.Instrument pour enlever l'écorce des oranges, citrons et autres fruits à écorce similaire. enlever commodément l'écorce ou zeste des oranges, citrons et autres fruits, lequel instrument sert successivement à couper l'écorce suivant un cercle sur le fruit, à détacher les calot - tes d'écorce, et à râper la partie de zeste blanche adhérant à la pulpe, le tout sans entamer la pulpe.
L'invention réside essentiellement dans la forme donnée aux parties de l'instrument ayant ces différentes destinations, et dans la combinaison et la disposition d'ensemble de ces différentes parties. L'instrument peut se faire en toute matière voulue : bois, os, produit artificiel, métal, etc.
L'objet de l'invention est décrit complètement en se réfé - rant au dessin annexé qui en donne une forme d'exécution non limitative ; à ce dessin :

L'instrument se compose d'une tige 1, qui se termine à un bout en forme de spatule allongée 2, à bords arrondis, tandis que l'autre extrémité comporte une arête longitudinale 3, qui peut être coupante. Cette arête est sur la face de l'instrument visible à la fig.2, tandis que le côté opposé comporte une partie plate 4, inclinée vers l'axe de l'instrument en produi- gant un renfoncement vers l'extrémité opposée, dans lequel ren- foncement fait saillie un ergot 5, incliné et pointu vers 1' extrémité en spatule, comportant de ce même côté une arête vive 6.
L'instrument s'emploie d'abord, comme visible à la fig.3, en se servant de l'ergot 5 pour couper l'écorce du fruit, de préférence suivant un grand diamètre. Par la coupure ainsi pro- duite on peut introduire l'extrémité en spatule 2 pour détacher les deux calottes d'écorce comme visible' aux fig. 4 et 5, en opérant progressivement par rotations successives du fruit.
Les calottes d'écorce étant détachées on râpe le fruit avec 1' arête 3 pour enlever les dernières parties d'écorce adhérant à la pulpe, d'une façon aisée à comprendre, non représentée.

The instrument consists of a rod 1, which ends at one end in the form of an elongated spatula 2, with rounded edges, while the other end has a longitudinal edge 3, which may be sharp. This ridge is on the face of the instrument visible in fig. 2, while the opposite side has a flat part 4, inclined towards the axis of the instrument, producing a recess towards the opposite end, in which recess projects a lug 5, inclined and pointed towards the end like a spatula, comprising on this same side a sharp edge 6.
The instrument is used first, as shown in fig.3, using the pin 5 to cut the peel of the fruit, preferably with a large diameter. By the cut thus produced it is possible to introduce the spatula end 2 to detach the two bark caps as shown in figs. 4 and 5, operating progressively by successive rotations of the fruit.
The peel caps being detached, the fruit is grated with the edge 3 to remove the last parts of the peel adhering to the pulp, in an easy to understand manner, not shown.
