Abstract

Patente de Invenção: <B>"PROCESSO DE FABRICAçãO DE UM XAROPE RICO EM MALTOSE"<D> A invenção refere-se a um processo de fabricação de um xarope rico em maltose, que compreende as etapas sucessivas que consistem em: (a) efetuar uma liquefação de um leite de amido; (b) efetuar uma sacarificação do leite de amido liquefeito em presença de uma <225>-amilase e de pelo menos uma enzima desramificante escolhida no grupo constituído pelas pululanases e pelas isoamilases; (c) efetuar um peneiramento molecular do leite de amido liquefeito e sacarificado de maneira e recolher uma fração enriquecida em maltose e uma fração enriquecida em glicose; (d) colocar em contato a dita fração enriquecida em maltose com uma <244>-amilase maltogênica tendo em vista a obtenção de um xarope rico em maltose.
