Abstract

Patente de Invenção: <B>"CULTURAS DE INICIADOR BACTERIANO DE áCIDO LáCTICO E SUAS COMPOSIçõES"<D>. Métodos de aumento da taxa de crescimento e/ou de controle da atividade metabólica de bactérias de ácido láctico e de aumento da vida de prateleira e/ou da qualidade de um produto comestível usando-se organimos bacterianos de ácido láctico que são defeituosos em seu metabolismo de piruvato. São também providas composições de cultura de iniciador compreendendo tais bactérias de ácido láctico defeituosas como organismos auxiliares e cepas de cultura de iniciador bacteriano de ácido láctico. Organismos auxiliares úteis são cepas de Lactococcus que são defeituosas com relação a atividade de piruvato formiato liase (Pfl) e/ou de desidrogenase de lactato (Ldh). Os organismos auxiliares podem ultra-expressar um gene que codifica uma enzima de regeneração de NAD^ +^ tal como oxidase de NADH codificada por gene nox. (copiar o quadro numérico da pág.)
