经冷却床风冷;
(6)干燥:冷却后粉条切成1-2米,用挂杆挂入密封的热风干燥房中干燥,然后控制干燥循环热风温度30-60°C,再密封饧12-16 h即可;
(7)切断:按规格切断、计量、包装得美容膳食紫甘薯粉条产品。
以上所述的所述的匀浆是先将≤95%水投入匀浆釜中,启动搅拌器,常温,搅拌转速30-70转/分,然后慢慢加入混合粉,最后再慢慢加入剩余的水,并充分调匀;当粉乳团表面柔软光滑,乳滴成丝状,无结块,无硬粒备用。
以上所述的夹套加热装置采用水加热或蒸气加热。
以上所述的成形装置为螺杆挤压机,速度为10-30转/分。
本发明的有益效果:
1、本发明的美容膳食紫甘薯粉条,营养成分全面、色泽光鲜、久煮不烂、弹性大、高营养、风味独特、口感柔嫩爽滑,保持了紫甘薯、栗子、核桃、莲子、枸杞等原材料固有营养价值,本美容膳食紫甘薯粉条为无公害、绿色有机食品。
2、本美容膳食紫甘薯粉条,采用紫薯、栗子、核桃、当归、莲子、芝麻、白果、珍珠和枸杞为原料而成,这些原材料都就有美容功效,本美容膳食紫甘薯粉条结合了原材料的多种功效,因此营养成分更全面、美容功效跟显著。
3、本发明生产方法工艺合理,操作容易,粉浆熟化后直接成型,粉丝不会相互粘结,不需要进行理条,不破紫甘薯、栗子、核桃、莲子、枸杞等原材料本身所含的营养成分和膳食纤维,产品质量稳定,没有废水、废气和粉尘污染,适于大规模工业化生产。

下面以具体实施例对本发明进一步的详细描述。
实施例1:
一种美容膳食紫甘薯粉条,原料组成和重量份数:紫薯全粉46份、栗子全粉3份、核桃粉3份、当归粉3份、莲子粉3份、芝麻粉3份、白果粉3份、珍珠粉0.003份、枸杞粉1份和水50份,制备方法:将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉投入混合机中,启动混合器,将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉混合均匀,先将90%的水投入匀浆釜中,启动搅拌器,常温,搅拌转速50转/分,然后慢慢加入混合后的粉体,最后再慢慢加入剩余的水,并充分调匀,当粉乳团表面柔软光滑,乳滴成丝状,无结块,无硬粒,混合成均质的浆料即可。启动螺杆挤压机的夹套加热装置和螺杆挤压机,控制夹套温度85°C ,将浆料熟化,控制螺杆速度20 转/分,通过成形装置将熟化浆料挤出成形粉条。将成形粉条经电脑控制冷却床吹风冷却,将冷却粉条切成1.6米,用挂杆挂入密封的热风干燥房中干燥,然后控制干燥循环热风温度40°C 干燥,最后按20 公分规格切断、计量、包装得美容膳食紫甘薯粉条产品。
实施例2:
一种美容膳食紫甘薯粉条,原料组成和重量份数:紫薯全粉49份、栗子全粉5份、核桃粉5份、当归粉5份、莲子粉4份、芝麻粉4份、白果4粉、珍珠粉0.005份、枸杞粉2份和水55份,制备方法:将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉投入混合机中,启动混合器,将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉混合均匀,先将90%的水投入匀浆釜中,启动搅拌器,常温,搅拌转速70转/分,然后慢慢加入混合后的粉体,最后再慢慢加入剩余的水,并充分调匀,当粉乳团表面柔软光滑,乳滴成丝状,无结块,无硬粒,混合成均质的浆料即可。启动螺杆挤压机的夹套加热装置和螺杆挤压机,控制夹套温度105°C ,将浆料熟化,控制螺杆速度30 转/分,通过成形装置将熟化浆料挤出成形粉条。将成形粉条经电脑控制冷却床吹风冷却,将冷却粉条切成2米,用挂杆挂入密封的热风干燥房中干燥,然后控制干燥循环热风温度60°C 干燥,最后按20 公分规格切断、计量、包装得美容膳食紫甘薯粉条产品。
实施例3:
一种美容膳食紫甘薯粉条,原料组成和重量份数:紫薯全粉44份、栗子全粉1份、核桃粉1份、当归粉1份、莲子粉2份、芝麻粉1份、白果1粉、珍珠粉0.001份、枸杞粉0.5份和水45份,制备方法:将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉投入混合机中,启动混合器,将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉混合均匀,先将90%的水投入匀浆釜中,启动搅拌器,常温,搅拌转速30转/分,然后慢慢加入混合后的粉体,最后再慢慢加入剩余的水,并充分调匀,当粉乳团表面柔软光滑,乳滴成丝状,无结块,无硬粒,混合成均质的浆料即可。启动螺杆挤压机的夹套加热装置和螺杆挤压机,控制夹套温度80°C ,将浆料熟化,控制螺杆速度20 转/分,通过成形装置将熟化浆料挤出成形粉条。将成形粉条经电脑控制冷却床吹风冷却,将冷却粉条切成1米,用挂杆挂入密封的热风干燥房中干燥,然后控制干燥循环热风温度30°C 干燥,最后按20 公分规格切断、计量、包装得美容膳食紫甘薯粉条产品。

1.一种美容膳食紫甘薯粉条,其特征是:包括原料组成和重量份数:紫薯全粉44-49份、栗子全粉1-5份、核桃粉1-5份、当归粉1-5份、莲子粉2-4份、芝麻粉1-4份、白果1-4粉、珍珠粉0.001-0.005份、枸杞粉0.5-2份和水45-55份。

3.根据权利要求1-2任何一项所述的美容膳食紫甘薯粉条的制备方法,其特征是:包括以下步骤:
(1)混粉:按以上所述的配比配备原料,将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉投入混合机中,启动混合器,将紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉混合均匀备用;
(2)匀浆:将水投入匀浆釜中,再将步骤(1)混合的紫薯全粉、栗子全粉、核桃粉、当归粉、莲子粉、芝麻粉、白果粉、珍珠粉和枸杞粉加入匀浆釜中,混合成均质的浆料;
(3)熟化:启动螺杆挤压机的夹套加热装置和螺杆挤压机,控制夹套温度80-105°C,将步骤(2)的浆料熟化;
(4)成形:通过成形装置将熟化浆料挤出成形粉条;
(5)冷却:粉条经冷却床风冷;
(6)干燥:冷却后粉条切成1-2米,用挂杆挂入密封的热风干燥房中干燥,然后控制干燥循环热风温度30-60°C;
(7)切断:按规格切断、计量、包装得美容膳食紫甘薯粉条产品。
4.根据权利要求3所述的美容膳食紫甘薯粉条的制备方法,其特征是:所述的匀浆是先将≤95%水投入匀浆釜中,启动搅拌器,常温,搅拌转速30-70转/分,然后慢慢加入混合粉,最后再慢慢加入剩余的水,并充分调匀;当粉乳团表面柔软光滑,乳滴成丝状,无结块,无硬粒备用。
5.根据权利要求3所述的美容膳食紫甘薯粉条的制备方法,其特征是:所述的夹套加热装置采用水加热或蒸气加热。
6.根据权利要求3所述的美容膳食紫甘薯粉条的制备方法,其特征是:所述的成形装置为螺杆挤压机,速度为10-30转/分。
