Abstract
"PROCESSO PARA A PREPARAçãO DE CEREAIS MALTADOS, CEREAL MALTADO, CEVADA MOLDADA, COMBINAçãO DE CEREAIS E USO DOS CEREAIS MALTADOS", no qual a etapa de umectação inclui um ou mais estágios até o material ter um teor de umidade entre 20 e 60% em peso, onde, após a germinação, os cereais maltados são preferivelmente secados em estufa, ao aumentar a temperatura até valores entre 40 e 150°C até o material ter um teor de umidade entre 2 e 15% em peso, e onde uma ou mais culturas microbianas selecionadas do grupo compreendendo uma ou mais bactérias e/ou um ou mais fungos, incluindo mofos e levedos, são adicionadas em uma ou mais ocasiões, quer antes, quer durante o processo de maltagem dos citados cereais, e onde pelo menos uma citada cultura microbiana é inoculada por meio de esporos ativados. Os citados esporos ativados estão significativamente mais entumecidos do que a dimensão dormente, mais particularmente a dimensão dos esporos é aumentada em um fator preferivelmente entre 1,2 e 10 em relação à dimensão dormente e/ou tendo um ou mais tubos germinais por esporo.
