Abstract
café saudável e métodos de produção do mesmo. a presente invenção refere-se a um método para produção de uma msitura de café e à mistura de café obtida por esse método, em que a mistura de café é caracterizada pelo fato de que uma bebida de café preparada da mistura de café contém quantidades elevadas de ácidos clorogênicos (cga) e cátions de n-metilpiridínio (nmp) e, opcionalmente, baixas quantidades de ácido 5-hidroxitriptamidas carboxílico (c5-ht) tendo uma atividade antioxidante superior.
