Abstract
La presente provee una composición comestible que comprende grasa y al menos un metal de transición, metal divalente, o compuestos de los mismos, y entre el 0,01 % y el 50 % en peso, sobre la base del peso de la grasa, de emulsificador que comprende un grupo de éster carboxílico unido a una cadena de carbono C3-6y uno o más grupos hidroxilo libres y que comprende una mezcla de emulsificadores de glicerol esterificados y alginatos esterificados.
