一种红豆海带面条的制作方法,其所需材料用量以重量份数计为:面粉275,海带浆125,红豆汁70,食盐1,淀粉25,谷朊粉3,瓜尔豆胶1,其制作方法步骤为:浸泡红豆,至用手指轻压可碾碎无硬质感为止,再破碎挤压得到红豆汁;海带洗净,放高压锅中蒸煮,捞出破碎,然后匀浆,于筛网过滤;面粉添加红豆汁和海带浆,及食盐、淀粉、谷朊粉、瓜尔豆胶,一边加入一边搅拌,得到面团;面团醒发后,压制面带;通过调节压面机切条的级别,得到不同规格的面条。本发明有益效果是:具有红豆和海带的双重营养和香气,清热解毒,口感舒适。

本发明涉及食品领域,具体为一种红豆海带面条的制作方法。
背景技术
红豆含有蛋白质、脂肪、糖类、维生素B族、钾、铁、磷,可促进心脏血管的活化、利尿、清热解毒、健脾益胃、祛湿益气、补血、促进血液循环、强化体力、增强抵抗力,是良好的健康食品,红豆的烹饪方法很多,但是还未出现将其制成面条的烹饪法;海带营养丰富,是一种富含碘、钙、铜、锡等多种微量元素的海藻类食物,具有化痰、清热、降血压的作用,红豆和海带相结合具有清热解毒的作用,现有技术中有关面条的做法很多,但是还没有一种将红豆和海带掺入面条的做法。
发明内容
本发明的目的是将红豆与海带掺入面粉制作成面条,使面条提高口感和增强营养价值。
本发明的技术方案内容如下:
所需材料用量以重量份数计为:面粉275,海带浆125,红豆汁70,食盐1,淀粉25,谷朊粉3,瓜尔豆胶1。
一种红豆海带面条的制作方法,包括如下步骤:
(1)选择优质新鲜红豆,去杂质,清洗干净,放在容器中用清水浸泡,至豆皮胀裂、用手指轻压可碾碎而无硬质感为止,将其置于破碎机中破碎,经挤压得到红豆汁,于筛网过滤掉豆渣;
(2)选择优质海带,洗净,放进高压锅中蒸煮15-20分钟,捞出海带放入捣碎机中进行破碎,破碎过程中可以用步骤1的红豆汁代替水添加,然后用胶体磨匀浆后,于筛网过滤即可;
(3)在和面机中加入面粉,添加步骤1、2制备的红豆汁和海带浆,及食盐、淀粉、谷朊粉、瓜尔豆胶,一边加入一边搅拌,得到面团;
(4)面团和好后醒发,温度35-40度,时间30-60分钟,相对湿度80 -90%,然后压制面带;
(5)用压面机压制步骤5醒发好的面带,通过调节压面机切条的级别,得到不同规格的面条。
本发明有益效果是:具有红豆和海带的双重营养,清热解毒,具有清爽的海带和红豆的香气,口感舒适。

具体实施例:在110千克面粉的情况下,其它所需材料用量为:海带浆50千克,红豆汁28千克,食盐0.4千克,淀粉10千克,谷朊粉1.2千克,瓜尔豆胶0.4千克。
一种红豆海带面条的制作方法,包括如下步骤:
(1)选择优质新鲜红豆,去杂质,清洗干净,放在容器中用清水浸泡,至豆皮胀裂、用手指轻压可碾碎而无硬质感为止,将其置于破碎机中破碎,经挤压得到红豆汁,于筛网过滤掉豆渣;
