Abstract

"CONCENTRADOS DE PROTEìNA DO LEITE MODIFICADOS E USO DOS MESMOS NA OBTENçãO DE GéIS E DE PRODUTOS DE INDúSTRIA DE LATICìNIOS". A presente invenção refere-se a um processo da invenção que produz concentrados de proteína do leite modificados que usa troca catiónica para substituir íons divalentes por íons monovalentes. O concentrado de proteína do leite modificado produzido pode ser convertido em um gel que pode ser ele mesmo um produto semelhante a queijo ou usado para a obtenção de produtos finais tais como queijos, produtos semelhantes a queijos, produtos de antepasto, sobremesas, produtos de confeitaria e produtos alimentícios intermediários.
