Alcoholvrije wijn en bereiding ervan.
Er is een voortdurende consumentenvraag naar lage-calorie voedsel en drank. De marktgroei en penetratie van lage-calorie soft drinks en lichte bieren zijn dramatisch gestegen. De wijnindustrie heeft recent verscheidene lage-calorie wijnen geintroduceerd, die voor de consument aantrekkelijk blijken te zijn. Rekening houdend met deze trend zijn verscheidene alcoholvrije wijnen geintroduceerd, maar met twijfelachtige en variërende mate van acceptatie vanwege de kwaliteit. Van veel groter belang is echter de steeds toenemende behoefte aan alcoholvrije drank voor degenen die gekozen hebben voor het niet gebruiken van alcohol om diverse redenen en voor degenen, die een drankprobleem hebben. Er blijft dus een behoefte bestaan aan een voor de consument acceptabele alcoholvrije wijn van verbeterde kwaliteit.
In het verleden zijn er pogingen ondernomen voor de produktie van niet-alcohol-wijn, onder gebruikmaking van destillatie en/of verdamping. De resulaten van dergelijke pogingen duiden in het algemeen op slechte kwaliteit. Deze processen gingen gepaard met hetzij hoge temperaturen, hetzij lange verblijfstijden ten gevolge van de aard van de toegepaste installatie. Zoals verwacht zou worden zou een grote vermindering van het originele water en dientengevolge concentratie van de niet vluchtige zuren plaatsvinden.
Een hoofddoel van de uitvinding is het verschaffen van een alcoholvrije wijn, die beantwoordt aan de vereiste en/of de behoefte van de consument, die niet werd beantwoord door andere wijn, die thans in de Verenigde Staten of daarbuiten wordt verkocht, een wijn met aanzienlijk minder calorieën, aantrekkelijke smaak en bovenal praktisch geen alcohol.
Een ander doel is een alcoholvrije wijnproduktiemethode, die gedurende het gehele jaar kan worden toegepast en ingezet, zonder beperking ten aanzien van oogsttijden of seizoenen van het jaar.
Nog een ander doel is het gebruiken van een gerede tafelwijn en deze om te zetten in een lage-calorie,

alcoholvrije wijn.
Een verder doel is het verschaffen van een verbeterde werkwijze voor de omzetting van een gerede tafelwijn in een alcoholvrije wijn. waarbij praktisch alle toegevoerde wijn zonder de alcohol en sterk vluchtige bestanddelen in het eindprodukt terug te vinden is.
Nog een ander doel van de uitvinding is het verschaffen van een dampvormig bijprodukt van goede kwaliteit bij hetalcoholvrije-wijnproduktieproces, dat een superieure kwaliteit cognacalcohol is.
De term"alcoholvrij", zoals in de aanvrage gebruikt, is een van wijn afgeleide drank met een alcoholgehalte van minder dan 0, 5 %, dat door het Bureau of Alcohol, Tobacco Produkts en Firearms Division van het U. S. Treasury Department niet wordt beschouwd als een wijn voor belastingdoeleinden.
Het zal duidelijk zijn, dat wanneer deze grens variëert ook de term"alcoholvrij"dienovereenkomstig zal variëren.
De figuur is een schematische weergave van het werkschema van de alcoholvrije wijnproduktiewerkwijze volgens de uitvinding.
In de figuur wordt een uitvoeringsvorm volgens de uitvinding geillustreerd, waarbij een wijnvoormengsel wordt behandeld en omgezet in een alcoholvrije wijn en een superieur cognacalcoholbijprodukt. Hiertoe wordt een originele gerede tafelwijn uit tank 10, normaal met 11-12 % alcoholgehalte en gedemineraliseerd en/of gedestilleerd water uit tank 12 overgebracht in een mengtank 14, waarin een wijnvoormengsel wordt gevormd. Elk type mengsysteem kan worden gebruikt, waaronder een pomp of mechanische roerder. Een verhouding van ca. 58 % aangevoerde wijn tot 42 % water levert een werkbaar voormengsel op. In elk geval heeft het voormengsel een alcoholgehalte van 6-7 % en volgens een succesvolle uitvoeringsvorm van de uitvinding heeft het voormengsel een alcoholgehalte van ca.
6, 8 %. Zoals hierna duidelijk zal worden worden door toevoeging van water de essentiële karakteristieke en organoleptische eigenschappen van de originele tafelwijn beschermd en behouden, zonder degradatie of aantasting tijdens de daarop volgende bewerkingsstappen. Er wordt voldoende water toeqe- voegd aan de toegevoerde wijn voor het voormengsel om een

