Abstract

Se proveen los métodos y sistemas para preparar queso blando o firme/semi-duro, como también el queso blando o firme/semi-duro preparado mediante los métodos. Los métodos incluyen típicamente la formacion de una pasta aguada la cual contiene cuajada de queso mezclada o fundida. Una variedad de ingredientes se puede introducir en la cuajada utilizada para preparar la pasta aguada, la pasta aguada la cual se forma, o en otras etapas a lo largo con el proceso de elaboracion para lograr el rendimiento y las características nutricionales del producto de queso final. La pasta aguada en algunos métodos se procesa directamente para formar un producto de queso final. En otros métodos, se somete a la pasta aguada a distintos tipos de procesamientos para lograr cierta composicion deseada o requerimientos de rendimiento.
