resumo método para o cozimento de alimentos contendo amido, e panela de alimentos a invenção propõe uma panela para alimentos. a panela para alimentos compreende um recipiente configurado para receber alimentos contendo amido e uma primeira porção de água; uma unidade de aquecimento acoplada ao recipiente; e um controlador acoplado eletricamente à unidade de aquecimento e configurado para controlar a unidade de aquecimento para aquecer uma mistura do alimento contendo amido e uma primeira porção de água no recipiente até uma primeira temperatura para gerar uma mistura aquecida, a primeira temperatura sendo maior que 110 ºc, e para resfriar a mistura aquecida no recipiente até uma segunda temperatura para gerar uma mistura resfriada quando a mistura do alimento contendo amido e uma primeira porção de água no recipiente tiverem sido aquecidas até uma primeira temperatura; em que o controlador controla as etapas repetidas de aquecimento e resfriamento por um dado número de ciclos.