alcohol-verminderde basiswijn te bereiken, die een uiteindelijke verlaging van alcohol door water tot beneden 0, 5 % mogelijk maakt en het originele aangevoerde wijngehalte in het eindprodukt op ca. 50 % te houden (ongeacht of het uiteindelijke watergehalte afkomstig is van de aangevoerde wijn of het toegevoegde water).
Het wijnvoormengsel wordt vervolgens overgebracht in een centrifugale filmverdamper 16, die het voormengsel vermindert in een vloeibare fase, die een alcohol-verminderde basiswijn is, die daaruit wordt overgebracht in een vat 18 en een dampfase, die wordt gecondenseerd. De centrifugale filmverdamper 16 is in de boven genoemde octrooiaanvragen nader beschreven. Voor het onderhavige doel is de verdamper 16 commerciëel verkrijgbaar bij Alfa-Laval AB, Lund, Zweden, onder zijn handelsnaam CMF6 en CMF9. Anders dan in specifieke toepassingen wordt de toevoersnelheid van het voormengsel voldoende verlaagd ter verkrijging van een basiswijn met minder dan 1 % alcohol. In sommige gevallen wordt de snelheid verlaagd tot eenderde, teneinde contact van de vloeistof als een dunne film op de stoomverhitte kegels van de verdamper te waarborgen.
Bovendien wordt de werkwijze volgens de uitvinding uitgevoerd bij zeer hoge vacuumcondities. De contacttijd van het voormengsel met de verhitte transferoppervlakken van de verdamper is zeer kort en minder dan een seconde ; met het gevolg dat er geen moleculaire ontleding of omzetting plaatsvindt ten gevolge van chemische reactie. De alcohol-verminderde basiswijn, die de verdamper 16 verlaat, heeft een alcoholgehalte van 0, 5-1 % en in overeenkomstig succesvolle toepassing van de uitvinding zal het alcoholgehalte normaal tussen 0,70 en 0,8 % en bij voorkeur 0,75 % alcohol zijn. Bovendien bedraagt de opbrengst 60-65 % van de toegevoerde wijn.
Verwijzend thans naar het dampfasesysteem, kan de dampfase, afkomstig van de verdamper 16, worden verwerkt overeenkomstig de in de Amerikaanse octrooiaanvrage 341. 363 beschreven wijze, of kan de dampfase worden blootgesteld aan een herdestillatie in de kolom 20, die van het type kan zijn als beschreven in de Amerikaanse octrooiaanvrage serienummer 445.064. Evenzo wordt het hogere dampprodukt gecondenseerd en

