Abstract
método para produção de massa seca, aparato para produção de massa seca e uso de um campo eletromagnético oscilante. um método para produção de massa seca compreendendo as etapas de: preparo com farinha de trigo duro ou farinha de trigo mole e água, de uma massa tendo umidade compreendida entre 25% e 35%; colocação da massa em uma câmara na qual cria-se vácuo compreendido entre 0,1 bar e 0,5 bar; pressão da massa através de um dispositivo de extração ao aplicar à massa pressão compreendida entre 80 bar e 110 bar para obter a massa alimentícia (p) na forma de unidades de massa longa ou unidades de massa curta; transporte e fornecimento da dita massa (p) a um secador (3, 4); secagem da dita massa (p) no dito secador (3, 4) até a umidade da massa (p) não ser superior a 12,5%, a dita secagem compreendendo aquecimento da dita massa (p) no dito secador (3, 4) a uma temperatura estabelecida e manutenção da massa na dita temperatura estabelecida durante um intervalo estabelecido; extração da dita massa seca (p) a partir do dito secador (3, 4); em que o dito aquecimento é obtido ao passar a massa (p) dentro de um campo eletromagnético oscilante que apresenta uma frequência compreendida entre 10 mhz e 100 mhz. um aparato (1; 1a) para produção de massa alimentícia seca (p) compreendendo uma amassadeira e dispositivo de extração (2) configurados para produção de massa longa e massa curta, um primeiro secador (3) configurado para secagem da massa longa produzida pela dita amassadeira e dispositivo de extração, um segundo secador (4) configurado para secagem da massa curta produzida pela dita amassadeira e dispositivo de extração; o dito primeiro secador (3) e o dito segundo secador (4) são equipados com uma pluralidade de pares de eletrodos (23, 24) entre os quais cria-se um campo eletromagnético oscilante a uma frequência compreendida entre 10 mhz e 100 mhz por um gerador (54) de campo eletromagnético oscilante.
