Abstract
é descrito um método de hidrólise de uma ligação alfa-1,5 glicosilfrutose em um sacarídeo (dissacarídeo ou oligossacarídeo) tal como leucrose. este método compreende o contato do sacarídeo com uma enzima alfaglicosidase tal como transglicosidase ou glicoamilase sob condições apropriadas e, durante essa etapa de contato, a enzima hidrolisa pelo menos uma ligação alfa-1,5-glicosilfrutose do sacarídeo. este método é útil, por exemplo, para reduzir a quantidade de leucrose em um filtrado isolado de uma reação de síntese de glucano.
