本发明涉及生物医药技术领域,特别是一种补钙保健葡萄籽油。
背景技术
钙是人体最重要的元素之一,参与一切生命活动,有专家说“钙是生命之源,钙是健康之本,钙是长寿之基”。人体中的钙主要是从膳食中补充,当膳食中钙的摄入不足时,体内就会缺钙,缺钙可引起失眠、手足麻木、牙齿松动和老化等症状。目前市场上的补钙保健品种类繁多,如各种钙片等,为临床和患者提供了较多的选择,但由于市场上销售的补钙制品大多不易被人体吸收,造成缺钙人群患结石的几率大大增加。近些年来,出现一些具有补钙功效的食用油脂,如中国专利(申请号为02109203.6)“大豆、花生高钙组合组织蛋白及组合高钙油的生产方法”,其配方如下:大豆20%-80%,花生20%-80%,虾皮3%-10%,骨块0.5%-5%。本发明的工艺过程如下:精选花生仁,脱红衣,精选大豆,精选干虾皮,鲜骨熬制,骨块干燥破碎,组合脱脂脱腥增钙,高钙组合蛋白组织化,液态部分经板框压滤机过滤制成组合高钙食用油;用该发明制成的组合组织蛋白和组合高钙食用油不含黄曲霉素和化学溶剂等任何有害物质,蛋白组织亦未遭高温破坏,可制成营养丰富的素肉食品和口味香纯的食用油,不仅可以满足人们食用和补钙的需求,亦可为人们提供一种组合高钙新型食品。还有中国专利(申请号为201210158389.3)“一种补钙保健茶油”,是由茶油、虾皮和碳酸钙制成,其具体制备方法为:辅料预处理、辅料再处理、辅料混合、混合辅料处理、提取、纯化和过滤;具有营养全面、能够补充钙质等特点,既可适合缺钙人群食用,也可适合儿童食用,还可适合老年人食用。
发明内容
本发明的目的在于提供一种营养全面、能够补充钙质的葡萄籽油。
本发明所采取的技术方案是发明一种补钙保健葡萄籽油,是由下列原料按重量份的原料制备而成:
葡萄籽油20-35 葡萄籽20-35 茶油5-10
橄 榄 油2-5 榛子仁3-7 驴骨4-8
腰 果3-7 红曲米2-6 腐竹2-6;
其制备方法如下:
A、榛子仁预处理:
将上述重量份的榛子仁,去除外壳后,在60-70℃下烘干至水分≤6.0%,得干榛子仁,备用;
B、驴骨预处理:
将上述重量份的驴骨破碎,过10-20目筛;再向其中加入同等重量、浓度为30-45%的铵盐(如硫酸铵、氯化铵、碳酸铵等)水溶液,同时加入占驴骨重量1.5-2.5%的稀酸(如浓度为20-35%的醋酸、浓度为0.5-2.0%的盐酸、浓度为0.05-0.15%的硫酸等),在70-90℃下浸泡1.0-1.5小时,过滤,再用清水洗涤1-2次;然后,在真空度为1.0-3.0MPa、温度为50-70℃下干燥2-4小时;然后,待温度降至室温后,得处理驴骨,备用;
C、红曲米预处理:
将上述重量份的红曲米投入1-3倍重量、体积浓度为60-80%的乙醇中,回流提取0.5-1.5小时,过滤;再将红曲米挤压处理,除去蕴含的乙醇溶液,收集滤出的红曲米料;接着,向红曲米料中加入占其重量2.0-3.5%的表面活性剂(采用食品级表面活性剂,如蔗糖酯、甜菊甙、吐温60等),混匀,再加入与红曲米料同等重量、60-70℃的温水,搅匀;然后,用弱碱(如磷酸钠、磷酸氢钠、碳酸氢钠、碳酸钠等)水溶液调节其Ph值为8.0-10.0,浸泡2-4小时(每当溶液中的Ph值低于8时,重新用碱水溶液调节),过滤;再在70-80℃下常压干燥至水分≤5.0%,得处理红曲米,备用;
D、腐竹预处理:
将上述重量份的腐竹,切成厚度为0.1-0.2cm、长为0.5-1.2cm的丝状,并投入2-3倍重量、50-60℃的温水中,浸泡3-5小时,过滤;然后,将其挤压处理,分离出残留水分,收集腐竹料;接着,向腐竹料中加入占腐竹料重量1.0-2.5%的蛋白质酶,在30-40℃下密封4-5小时后,再加入占腐竹料重量10-15%、体积浓度为50-60%的食醋,再次密封3-4小时,过滤;然后,将其投入1-1.5倍重量、浓度为1.2-2.0%的碱(如氢氧化钠、碳酸钠、碳酸氢钠等)水溶液中,煮沸提取10-15min,过滤,用清水反复冲洗3-4次;再在60-75℃下烘干至水分≤8.0%,得处理腐竹,备用;
