Abstract

a presente invenção refere-se a um método para preparar produtos à base de carne de músculo inteiro contendo óleo ou produtos à base de carne reconstituída que compreendem as etapas de injetar uma quantidade de salmoura (a) na(s) peça(s) de carne e tamblear a(s) peça(s) de carne injetada(s) juntamente com óleo e a uma quantidade de salmoura (b), em que a quantidade de salmoura (b) e o óleo são adicionados simultaneamente ao interior de um tambleador/massageador. adicionalmente, são descritos os produtos à base de carne obtidos por meio deste método.