gekoeld binnen de condensator 22, overgebracht in een vat 23 en dan vervolgens in een opslagtank 24 door middel van pomp 26 via terugslagcontroleklep 28. Een vacuum voor het systeem wordt verkregen via vacuumpomp 29, die is aangesloten op het vat 18, zoals in de tekening weergegeven.
Een refluxretourleiding 30 met rotometer 32 voert het hogere nevenprodukt terug naar de top van de kolom 20 via de refluxcontroleklep 33, teneinde het destillatieproces te vergemakkelijken en te bevorderen.
Pomp 34 onttrekt de alcohol-verminderde basiswijn aan de verdamper 16 in vat 18. Deze basiswijn wordt dan afgekoeld door middel van warmte-uitwisselaar 36 en vervolgens overgebracht in opslagtank 37. De essentiële karakter-en organoleptische eigenschappen van de originele aanvoerwijn, waaronder de pH, worden behouden door de alcoholvrije basiswijn in tank 37. Enig origineel bouquet raakt echter verloren door de verwijdering van de hoge alcoholen door de verdamper 16. Volgens de onderhavige uitvinding wordt dientengevolge druivensapconcentraat toegevoegd, teneinde smaak en bouquet te herstellen. Het concentraat wordt verkregen in de AlfaLaval-verdamper, met het gevolg dat een dergelijk concentraat geen moleculaire ontleding of omzetting ten gevolge van chemi- sche reactie vertoont.
Deze toevoeging kan direct in tank 37 vanuit het druivensapconcentraatvat 38 plaatsvinden, of misschien bij een andere locatie in het proces, indien dat gewenst is of meer praktisch lijkt. Dit mengsel zal gewoonlijk ca. 0, 6 % alcohol bevatten en kan worden gefiltreerd via filter 39, dat van het milliporiëntype kan zijn.
De overige werkwijzestappen kunnen kort daarna, of op een later tijdstip bij de fabriek, wijnmakende faciliteit of bij een verwijderde bottelingsfabriek plaatsvinden.
Wanneer de bottelingsfabriek zich in een andere plaats bevindt, kan het mengsel van de alcoholbasiswijn en het druivensapconcentraat gemakshalve worden overgebracht in tank 40.
Verder gedemineraliseerd water uit tank 41 zal worden toegevoegd samen met citroenzuur uit bron 42, alsmede nog meer druivensapconcentraat uit bron 43. Het citroenzuur draagt bij tot het mondgevoel en de gewenste graad van scherpte en zuurte.

Het toegevoegde druivensapconcentraat zorgt tenslotte voor de instelling van de organoleptische graad van smaak. Het alcoholgehalte van het mengsel wordt nu verlaagd tot een gehalte beneden 0 5 5 %. Daarna wordt het mengsel gefiltreerd bij station 44 met behulp van een milliporiënfilter. Carbonisatie (CO) wordt vervolgens geintroduceerd bij station 48. Normaal is 350-400 g/100 ml voor dit doeleinde voldoende, teneinde een voorgeschreven niveau van mousseren ter verbetering van de tactuele eigenschappen te verkrijgen. Vervolgens kan aan het mengsel zwaveldioxide (SO2) worden toegevoegd als conserveermiddel. Bij bottelingstation 52 wordt het mengsel overgebracht in flessen met behulp van conventionele tegendruk-vulinstallatie, gevolgd door afsluiten van de flessen.
Teneinde conservering van het gebottelde mengsel te completeren kan desgewenst of indien noodzakelijk, een pasteurisatietrap 54 worden toegepast.
Geschikt druivensapconcentraat, dat bij de uitvinding kan worden toegepast voor de bereiding van een alcoholvrije witte wijn, uitgaande van een chablis-toevoerwijn, zijn de Muscaat en mengsels daarvan, met als grootste hoeveelheid Thompson-of Franse Columbard-zaadvrij druivensap, in de hoeveelheid van 20-10 % tot 80-90 %. Bij het mengen van alcoholvrije rosêwijn, een Malvasia Bianco-of Muscaatconcentraat kan worden gebruikt in plaats van het Muscaat in dezelfde verhouding.
Bovendien kan aan de alcoholvrije witte wijndrank voor het geven van een kleur Red Concord-druivesapconcentraat worden toegevoegd, samen met voldoende Muscaat onder verlenign van een rosékarakter. Evenzo kan bij de bereiding van een alcoholvrije rode wijn voldoende Red Concord-druivensapconcentraat worden toegevoegd aan de alcoholvrije witte wijndrank voor het verkrijgen van de gewenste rode wijnkleur.
Opgemerkt wordt dat de alcoholvrije drinkbare witte wijndrank eveneens gebruikt kan worden voor de bereiding van een champagne. In dit verband is een gist-type karakter gezocht ; waartoe hetzij een toevoegsel kan worden geintroduceerd, hetzij de drank kan worden onderworpen aan verdere fermentatie met hetzelfde effect.
Met het oog op het toevoegen van zwaveldioxide

