Abstract

Harinas de trigo, cuyo componente de almidon presenta un contenido de amilasa de entre el 15,0% en peso y el 30,0% en peso y el contenido de almidon resistente de más del 5,0% en peso, así como comestibles que contienen estas harinas de trigo. Además, la presente invencion se refiere a procedimientos para la preparacion de dichas harinas de trigo y su uso como almidon resistente, como prebiotico o para preparar comestibles con índice glucémico reducido. También se refiere a moléculas de ácido nucleico, que codifican una almidon sintasa soluble II, así como vectores que contienen tales moléculas de ácido nucleico. Además, la presente invencion se refiere también a células huésped y plantas que comprenden estas moléculas de ácido nucleico o vectores.
