resumo “processo de produção de vinhos sem adição de anidrido sulfuroso por utilização de filmes com base em quitosana” a presente invenção refere-se a um processo de produção de vinho utilizando o processo de vinificação tradicional com a excepção de, após a fermentação, o vinho ser colocado em contacto com um filme à base de quitosana e sem adição de anidrido sulfuroso ao vinho. a presente invenção refere-se ainda a um processo de preparação do filme à base de quitosana por modificação da quitosana com compostos naturais que permitem produzir filmes de quitosana estáveis em meio ácido, com elevada actividade antioxidante e mantendo a actividade antimicrobiana. numa forma de realização, os filmes são preparados por ligação covalente à quitosana de moléculas que permitem aumentar a sua insolubilidade em meio ácido, como por exemplo a genipina, e de moléculas com elevada actividade antioxidante, como por exemplo o ácido cafeico ou extractos de uva ou vinho ricos em compostos com actividade antioxidante. 1/1