als conserveermiddel of in samenhang daarmee, kan de gerede en gebottelde alcoholvrije wijndrank worden gepasteuriseerd overeenkomstig conventionele technieken, voor het elimineren van mogelijke bacteriën, gist of andere organismen en/of sporen. Bovendien kan de CMF-inrichting worden gebruikt voor afdampingspasteurisatie door blootstelling van de dunne film basiswijn met gedemineraliseerd water uit tank 37 aan konustemperaturen van ca. 76, 7 C, zonder toepassing van verdampingsvacuum.
De volgende voorbeelden beschrijven de wijze van en de werkwijze voor het toepassen van de uitvinding en illustreren de beste wijze van uitvoeren van de uitvinding, zonder de uitvinding daartoe te beperken. Bij het uitvoeren van deze en andere voorbeelden zijn de chemische analyseresultaten bepaald aan de hand van gaschromatografie.
VOORBEELD I
Onder toepassing van het boven beschreven apparaat en systeem en zoals weergegeven in de figuur, werd een op dronk zijnde Californische witte chablis-toevoerwijn met 11,2 % alcohol als volgt bewerkt, onder toepassing van een AlfaLaval-CMF6 en de volgende parameters.
Eerst werd een voormengsel gemaakt in mengtank 14 met een alcoholgehalte van 6,35 % door mengen van 4390 l van de toevoerwijn met 3293 l gedemineraliseerd water.

De aldus verkregen basis wijn werd vermengd met ca. 700 l wit druivensapconcentraat (bij 620 Brix) in tank 37.
Na overbrenging in tank 40 werd de laatste menging uitgevoerd onder gebruikmaking van het mengsel van 64 % basiswijn (met concentraat), 9,5 % wit druivensapconcentraat (bij 620 Brix) en 26,5 % gedemineraliseerd water. Er werd ca. 1,58 kg citroenzuur toegevoegd, waarna het mengsel werd afgefiltreerd.
Bovendien werd 0, 22 kg SO2/3985 1 vloeistof toegevoegd als conserveringsmiddel. De drank werd gecarboneerd door toevoeging van en 37020 mg/100 ml CO.
Het eindprodukt werd gebotteld, onder oplevering van een produkt met het gewenste karakter van de originele chablis-toevoerwijn, in de vorm van een alcoholvrije witte wijndrank met een alcoholgehalte van 0, 45 %.

Onder toepassing van het eerder beschreven apparaat en systeem en zoals aangegeven in de figuur, werd 3656 l van een op dronk zijnde Californische rosé-toevoerwijn gemengd met 2172 l gedemineraliseerd water, onder oplevering van een voormengsel met een alcoholgehalte van 7,42 %. De aldus verkregen basiswijn werd vermengd met ca. 700 l wit druivensapconcentraat in tank 37. Na overbrengen in tank 40 werd de laatste menging uitgevoerd, onder gebruikmaking van 64 % basiswijn (met concentraat), 1, 5 % rood druivensapconcentraat voor de kleur, 8 % wit druivensapconcentraat en 100,3 l gedemineraliseerd water.
Ca. 1,58 kg/3785 l citroenzuur/3785 l vloeistof werd toegevoegd, waarna het mengsel werd afgefiltreerd. Bovendien werd 0, 22 kg SO2/3785 1 vloeistof toegevoegd als conserveermiddel. De drank werd gecarboneerd door toevoeging van 370+20 mg/100 ml CO.
Het eindprodukt bleek na botteling het gewenste karakter van de originele rosé-toevoerwijn te hebben en bleek een alcoholvrije rosé-wijnrank te zijn met een alcoholgehalte van 0,43 %.
VOORBEELD III
Onder toepassing van de procedure en het apparaat van voorbeeld I en de figuur, werd een Californische chablistoevoerwijn behandeld, onder oplevering van een alcoholvrije wijndrank. Chemische analyse van de originele chablis-toevoerwijn, het voormengsel, de alcoholvrije wijnbasis, de basis met concentraat in tank 37 en de gerede gebottelde alcoholvrije witte wijndrank is vermeld in tabel A.

