"MéTODO PARA INATIVAçãO A PRESSãO ULTRA ALTA DE MICROORGANISMOS EM PRODUTOS DE SUCO" Trata-se de métodos para preparação de sucos que têm uma vida em prateleira extensa sem a necessidade de pasteurização. Tais métodos empregam pressão ultra alta (UHP) para substancialmente tornar inativos microorganismos associados a sucos. Os produtos tipo suco resultantes retêm muitas das características preferidas do suco fresco tais como sabor, nutrição, textura e cor, características que podem ser destruídas ou diminuídas pelo processamento térmico ou pasteurização.
