Abstract

Se divulga un método para elaborar polvo de proteína nativa de papa. Los polvos de proteína nativa papa comprenden proteína verdadera de papa y aminoácidos libres entre otros; y tienen un contenido bajo de a-glicoalcaloides totales. Los polvos de proteínas de papa de la invención son adecuados para usar en la formulación de alimentos, piensos y bebidas. Reivindicación 1: Un método para elaborar un polvo de proteína nativa de papa, caracterizado porque comprende (a) microfiltrar jugo de fruto de papa (PFJ) a través de una membrana de microfiltración para producir un filtrado de microfiltración; (b) ultrafiltrar el filtrado de microfiltración a través de una membrana de ultrafiltración para producir un retenido de ultrafiltración; y (c) secar el retenido de la ultrafiltración para producir un polvo de proteína nativa de papa. Reivindicación 7: Un polvo de proteína nativa de papa producido por el método de la reivindicación 1, caracterizado porque el polvo de proteína nativa de papa tiene una puntuación de aminoácidos totales igual o mayor que 1 (AAS & Reivindicación 10: Un polvo de proteína nativa de papa, caracterizado porque comprende (i) entre 60% y 92% de proteína verdadera de papa que consiste sustancialmente en proteína de papa no desnaturalizada; (ii) entre 1 y 30% en peso de aminoácidos libres del PFJ; y (iii) entre 1 y 20% en peso de cenizas del PFJ. Reivindicación 18: Un producto alimenticio fermentado caracterizado porque comprende el polvo de proteína nativa de papa de la reivindicación 10, donde existe una ausencia de sinéresis el producto alimenticio fermentado. Reivindicación 19: Una bebida caracterizada porque comprende el polvo de proteína nativa de papa de la reivindicación 10, donde la bebida está lista para consumir o es una mezcla deshidratada para bebida.