Van bijzondere betekenis bij het verkrijgen van een acceptabele alcoholvrije wijndrank volgens de uitvinding met de gewenste organoleptische eigenschappen, onder behoud van het gewenste karakter van de originele op dronk zijnde toevoerwijn, zijn de volgende resultaten gebaseerd op chemische gegevens en analyse, vergelijkbaar met de voorgaande tabellen : i. de hydroxymethylfurfuralconcentratie is verlaagd tot een niveau beneden 1/10 gram/100 liter. Dit bestanddeel draagt bij tot een gekookt karakter. ii. De furfuralconcentratie is verminderd met ca.
1/3 tot 1/2. iii. Het tannine is verlaagd met ca. 1/2. Tannine verleent een scherp karakter.
Gebottelde alcoholvrije, witte, rosé-en rode wijnen volgens de uitvinding bevattende volgende bestanddelen : gedealcoholiseerde wijn 57, 0 % gereconstitueerd druivensapconcentraat 42,6 % (concentraat en water) kooldioxide (370 mg/100 ml) 0,37 % citroenzuur (1,58 kg/3785 1) 0,042 % zwaveldioxide (170 dpm totaal) 0,017 %.
De diverse hiervoor genoemde doelen en voordelen zijn op de meest effectieve wijze verkregen. Ofschoon diverse enigszins de voorkeur verdienende uitvoeringsvormen hierbij in detail zijn beschreven, zal het duidelijk zijn dat de uitvinding op generlei wijze hiertoe is beperkt.

There is an ongoing consumer demand for low-calorie food and drink. Market growth and penetration of low-calorie soft drinks and light beers have increased dramatically. The wine industry has recently introduced several low-calorie wines, which appear to be attractive to the consumer. Taking this trend into account, several non-alcoholic wines have been introduced, but with questionable and varying degrees of acceptance due to the quality. Of far greater importance, however, is the ever-increasing need for non-alcoholic drinks for those who have chosen not to consume alcohol for various reasons and for those who have a drinking problem. Thus, there remains a need for an alcoholic wine of improved quality acceptable to the consumer.
In the past, attempts have been made to produce non-alcohol wine using distillation and / or evaporation. The results of such attempts generally indicate poor quality. These processes were associated with either high temperatures or long residence times due to the nature of the installation used. As would be expected, a great reduction of the original water and consequent concentration of the non-volatile acids would occur.

