Abstract
processo para obter fibra de cítricos a partir da polpa de cítricos. a presente invenção refere-se a um processo para a obtenção de fibra de cítricos a partir da polpa de cítricos. é obtida de cítricos tendo um valor de concentração da embalagem fechada c* de menos de 3,8. a fibra de cítricos pode ser obtida tendo uma viscosidade de no mínimo 1000 mpa.s, em que a referida fibra de cítricos é dispersada em água normalizada em uma velocidade de mistura de a partir de 800 rpm até 1000 rpm, to uma solução 3w% em peso de cítricos/standardized água solução, e em que a referida viscosidade é medida em uma taxa de cisalhamento de 5 s ^-1^ a 20<198>c. pode ser obtida fibra de cítricos tendo um valor cielab l* de no mínimo 90. a fibra de cítricos pode ser usada em produtos alimentares, em produtos de ração, em bebidas, em produtos de cuidados pessoais, em produtos farmacêuticos ou em produtos detergentes.
