Abstract
L'invention concerne une substance exceptionnelle pouvant conférer la sensation de matière grasse animale à un produit alimentaire. Un agent conférant une sensation de matière grasse animale est caractérisé en ce qu'il contient, en tant que principes actifs, une huile et une matière grasse oxydées qui ne proviennent pas d'animaux. De plus, un agent conférant une sensation de matière grasse animale est caractérisé en ce qu'il contient, en tant que principe actif, un hydrolysat enzymatique d'une huile et d'une matière grasse oxydées qui ne proviennent pas d'animaux. De plus, une composition d'huile et de matière grasse pour conférer la sensation de matière grasse animale, caractérisée en ce qu'elle contient une huile et une matière grasse comestibles qui servent d'huile de base et une huile et une matière grasse oxydées qui ne proviennent pas d'animaux. De plus, une composition d'huile et de matière grasse pour conférer la sensation de matière grasse animale, caractérisée en ce qu'elle contient une huile et une matière grasse comestibles qui servent d'huile de base et un hydrolysat enzymatique d'une huile et d'une matière grasse oxydées qui ne proviennent pas d'animaux. L'utilisation de l'agent ou de la composition par incorporation de celui-ci dans un produit alimentaire permet de conférer au produit alimentaire la sensation de matière grasse animale.