A further object is to provide an improved method for converting a finished table wine into an alcohol-free wine. whereby practically all the wine supplied without the alcohol and highly volatile constituents can be found in the end product.
Yet another object of the invention is to provide a good quality vaporous by-product in the alcohol-free wine production process, which is a superior quality cognac alcohol.
The term "alcohol-free", as used in the application, is a wine-derived beverage with an alcohol content of less than 0.5%, which is not considered by the U.S. Treasury Department's Bureau of Alcohol, Tobacco Produkts, and Firearms Division a wine for tax purposes.
It will be understood that as this limit varies, the term "alcohol-free" will also vary accordingly.
The figure is a schematic representation of the working scheme of the alcohol-free wine production process according to the invention.
The figure illustrates an embodiment of the invention wherein a wine premix is treated and converted into an alcohol-free wine and a superior cognac alcohol by-product. The wine premix is then transferred into a centrifugal film evaporator 16, which reduces the premix into a liquid phase, which is an alcohol-reduced base wine, which is transferred therefrom into a vessel 18 and a vapor phase, which is condensed. The centrifugal film evaporator 16 is described in more detail in the above-mentioned patent applications. For the present purpose, the evaporator 16 is commercially available from Alfa-Laval AB, Lund, Sweden, under its trade names CMF6 and CMF9. Unlike in specific applications, the premix feed rate is reduced sufficiently to provide a base wine with less than 1% alcohol. In some cases, the speed is reduced to one-third, to ensure contact of the liquid as a thin film on the steam-heated cones of the evaporator.
Moreover, the method according to the invention is carried out at very high vacuum conditions. The contact time of the premix with the heated transfer surfaces of the evaporator is very short and less than one second; with the result that no molecular decomposition or conversion takes place due to chemical reaction. The alcohol-reduced base wine leaving the evaporator 16 has an alcohol content of 0.5-1% and, in accordance with successful practice of the invention, the alcohol content will normally be between 0.70 and 0.8%, and preferably 0.75% be alcohol. Moreover, the yield amounts to 60-65% of the wine supplied.
Referring now to the vapor phase system, the vapor phase from the evaporator 16 may be processed in the manner described in U.S. Patent Application 341,363, or the vapor phase may be exposed to redistillation in column 20, which may be of the type as described in U.S. Patent Application Serial No. 445,064. Likewise, the higher vapor product is condensed and

cooled within the condenser 22, transferred into a vessel 23 and then into a storage tank 24 by means of pump 26 via non-return check valve 28. A vacuum for the system is obtained via vacuum pump 29, which is connected to the vessel 18, as shown in the drawing displayed.
A reflux return line 30 with rotometer 32 returns the higher by-product to the top of column 20 through the reflux control valve 33 to facilitate and promote the distillation process.
Pump 34 extracts the alcohol-reduced base wine from the evaporator 16 in barrel 18. This base wine is then cooled by heat exchanger 36 and then transferred to storage tank 37. The essential character and organoleptic properties of the original supply wine, including the pH , are retained by the alcohol-free base wine in tank 37. However, some original bouquet is lost due to the removal of the high alcohols by the evaporator 16. According to the present invention, grape juice concentrate is consequently added in order to restore taste and bouquet. The concentrate is obtained in the AlfaLaval evaporator, with the result that such a concentrate does not exhibit molecular decomposition or conversion due to chemical reaction.
This addition can be made directly in tank 37 from the grape juice concentrate vessel 38, or perhaps at a different location in the process, if desired or seems more practical. This mixture will usually contain about 0.6% alcohol and can be filtered through filter 39, which can be of the millipore type.
The remaining process steps may be shortly thereafter, or at a later time at the factory, winemaking facility, or a removed bottling plant.
When the bottling plant is in another place, the mixture of the alcohol base wine and the grape juice concentrate can be conveniently transferred to tank 40.
Further demineralized water from tank 41 will be added along with citric acid from source 42, as well as more grape juice concentrate from source 43. The citric acid contributes to the mouthfeel and the desired degree of sharpness and acidity.