E、压榨:
a、将上述重量份葡萄籽的1/3与备用的处理驴骨,混匀,在0-10℃下经冷压榨处理,收集流出的油液一,备用;
b、将上述重量份葡萄籽的1/3与上述重量份的腰果以及备用的干榛子仁,混匀,在0-10℃下经冷压榨处理,收集流出的油液二,备用;
c、将上述重量份葡萄籽剩余的1/3与备用的处理红曲米、处理腐竹,混匀,在0-10℃下经冷压榨处理,收集流出的油液三,备用;
F、精炼:
a、油液一精炼:向备用的油液一中加入2-3倍重量、浓度为4.0-5.0%的碱(如氢氧化钠、碳酸钠、碳酸氢钠等)水溶液,在45-65℃下处理1-4小时,过滤,得碱处理油液一,备用;
b、油液三精炼:将备用的油液三在0.75-1.45MPa的压力下,经中性氧化铝柱过滤,控制流速20-30L/h,收集过柱油液三,备用;
G、脱色:
将备用的碱处理油液一、油液二和过柱油液三,混匀,得混合油液;再向混合油液中加入占其重量3.5-6.0%的中性硅藻土、5.0-7.0%的细沸石,并按5-10℃/min的升温速度,将加热至80-100℃,搅拌处理20-35min,过滤,得脱色油液,备用;
H、水洗:
向备用的脱色油液中加入2-4倍重量的沸水,搅拌15-25min,待其静置、分层,降至室温后,进行分离,收集油层液,备用;
I、精滤:
将备用的油层液,在0.25-1.25MPa压力下先经800目的板框压滤机过滤,再在同等压力下经超滤膜装置(超滤膜的膜孔孔径为1-8nm)过滤,收集滤出的精滤油液,备用;
J、总混:
将上述重量份的葡萄籽油、茶油、橄榄油与备用的精滤油液,投入混合机中混匀,即得补钙保健葡萄籽油。
本发明的补钙保健葡萄籽油,采用葡萄籽油(包括葡萄籽)为主要原料,辅以茶油、橄榄油、榛子仁、驴骨、腰果、红曲米和腐竹。葡萄籽油(Vitis vinifera L.)中含有丰富的亚油酸、其他多种不饱和脂肪酸、维生素B1、B3、B5、C、F、矿物质、蛋白质、亚麻油酸(linoleic acid)以及原花色素(Oligo Proanthocyanidin,简称OPC)、叶绿素、微量矿物元素、必需脂肪酸、果糖、葡萄糖、矿物质、钾、磷、钙和镁以及葡萄多酚等,其中的亚麻油酸是人体必需而又为人体所不能合成的脂肪酸,可以抵抗自由基、抗老化、帮助吸收维生素C和E、强化循环系统的弹性、降低紫外线的伤害,保护肌肤中的胶原蛋白、改善静脉肿胀与水肿以及预防黑色素沉淀;所含的OPC具有保护血管弹性、阻止胆固醇囤积在血管壁上及减少血小板凝固。茶油(Camellia oleifera Abel)中含有丰富的单不饱和脂肪酸和不饱和脂肪酸,其单不饱和脂肪酸能提高血液抗氧化能力,降低胆固醇,防止心脑血管疾病的发生,还能降低诸如胰岛素拮抗性糖尿病之类因代谢失调而引起的疾病的出现机率,其不饱和脂肪酸具有“不聚脂”特性,不仅自身不在内脏及皮下沉积,而且能够阻止脂肪沉积等功效。橄榄油(Olea Europaea L.)在西方被誉为“液体黄金”、“植物油皇后”、“地中海甘露”,具有极佳的天然保健功效、美容功效和理想的烹调用途;橄榄油中含有ω-3脂肪酸、比任何植物油都要高的不饱和脂肪酸、丰富的维生素A、D、E、F、K和胡萝卜素等脂溶性维生素及抗氧化物等多种成分,且不含胆固醇;经常食用能够促进血液循环、改善消化系统、保护皮肤、提高内分泌系统、有助于人体对钙、磷、锌等矿物质的吸收、促进骨骼生长,还具有防癌和防辐射作用。榛子仁(Corylus heterophylla Fisch.exBess.Corylus heterop)中富含油脂(大多为不饱和脂肪酸)、蛋白质、碳水化合物、胡萝卜素、维生素B1、维生素B2、维生素E(含量极为丰富)、矿物质、糖纤维、β--古甾醇和抗氧剂石炭酸等特殊成分以及人类所需的八种氨基酸与丰富的钙、磷、铁等微量元素,能有效地延缓衰老,防治血管硬化,润泽肌肤。