Abstract

Reivindicación 1: Una variante de polipéptido aislado de quimosina, caracterizada porque: (a) la variante de polipéptido aislado de quimosina tiene una actividad de coagulación específica (IMCU/mg de proteína total) que representa al menos el 110% de la actividad de coagulación específica de su polipéptido original y/o (b) la variante de polipéptido aislado de quimosina tiene una relación C/P que representa al menos el 200% de la relación C/P de su polipéptido original. Reivindicación 9: Un método para fabricar una variante de polipéptido aislado de quimosina de acuerdo con cualquiera de las reivindicaciones 1 a 8, que comprende los siguientes pasos: (a): realizar una alteración en una o más posiciones en la secuencia de ADN que codifica al polipéptido que tiene al menos 80% de identidad de secuencia de ID. DE SEC. Nº 2, donde la alteración comprende una sustitución, un eliminación o una inserción en al menos una posición de los aminoácidos; (b): producir y aislar la variante de polipéptido del paso (a). Reivindicación 13: Un método para fabricar un producto alimenticio o pienso, que comprende agregar una cantidad efectiva de la variante de polipéptido aislado de quimosina de acuerdo con cualquiera de las reivindicaciones 1 a 8, al o a los ingredientes del alimento o pienso y llevar a cabo otros pasos de fabricación, para obtener el producto alimenticio o pienso. Reivindicación 15: Un producto alimenticio o pienso que comprende una variante de polipéptido de la quimosina de acuerdo con cualquiera de las reivindicaciones 1 a 8. Reivindicación 17: El uso de una variante de polipéptido de la quimosina de acuerdo con la reivindicación 16, en un proceso para preparar pasta filata, cheddar, quesos del tipo continental, queso blando o queso blanco madurado en salmuera.
