Abstract

PURPOSE: In the production of seed malt of "Koji", embryo buds of grain are added to the culture bed, thereby seed malt having increased numbers of spores and being reduced in contamination by other microorganisms is obtained.
CONSTITUTION: In the production of seed malt of "Koji" used in brew industry producing "Miso" and "Shoyu", embryo buds of grain, e.g., rice, wheat, barley, corn, etc., are used as a part of components for culture bed to obtain good-quality seed malt having increased number of spores and containing less amount of other microorganisms. From the point of view of the price and stability of supply, corn embryo buds or defatted corn embryo buds, which are obtained as a by-product of corn starch industry and used mainly as a feed, are most preferred. The use of embryo buds keeps the culture bed appropriately porous and holds the water in the bed at a high level to increase the number of spores. The amount of embryo buds used is preferably less than 50% of the culture bed usually.
