Abstract

"GORDURA QUE COMPREENDE UMA MISTURA DE TRIGLICERìDEOS, PROCESSO APROPRIADO PARA PREPARAçãO DA GORDURA DE TRIGLICERìDEO, PROCESSO DE PREPARAçãO DE ESPALHANTE EM EMULSãO DE áGUA EM óLEO COMESTìVEL E ESPALHANTE". Gordura apropriada como fase graxa para a fabricação de espalhantes com baixo teor de gordura que são estáveis sob temperaturas ambiente elevadas, em que a gordura compreende uma mistura de triglicerídeos, na qual 2,5 a 5,5% em peso dos triglicerídeos são HHH triglicerídeos, 25 a 65% em peso, preferencialmente 25 a 55% em peso dos HHH triglicerídeos são triiglicerídeos monoácidos e os HHH triglicerídeos restantes são compostos de resíduos de ácidos graxos misturados, 1,5 a 5% em peso dos triiglicerídeos são HHM e HMH triglicerídeos, pelo menos 85% em peso dos resíduos de ácidos graxos H em HHM e HMH são resíduos de ácido palmítico, em que H indica resíduos de ácidos graxos saturados que possuem comprimentos de cadeia de mais de quinze átomos de carbono e M indica resíduos de ácidos graxos saturados que possuem comprimentos de cadeia de doze ou quatorze átomos de carbono e em que o resíduo M é colocado no meio ou em uma das posições terminais. Essa fase graxa pode ser obtida através da incorporação em óleo de triglicerídeo de gordura A e gordura B em que a gordura A e a gordura B juntas representam de 6 a 15% em peso da gordura e a razão em peso A/B encontra-se na faixa de 1/9 a 4/6, caracterizada pelo fato de que, na gordura A, pelo menos 50% em peso dos triglicerídeos são completamente saturados, pelo menos 80% em peso dos resíduos de ácidos graxos saturados componentes possuem comprimento de cadeia de dezesseis átomos de carbono (P) ou dezoito átomos de carbono (S), em que a razão P:S encontra-se na faixa de 75:25 a 25:75, até 5% em peso dos resíduos de ácidos graxos saturados possuem comprimento de cadeia de doze ou quatorze átomos de carbono e, na gordura B, pelo menos 20% em peso, preferencialmente pelo menos 25% em peso dos triglicerídeos consistem de HHM e HMH triglicerídeos.
