Abstract

"PROCESSO PARA AUMENTAR A FIBRA ALIMENTAR TOTAL DE UMA FARINHA, COMPOSIçãO E MéTODO PARA PRODUZIR UM ALIMENTO". A farinha com alto teor de amilose pode ser processada por um tratamento hidrotérmico de curta duração para aumentar seu conteúdo de fibra alimentar total (TDF). Estas farinhas podem ser preparadas aquecendo-se uma farinha com alto teor de amilose a um conteúdo de água total de cerca de 10% a 50% em peso a uma temperatura de cerca de 80 a 160<198>C, por cerca de 0,5 a 15 minutos à temperatura objetivada. Esta invenção também se relaciona aos produtos que contêm a farinha de TDF alta, incluindo produtos alimentícios.