The added grape juice concentrate finally adjusts the organoleptic degree of taste. The alcohol content of the mixture is now reduced to a level below 0.5%. The mixture is then filtered at station 44 using a millipore filter. Carbonization (CO) is then introduced at station 48. Normally 350-400 g / 100 ml is sufficient for this purpose in order to obtain a prescribed level of sparkling to improve tactual properties. Sulfur dioxide (SO2) can then be added to the mixture as a preservative. At bottling station 52, the mixture is transferred into bottles using conventional back pressure filling equipment followed by sealing of the bottles.
In order to complete preservation of the bottled mixture, a pasteurization step 54 may be used if desired or if necessary.
A suitable grape juice concentrate that can be used in the invention for the preparation of an alcohol-free white wine from a chablis feed wine are the Muscat and mixtures thereof, with the largest amount of Thompson or French Columbard seed-free grape juice, in the amount of 20-10% to 80-90%. When mixing non-alcoholic rosé wine, a Malvasia Bianco or Muscat concentrate can be used in place of the Muscat in the same ratio.
In addition, the alcohol-free white wine drink can be added to give a color Red Concord grape juice concentrate, along with sufficient Muscat under a rosé character. Likewise, in the preparation of an alcohol-free red wine, sufficient Red Concord grape juice concentrate can be added to the alcohol-free white wine drink to achieve the desired red wine color.
It is noted that the alcohol-free drinkable white wine drink can also be used for the preparation of a champagne. In this regard, a yeast-type character has been sought; for which either an additive can be introduced, or the beverage can be subjected to further fermentation with the same effect.

as a preservative or in connection therewith, the finished and bottled non-alcoholic wine drink may be pasteurized according to conventional techniques, to eliminate possible bacteria, yeast or other organisms and / or spores. In addition, the CMF device can be used for evaporation pasteurization by exposing the thin film base wine with demineralized water from tank 37 to cone temperatures of about 76.7 C, without using an evaporation vacuum.
The following examples describe the manner and method of practicing the invention and illustrate the best mode of carrying out the invention without limiting the invention thereto. In carrying out these and other examples, the chemical analysis results were determined by gas chromatography.
EXAMPLE I
Using the apparatus and system described above and as shown in the figure, an intoxicated California white chablis feed wine with 11.2% alcohol was processed as follows, using an AlfaLaval-CMF6 and the following parameters.
First, a premix was made in mixing tank 14 with an alcohol content of 6.35% by mixing 4390 l of the feed wine with 3293 l of demineralized water.

The base wine thus obtained was mixed with approx. 700 l of white grape juice concentrate (at 620 Brix) in tank 37.
After transfer to tank 40, the final mixing was performed using the mixture of 64% base wine (with concentrate), 9.5% white grape juice concentrate (at 620 Brix) and 26.5% demineralized water. About 1.58 kg of citric acid was added and the mixture was filtered off.

The base wine thus obtained was mixed with about 700 l of white grape juice concentrate in tank 37. After transfer to tank 40, the final mixing was carried out, using 64% base wine (with concentrate), 1.5% red grape juice concentrate for the color, 8 % white grape juice concentrate and 100.3 l demineralized water.
Approx. 1.58 kg / 3785 l citric acid / 3785 l liquid was added and the mixture was filtered off. In addition, 0.22 kg of SO2 / 3785 L of liquid was added as a preservative. The drink was carbonated by adding 370 + 20 mg / 100 ml CO.
The final product, after bottling, was found to have the desired character of the original rosé supply wine and was found to be an alcohol-free rosé vine with an alcohol content of 0.43%.

Of particular significance in obtaining an acceptable alcohol-free wine drink according to the invention with the desired organoleptic properties, while retaining the desired character of the original drinking wine, the following results are based on chemical data and analysis, similar to the previous tables : i. the hydroxymethylfurfural concentration has been reduced to a level below 1/10 gram / 100 liter. This ingredient contributes to a cooked character. ii. The furfural concentration has decreased by ca.
1/3 to 1/2. iii. The tannin has been reduced by about 1/2. Tannin gives a sharp character.
Bottled non-alcoholic, white, rosé and red wines according to the invention containing the following ingredients: De-alcoholised wine 57.0% reconstituted grape juice concentrate 42.6% (concentrate and water) carbon dioxide (370 mg / 100 ml) 0.37% citric acid (1, 58 kg / 3785 1) 0.042% sulfur dioxide (170 ppm total) 0.017%.
The various aforementioned goals and advantages have been obtained in the most effective manner. While various somewhat preferred embodiments have been described in detail herein, it will be understood that the invention is in no way limited thereto.
