Abstract

"PROCESSO PARA PRODUZIR TEMPEROS E TEMPERO QUE PODE SER SERVIDO EM COLHER OU DESPEJADO". A presente invenção refere-se a um processo para a produção de temperos emulsificados que podem ser servidos em colher e podem ser despejados, sendo que um misturador/emulsificador em linha que compreende pelo menos um conjunto de rotor e estator alinhados é usado para produzir a emulsificação final das várias fases de material cru. O rotor e o estator compreendem uma pluralidade de dentes que possuem palhetas, vãos e paredes geralmente inclinadas com uma ranhura definida pelas palhetas e vãos e geralmente, pelas paredes laterais inclinadas. As dimensões da ranhura são ajustáveis em certos incrementos e a velocidade do motor que aciona o rotor pode ser variada enquanto o misturador/emulsificador em linha está processando os ingredientes. O processo permite a emulsificação final das fases do material cru com uma única passada através do misturador/emulsificador em linha.