驴骨(Equus asinus Linnaeus)含有丰富的钙质,具有补肾滋阴、强筋壮骨等功效。腰果(Anacardium occidentale)富含大量的蛋白质、淀粉、糖、钙、镁、钾、铁和维生素A、B1、B2、B6以及丰富的单不饱和脂肪酸,可以帮老年人预防动脉硬化、心血管疾病、脑中风和心脏病,还可以促进老年人每天顺利排便。红曲米(monascuspurpureus)具有降血压、降血脂的作用,所含红曲霉素K可阻止生成胆固醇。腐竹中含有丰富的蛋白质,其含有的卵磷脂可除掉附在血管壁上的胆固醇,防止血管硬化,预防心血管疾病,保护心脏;还含有多种矿物质,补充钙质,防止因缺钙引起的骨质疏松,促进骨骼发育,对小儿、老人的骨骼生长极为有利;还含有丰富的铁,而且易被人体吸收,对缺铁性贫血有一定疗效。
本发明的补钙保健葡萄籽油,以葡萄籽油为溶媒,吸收上述多种原料中的钙质和其它微量元素以及活性物质,使其含有较多的钙质和对人体有益的微量元素以及其它对人体有益的活性物质,因而,其营养比较全面,不仅具有补充钙质的功效,还具有较好的保健作用。

从上表数据可以看出,本发明的补钙保健葡萄籽油中,既含有较为丰富的钙质,也含有对人体有益的微量元素以及其它对人体有益的活性物质。
具体实施方式
以下结合实施例,对本发明做进一步的说明。下面的说明是以例举的方式,但本发明的保护范围并不局限于此。
本实施例的补钙保健葡萄籽油,是由下列原料按重量份的原料制备而成:
葡萄籽油30 葡萄籽30 茶油8
橄 榄 油4 榛子仁5 驴骨8
腰 果5 红曲米4 腐竹6;
其制备方法如下:
A、榛子仁预处理:
将上述重量份的榛子仁,去除外壳后,在65℃下烘干至水分≤6.0%,得干榛子仁,备用;
B、驴骨预处理:
将上述重量份的驴骨破碎,过15目筛;再向其中加入同等重量、浓度为40%的氯化铵水溶液,同时加入占驴骨重量2.0%、浓度为35%的醋酸,在80℃下浸泡1.2小时,过滤,再用清水洗涤1-2次;然后,在真空度为2.0MPa、温度为60℃下干燥3小时;然后,待温度降至室温后,得处理驴骨,备用;
C、红曲米预处理:
将上述重量份的红曲米投入2倍重量、体积浓度为70%的乙醇中,回流提取1.0小时,过滤;再将红曲米挤压处理,除去蕴含的乙醇溶液,收集滤出的红曲米料;接着,向红曲米料中加入占其重量3.0%的蔗糖酯,混匀,再加入与红曲米料同等重量、65℃的温水,搅匀;然后,用浓度为25%的磷酸钠水溶液调节其Ph值为9.0,浸泡3小时,过滤;再在75℃下常压干燥至水分≤5.0%,得处理红曲米,备用;
D、腐竹预处理:
将上述重量份的腐竹,切成厚度为0.1-0.2cm、长为0.5-1.2cm的丝状,并投入3倍重量、55℃的温水中,浸泡膨胀4小时,过滤;然后,将其挤压处理,分离出残留水分,收集腐竹料;接着,向腐竹料中加入占腐竹料重量2.0%的蛋白质酶,在35℃下密封5小时后,再加入占腐竹料重量12%、体积浓度为55%的食醋,再次密封4小时,过滤;然后,将其投入1.2倍重量、浓度为1.5%的氢氧化钠水溶液中,煮沸提取12min,过滤,用清水反复冲洗3-4次;再在70℃下烘干至水分≤8.0%,得处理腐竹,备用;
E、压榨:
a、将上述重量份葡萄籽的1/3与备用的处理驴骨,混匀,在5℃下经冷压榨处理,收集流出的油液一,备用;
b、将上述重量份葡萄籽的1/3与上述重量份的腰果以及备用的干榛子仁,混匀,在5℃下经冷压榨处理,收集流出的油液二,备用;
c、将上述重量份葡萄籽剩余的1/3与备用的处理红曲米、处理腐竹,混匀,在5℃下经冷压榨处理,收集流出的油液三,备用;
F、精炼:
a、油液一精炼:向备用的油液一中加入3倍重量、浓度为4.5%的氢氧化钠水溶液,在55℃下处理3小时,过滤,得碱处理油液一,备用;
b、油液三精炼:将备用的油液三在1.0MPa的压力下,经中性氧化铝柱(本例所采用的型号为AL00277)过滤,控制流速25L/h,收集过柱油液三,备用;
