Abstract

生牡蛎保鲜剂,包括壳聚糖0.6-1.4%,海藻酸钠0.2-0.4%,茶多酚0.01-0.5%,氯化钙1.5-3.5%,维生素C1-3%,果糖3.5-7.5%,氯化钠1-5%,乙醇3-8%,醋酸2%,丝瓜水35-49%,余量为水。实践证明,在同样的保藏条件下,用保鲜剂浸泡过的生牡蛎的保鲜时间大大延长,其色泽、口感基本无变化。

本发明涉及海产品保鲜领域,具体涉及生牡蛎保鲜剂。
背景技术
牡蛎又称"蛎房",北方渔民称之为海蛎、石蛎。盛产于大连,所以大连人说话口音也被称为“海蛎子味”历史上闻名遐迩的牡蛎养殖地广东澄海《县志》记载:"介类有蛎房,生食日蚝白,腌食白蛎黄,味皆美。"在西方,牡蛎曾被称为"海之奶",在《圣经》中被誉为"海之神力"。我国唐代诗人李白有"天上地下,牡蛎独尊"的题句。清代福建总督李鹤年也曾有诗赞日:"蛎房风味胜江瑶。"可见牡蛎在中西方都同样备受青睐。海蛎肉味鲜美,营养丰富,是人们餐桌上的珍品,深受人们喜爱。据食品营养检测,牡蛎含蛋白质50%以上,而脂肪仅有7%-8%,并含有多种微量元素和维生素等,因煮汤后状似牛奶,素有"海底牛奶"的美誉。儿童、孕妇及哺乳期妇女食后有助于骨骼、牙齿生长,并能有效地防止小儿佝偻病。
生牡蛎的保鲜时间很短,如何延长生牡蛎的保鲜时间是业界亟待解决的问题。
发明内容
本发明的目的在于提供一种生牡蛎保鲜剂。
本发明为实现上述目的所采用的技术方案是:
生牡蛎保鲜剂,包括
壳聚糖0.6-1.4%
海藻酸钠0.2-0.4%
茶多酚0.01-0.5%
氯化钙1.5-3.5%
维生素C1-3%
果糖3.5-7.5%
氯化钠1-5%
乙醇3-8%
醋酸2%
丝瓜水35-49%
余量为水。
实践证明,下列比例为优选,达到的效果较佳:
壳聚糖1.2%
海藻酸钠0.3%
茶多酚0.3%
氯化钙3%
维生素C2.5%
果糖3-5%
氯化钠3%
乙醇5%
醋酸2%
丝瓜水46%
余量为水。
所述的丝瓜水,又称天萝水,是采用丝瓜主蔓根部30厘米处采用截蔓自流法,让丝瓜水自然流出而得。
本专利文件中的百分数均为质量百分数。
①预冷 将生牡蛎洗净,0-15℃下置于5ml/L的臭氧溶液中杀菌1-2min;
②浸泡 将经预冷处理后的生牡蛎浸泡到生牡蛎保鲜剂中浸泡15-30min;
③保藏 将浸泡好的生牡蛎取出。
放入气调库中保藏效果更佳。
本发明的特点是:
①使用本产品保鲜的生牡蛎,不需再清洗,可直接食用;
②延长了生牡蛎的保鲜时间,实践证明,在同样的保藏条件下,用保鲜剂浸泡过的生牡蛎的保鲜时间是没有浸泡过保鲜剂的生牡蛎保鲜时间的二倍,可达到延长十五天保鲜期的效果,即其色泽、口感基本无变化;
具体实施方式
实施例一:
生牡蛎保鲜剂,包括壳聚糖1.2%;海藻酸钠0.3%;茶多酚0.3%;氯化钙3%;维生素C2.5%;果糖3-5%;氯化钠3%;乙醇5%;醋酸2%;丝瓜水46%;余量为水。
实施例二:
生牡蛎保鲜剂,包括壳聚糖0.6%;海藻酸钠0.2%;茶多酚0.5%;氯化钙3.5%;维生素C1%;果糖7.5%;氯化钠1%;乙醇8%;醋酸2%;丝瓜水49%;余量为水。
实施例三:
生牡蛎保鲜剂,包括壳聚糖1.4%;海藻酸钠0.2%;茶多酚0.01%;氯化钙3.5%;维生素C3%;果糖3.5%;氯化钠5%;乙醇3%;醋酸2%;丝瓜水35%;余量为水。
实施例四:
生牡蛎保鲜剂,包括壳聚糖0.8%;海藻酸钠0.4%;茶多酚0.3%;氯化钙2.8%;维生素C1.9%;果糖4.6%;氯化钠2.9%;乙醇6%;醋酸2%;丝瓜水41%;余量为水。
实施例五:
生牡蛎保鲜剂,包括壳聚糖1.3%;海藻酸钠0.3%;茶多酚0.08%;氯化钙2%;维生素C2.4%;果糖5.6%;氯化钠4%;乙醇8%;醋酸2%;丝瓜水37%;余量为水。
