Abstract

Se proporcionan polipéptidos que tienen actividad de fitasa y secuencias de polinucleótidos que codifican las fitasas. El gen expresa la fitasa a un nivel de al menos 7 g/L a 40 g/L. La fitasa tiene mayor actividad específica, retienen la actividad a pH bajo, y retienen la actividad a alta temperatura, tienen una mayor equivalencia de fósforo, tienen una mayor biodisponibilidad de fósforo, y tienen una mayor hidrólisis de fósforo.
