Le produit à découper 33 voir figo 3 étant placé dans l'évoi- dement 11 du balancier 7on met en marche le moteur 17 et ainsi le couteau 13 prend la vitesse de rotation déterminée.
On tourne s'il y a lieu le bou- ton 26 pour régler la distance voulue (épaisseur de la tranche) entre le plateau 20 et la face du côté intérieur du balancier 7 qui se présente en regard du couteau 13 On saisit alors la poignée 8 et en imprimant au ba- lancier 7 un mouvement de va et vient ce dernier se déplace à la manière

On remarquera que la construction de la machine est très économique et se prête à un démontage rapide de tous les organes devant tre nettoyés et ceci sans le concours
d'aucun outil ce qui est particu- lièrement importante car souvent les outils s'égarent et ne sont plus à portée lorsque on en a besoin @ Ainsi$ le balancier 7 après avoir été glissé vers le haut de manière que le roulement à billes 4 arrive dans le fond opposé de lévidement 5 pourra être soulevé et ainsi retiré de la machine. La partie 2a du bâti formant couvercle sera maintenue sur le bâti 2 au moyen de dispositifs connus à pression ou à ressorts, ce qui permet de soulever aisément cette partie 2a pour le nettoyage ou la visite du moteur 17., du couteau 13 de la courroie 15 éventuellement retendre cette dernière.
Le socle 1 et le bâti 2-2a seront coulés en un matériau inoxydable appropriée de même qu'un métal inoxydable sera utilisé pour les organes ou pièces exposés à l'oxydation ou pouvant venir en contact avec les produits à découper.
Il est à noter que le rayon R du balancier, voir fig 3 est plus grand ou égal au diamètre D du couteau circulaire pour annuler l'effort d'Il au couple de la flèche du rayon décrit par le balanciero
