Abstract
"MéTODOS PARA A CONSERVAçãO DE PRODUTO FRESCO". A presente invenção se refere a métodos para a conservação de produtos frescos com um conservante de produto que estende a meia vida do produto fresco, em particular um produto fresco cortado, e que preserva a textura, aroma, aparência, qualidade crocante e cor do produto fresco, em particular a superfície exposta do produto fresco. O método compreende: proporcionar uma solução de conservação de produto que compreende: água, um cátion de conservação que é selecionado a partir do grupo que consiste em um íon de estróncio, íon de lítio, íon de bário, íon de alumínio, íon de cobre, íon de amónia, íon de ferro, íon de manganês, íon de potássio ou misturas dos mesmos; e íons ascorbato, ou íons eritorbato; onde os íons ascorbato ou eritorbato e o cátion conservador estão presentes em uma proporção molar de forma preferida a partir de 0,2:1 a 8:1, de forma mais preferida de 0,75:1 a 8:1, de forma ainda mais preferida de 1:1 a 4:1, e de forma especialmente preferida de 1,5:1 a 3:1; e de forma ainda especialmente preferida de 1,1:1 a 2,5:1; e aplicar o referido conservante de produto ao produto. A presente invenção se refere também ao produto fresco conservado com os conservantes de produto.
