Abstract

Se brindan polipéptidos que tienen actividad de fitasa y secuencias de polinucleótidos que codifican las fitasas. El gen expresa la fitasa en un nivel de al menos 7 g/L a 40 g/L. Las fitasas tienen una mayor actividad específica, retienen la actividad a un bajo pH y retienen la actividad a alta temperatura. La fitasa se puede utilizar en varias composiciones, entre las que se incluyen de alimentación, de alimento, farmacéutica y de limpieza.
