Abstract
La presente se relaciona con almidones de maíz que tienen un contenido de amilosa entre 15% en peso y 40% en peso y un contenido de almidon de rápida digestion entre 5% en peso y 25% en peso; y además, con harinas de maíz y alimentos que comprenden estos almidones de maíz o harinas de maíz. Asimismo, la presente se relaciona con procesos para la produccion de dichos almidones de maíz y harinas de maíz, y con su uso como almidon resistente, como prebiotico, o para la produccion de alimentos que tienen reducido índice glucémico.
