Abstract

"GORDURA DE MATéRIA-PRIMA DURA, PROCESSO PARA A PREPARAçãO DA MESMA, FASE DE GORDURA ESCOáVEL, E, USO DE UMA GORDURA DE MATéRIA-PRIMA DURA". A invenção atual fornece uma gordura de matéria-prima dura que é adequada para estabilizar uma dispersão de uma fase não gordurosa em um óleo de triglicerídeos, incluindo margarinas líquidas, cuja gordura de matéria-prima dura consiste de uma mistura de triglicerídeos, caracterizada pelo fato de: pelo menos dois glicerídeos tendo um ponto de fusão > 55<198>C cada um deles tem uma concentração de pelo menos 5% em peso, a quantidade de triglicerídeos tendo resíduos de ácidos graxos com uma diferença em comprimento de cadeia entre o resíduo de cadeia mais longa e o de cadeia mais curta de pelo menos quatro átomos de carbono, é pelo menos 15% em peso, e a quantidade de triglicerídeos com um ponto de fusão de 25-55<198>C é <243> 25% em peso.
