一种黑茶饮料采用微波杀菌的生产方法,以黑茶为原料,在40~55℃热水中浸提20~30分钟;将浸提的茶汤经筛网过滤,除去茶叶残渣,然后迅速冷却到10℃以下;将冷却后的茶汤在2500r/min以上离心15min以上,抽滤;抽滤后的茶汤经0.2~0.5μm微孔滤芯过滤;将微滤后的茶汤在频率为150GMHz~200GMHz的微波处理器灭菌处理;灭菌处理后茶汤无菌灌装到得黑茶饮料。本发明灭菌技术先进,对黑茶饮料中的热敏、氧敏等物质能较好地保留,产品天然、健康,工艺简单,可大规模工业化生产等。

技术领域
本发明涉及食品工程技术领域,尤其涉及一种黑茶饮料采用微波杀菌的生产方法。
背景技术
微波杀菌是微波加热技术功能的延伸,与巴氏加热杀菌法比较,微波杀菌有以下显著特点:
A、 微波杀菌是一种物理杀菌方法,它不需要添加化学防腐剂就能够杀灭细菌、霉菌以及病毒等有害人体的微生物,它在杀灭有害微生物过程中,不会对食品残留毒性或放射性物质的污染,安全无害。也不会改变食品的色香味和营养成分。
B、 在同样杀菌温度下,所需杀菌时间短,不需要预热。如大肠杆菌杀灭时间约30S。在相同杀菌条件下,菌致死的温度比较低,且杀菌效果极为显著。
C、 能同时对被杀菌物料表里实施整体杀菌,极大地缩短杀菌周期,并保证杀菌一致性。
D、 由于物料各部位杀菌的同时性,杀菌时间短,能避免因长时间的加热影响食品品质,特别是对不宜在较高温度或较长加热时间情况下进行杀菌的食品。
E、 微波杀菌可分为包装后杀菌和包装前杀菌。
发明内容
本发明的目的是提供一种黑茶饮料采用微波杀菌的生产方法,将黑茶于热水中浸提,茶汤经筛网过滤后迅速冷却,离心去沉淀;茶汤经膜进一步过滤后,再经微波处理器灭菌,处理后的茶饮料中风味物质含量及色差均无明显变化,将其低温储藏9个月后,安全性和感观品质仍良好。
采用上述技术方案的有益效果是灭菌技术先进,对黑茶饮料中的热敏、氧敏等物质能较好地保留,产品天然、健康,工艺简单,可大规模工业化生产等。
具体实施方式
本发明所述的黑茶饮料采用微波杀菌的生产方法,其实施方式按以下步骤:
1、以黑茶为原料,在40~55℃热水中浸提20~30分钟; 
2、将浸提的茶汤经筛网过滤,去除茶叶残渣,然后迅速冷却到10℃以下; 
3、将冷却后的茶汤在2500r/min以上离心15min以上,抽滤; 
4、将抽滤后的茶汤经0.2~0.5μm微孔滤芯过滤; 
5、将微滤后的茶汤在频率为150GMHz ~200GMHz的微波处理器灭菌处理; 
6、将灭菌处理后茶汤无菌灌装,即得产品。

1.一种黑茶饮料采用微波杀菌的生产方法,其特征在于:以黑茶为原料,在40~55℃热水中浸提20~30分钟;将浸提的茶汤经筛网过滤,除去茶叶残渣,然后迅速冷却到10℃以下;将冷却后的茶汤在2500r/min以上离心15min以上,抽滤;抽滤后的茶汤经0.2~0.5μm微孔滤芯过滤;将微滤后的茶汤在频率为150GMHz ~200GMHz的微波处理器灭菌处理;灭菌处理后茶汤无菌灌装得到黑茶饮料。
