composição flavorizante, produto, processo de melhorar o flavor de um alimento, de uma bebida ou de um produto farmacêutico, e, substância moduladora de flavor. a presente invenção em um primeiro aspecto refere-se às novas substâncias moduladoras de flavor de acordo com a fórmula (i) e/ou seus sais edíveis: r¹-cr²(or³)-co-nr^4^-y-x (i). foi verificado que substâncias representadas pela fórmula (i) podem ser vantajosamente usadas para conferir flavor desejável, especialmente atributos de gosto a alimentos, bebidas, e fármacos nos quais são incorporadas. em adição as citadas substâncias são vantajosamente aplicadas em composições flavorizantes, alimentqs, bebidas e fármacos. exemplos típicos de substâncias moduladoras de flavor de acordo com a presente invenção incluem n-lactoil-tiramina, n-gliconil-tiramina, n-lactoil-4-hidróxi-benzil-amina, n-lactoil-vanilil-amina e n-lactoil-dopamina.
