Abstract

PROCESSO PARA PRODUZIR MALTOBIONATO. O maltobionato tem um efeito antioxidante em produtos alimentícios e rações. O antioxidante pode ser produzido diretamente de amido ou maltose já presente no produto alimentício, utilizando processos enzimáticos catalisados. A produção do antioxidante pode ser executada em uma fração isolada de um produto alimentício do qual ele pode ser adicionado de volta para o processo de produção do alimento ou produto alimentício final. Alternativamente, o antioxidante pode ser produzido como uma parte integrante do processo de produção de alimentos, através da adição das enzimas relevantes no processo.
