Abstract

Una espuma estable de una matriz líquida, burbujas de gas y un agente estructurante que forma una estructura jaula laminar o vesicular sin generar un gel que transmita una textura gomosa a la espuma. La estructura jaula laminar que atrapa al menos una porcion sustancial de burbujas de gas y matriz liquida ahí para retener y estabilizar las burbujas de gas y líquido en una estructura suficientemente compacta que sustancialmente evita el vaciamiento del líquido de la matriz así como también la union y cremado de las burbujas de gas para mantener la estabilidad de la espuma incluso cuando la espuma está sujeta a multiples golpes de calor.