G、脱色:
将备用的碱处理油液一、油液二和过柱油液三,混匀,得混合油液;再向混合油液中加入占其重量5.0%的中性硅藻土、6.0%的细沸石,并按8℃/min的升温速度,将加热至90℃,搅拌处理30min,过滤,得脱色油液,备用;
H、水洗:
向备用的脱色油液中加入3倍重量的沸水,搅拌20min,待其静置、分层,降至室温后,进行分离,收集油层液,备用;
I、精滤:
将备用的油层液,在0.8MPa压力下先经800目的板框压滤机过滤,再在同等压力下经超滤膜装置(超滤膜的膜孔孔径为5nm)过滤,收集滤出的精滤油液,备用;
J、总混:
将上述重量份的葡萄籽油、茶油、橄榄油与备用的精滤油液,投入混合机中混匀,即得补钙保健葡萄籽油。
本发明的补钙保健葡萄籽油,作为食用油脂,既适合缺钙人群食用,也适合儿童食用,还适合老年人食用。
Claims (1)
1.一种补钙保健葡萄籽油,其特征在于是由下列原料按重量份的原料制备而成:
葡萄籽油20-35 葡萄籽20-35 茶油5-10
橄 榄 油2-5 榛子仁3-7 驴骨4-8
腰 果3-7 红曲米2-6 腐竹2-6;
其制备方法如下:
A、榛子仁预处理:
将上述重量份的榛子仁,去除外壳后,在60-70℃下烘干至水分≤6.0%,得干榛子仁,备用;
B、驴骨预处理:
将上述重量份的驴骨破碎,过10-20目筛;再向其中加入同等重量、浓度为30-45%的铵盐水溶液,同时加入占驴骨重量1.5-2.5%的稀酸,在40-70℃下浸泡1.0-1.5小时,过滤,再用清水洗涤1-2次;然后,在真空度为1.0-3.0MPa、温度为50-70℃下干燥2-4小时;然后,待温度降至室温后,得处理驴骨,备用;
C、红曲米预处理:

将上述重量份的腐竹,切成厚度为0.1-0.2cm、长为0.5-1.2cm的丝状,并投入2-3倍重量、50-60℃的温水中,浸泡3-5小时,过滤;然后,将其挤压处理,分离出残留水分,收集腐竹料;接着,向腐竹料中加入占腐竹料重量1.0-2.5%的蛋白质酶,在30-40℃下密封4-5小时后,再加入占腐竹料重量10-15%、体积浓度为50-60%的食醋,再次密封3-4小时,过滤;然后,将其投入1-1.5倍重量、浓度为1.2-2.0%的碱水溶液中,煮沸提取10-15min,过滤,用清水反复冲洗3-4次;再在60-75℃下烘干至水分≤8.0%,得处理腐竹,备用;
E、压榨:
a、将上述重量份葡萄籽的1/3与备用的处理驴骨,混匀,在0-10℃下经冷压榨处理,收集流出的油液一,备用;
b、将上述重量份葡萄籽的1/3与上述重量份的腰果以及备用的干榛子仁,混匀,在0-10℃下经冷压榨处理,收集流出的油液二,备用;
c、将上述重量份葡萄籽剩余的1/3与备用的处理红曲米、处理腐竹,混匀,在0-10℃下经冷压榨处理,收集流出的油液三,备用;
F、精炼:
a、油液一精炼:向备用的油液一中加入2-3倍重量、浓度为4.0-5.0%的碱水溶液,在45-65℃下处理1-4小时,过滤,得碱处理油液一,备用;
b、油液三精炼:将备用的油液三在0.75-1.45MPa的压力下,经中性氧化铝柱过滤,控制流速20-30L/h,收集过柱油液三,备用;
G、脱色:
将备用的碱处理油液一、油液二和过柱油液三,混匀,得混合油液;再向混合油液中加入占其重量3.5-6.0%的中性硅藻土、5.0-7.0%的细沸石,并按5-10℃/min的升温速度,将加热至80-100℃,搅拌处理20-35min,过滤,得脱色油液,备用;
H、水洗:
向备用的脱色油液中加入2-4倍重量的沸水,搅拌15-25min,待其静置、分层,降至室温后,进行分离,收集油层液,备用;
I、精滤:
将备用的油层液,在0.25-1.25MPa压力下先经800目的板框压滤机过滤,再在同等压力下经超滤膜装置过滤,收集滤出的精滤油液,备用;
J、总混:
将上述重量份的葡萄籽油、茶油、橄榄油与备用的精滤油液,投入混合机中混匀,即得补钙保健葡萄籽油。
