Abstract
本发明针对普通百宝饭的主要成分,提供了一种新的百宝饭的制作方法。本发明是这样实现的:将成熟、去皮、洗净、晒干的山药打成粉末后,加入百宝饭的除大米以外的其它成分,采用诸如:蒸、煮、炒等各种烹制手法,制作而成的不含大米的百宝饭。该百宝饭长期食用,可以起到健脾补肺、益胃补肾、固肾益精、聪耳明目、助五脏、强筋骨、长志安神、延年益寿的作用。

技术领域
本发明涉及一种民间食品,属食品加工领域。
背景技术
自古以来,中国民间就有喜食百宝饭的传统。所谓的百宝饭,就是指加入了很多对人体有益的成份的饭食如:土豆、各种小米、花生、红枣等。但最重要的一种成份:大米是不会改变的,并且其在百宝饭中的份量总归要占到40%以上。
山药又名:薯,土薯、山薯、山芋、山药、玉延。其气味:甘、温、平、无毒。作为中药,其可主治:①心腹虚胀,手足厥逆,不思饮食。②禁口痢。③小便数多。④痰风喘急。⑤脾胃虚弱,不思饮食。⑥湿热虚泄。⑦肿毒初起。⑧手足冻疮。一般以其根茎入药,滋养强壮,治脾胃亏虚等,也可作副食品和酿酒原料。
作为食物,其主要的营养功能包括:①健脾益胃、助消化。②山药含有淀粉酶、多酚氧化酶等物质,有利于脾胃消化吸收功能,是一味平补脾胃的药食两用之品。不论脾阳亏或胃阴虚,皆可食用。临床上常用治脾胃虚弱、食少体倦、泄泻等病症。③滋肾益精。山药含有多种营养素,有强健机体,滋肾益精的作用。大凡肾亏遗精,妇女白带多、小便频数等症,皆可服之;④益肺止咳:山药含有皂甙、黏液质,有润滑,滋润的作用,故可益肺气,养肺阴,治疗肺虚痰嗽久咳之症。⑤降低血糖:山药含有粘液蛋白,有降低血糖的作用,可用于治疗糖尿病,是糖尿病人的食疗佳品;⑥延年益寿:山药含有大量的黏液蛋白、维生素及微量元素,能有效阻止血脂在血管壁的沉淀,预防心血疾病,取得益志安神、延年益寿的功效;⑦抗肝昏迷。
山药无论是作为药用还是食用,均可适用于绝大多数人群,但因其有收涩的作用,故大便燥结者不宜食用;另外有实邪者忌食山药。别外,药与甘遂不要一同食用;也不可与碱性药物同服。
发明内容
本发明针对普通百宝饭的主要成份,提供了一种新的百宝饭的制作方法。
本发明是这样实现的:将传统的百宝饭中的主要成份大米改为山药末。即将成熟、去皮、洗净、晒干的山药打成粉末后,加入百宝饭的除大米以外的其它成份,采用诸如:蒸、煮、炒等各种烹制手法,制作而成不含大米的百宝饭。
本发明的有益效果是:该百宝饭长期食用,可以起到健脾补肺、益胃补肾、固肾益精、聪耳明目、助五脏、强筋骨、长志安神、延年益寿的作用。
具体实施方式
以下是具有浙江特色的一种山药百宝饭的制作实例。
将包括枣泥、桂圆肉、莲芯、米仁、糯米、豆沙等按一定比例合成,各种成分的数量以食用者的喜好为准。本例中均取总量的4%为配比百分丝,即4%的枣泥、4%的桂圆肉等,依次类推,另外加入10%的方块板油(猪油)垫底。除此之外就是加工好的山药末,山药末不可太粗,也不可太细,以能与其它成份均匀混合后加入少量的水捏成团不散开为宜。
将上述成份的混合物蒸熟之后,用碗倒入瓷盆之中。另加甜汤或食盐拌食,干湿适度,味道奇佳。
需要指出的是,在加工制作山药地,就注意以下几点:
①山药切片后需立即浸泡在盐水中,以防止氧化发黑。
②新鲜山药切开时会有黏液,极易滑刀伤手,可以先用清水加少许醋洗,这样可减少黏液。
③山药质地细腻,味道香甜,不过,山药皮容易导致皮肤过敏,所以最好用削皮的方式,并且削完山药的手不要乱碰,马上多洗几遍手,要不然就会抓哪儿哪儿痒。
④好的山药外皮无伤,带黏液,断层雪白,黏液多,水分少。皮可鲜炒,或晒干煎汤、煮粥。去皮食用,以免产生麻、刺等异常口感。
Claims (4)
1.一种以山药末代替大米的百宝饭,其特征在于:将成熟、去皮、洗净、晒干的山药打成粉末后,加入除大米以外的其它成份,采用蒸、煮、炒等各种烹制手法制作而成。
2.根据权利要求1所述的百宝饭,其特征在于:其它成份可以是包括枣泥、桂圆肉、莲芯、米仁、糯米、豆沙、猪油在内的一种或多种。
3.根据权利要求1所述的百宝饭,其特征在于:其食用方法可以是加甜汤拌食。
4.根据权利要求1所述的百宝饭,其特征在于:其食用方法可以是加食盐拌食。
