Abstract

"PROCESSO PARA PRODUZIR UM PRODUTO DE CALDO DE CANA ESTABILIZADO E O RESPECTIVO PRODUTO". Um processo para prover um produto de caldo de cana estabilizado, para uso em refrigerantes, que incluem a provisão de talos de cana de açúcar limpos e extração do caldo de cana dos talos. Depois disso, o caldo de cana extraído é acidificado imediatamente após a extração, alimentando-o a uma solução consistindo em ácido ascórbico, para evitar a desoloração do caldo de cana, e também alimentado-o simultaneamente a uma solução ácida de um dentre ácido cítrico, ácido málico, ácido tartárico, ácido fosfórico e uma mistura destes, para redução do pH do caldo de cana baixo de 5. Além disso, uma dentre uma solução de citrato de sódio, uma solução, uma solução de citrato de potássio, uma solução de fosfato dibásico de sódio, ou uma mistura destes, é adicionada ao caldo de cana para estabilizá-lo. O caldo de cana é então coagulado e floculado, para remover resíduos e aromas indesejáveis.
